You don't have to explain your diagnosis to anyone. Just say what you need and get on with it. The people around you will be grateful most likely, not to have to listen to the diagnostic process. Fortunately the gluten free fruits, veggies and meat are the same price as the regular ones. I've come to believe that it is really a blessing and that being forced away from food produced in factories is a step in the right direction. -
The gluten free substitutes are worse for diabetes than the originals! They're extremely high in carbs and starch (which is rapidly converted to sugar). I know a lot of people, myself included, who are controlling their blood sugar by adopting a controlled carb diet. I eat lots of meats, veggies, nuts, a little fruit. I don't eat grains at all. Yes, but the quantity of those two items you have to eat compared to a piece of meat is vastly more to get the same amount of amino acids. -

Gluten gave me awful joint pain, but I also had intestinal issues too. Diary actually seems to make my muscle spasm oddly enough. Why not try giving it up for a while and see what happens? -
I've gotten more food intolerances as time has gone on. I've discovered nuts, chocolate and seeds are an issue with me now as well as gluten. Fortunately I find a diet of meat and veggies seems to make everything settle down and it is the base from which I add other foods and test them out.

I know you had to go the RAI course but your post-RAI treatment is exactly why I suggest people avoid it if possible. We're often left under treated afterwards and not having enough thyroid hormone is nearly as bad as having too much.

Stick "graves disease remission" in google and see. There's a lot of stuff out there about it, even from medical journals. But if you can get the symptoms under control with meds and diet you might not ever get to the point where you need to consider anything else. I had Graves disease about 20 years ago. I got nudged into RAI (radioactive iodine) to kill the thyroid. I wish I hadn't. There's a good chance you could go into spontaneous remission, especially if you're staying gluten free (or so I have read). Funny, when I had Graves I got hirsute (grew more hair). Leaky gut isn't something you're going to get diagnosed in mainstream medical setting. It is a theory that explains why celiac disease seems to go hand in hand with lots of autoimmune problems. I see someone else likes rice vinegar like me! Nothing better to me than a simple olive oil/rice vinegar dressing on salad. I recently tried to have red wine vinegar and I was all "ew... not as good"! -
Avocado and salmon salad. I mixed together avocado, salmon, mayonnaise, lemon juice, onion and probably some other thing I can't think of now. It was delicious! Sometimes I just have half an avocado with mayonnaise. Back when I ate dairy we had a "summer salad" we would make with cottage cheese, fruit (bananas and pineapple are a must) and peanuts...

You can really cut back your food budget if you stop buying processed foods. It can mean reeducating your palate and learning how to cook, if you don't know how, but the end result is more $$ and a healthier you. I like to think my foods came from a farm versus a factory.

I've had a Kitchen Aid Stand mixer for probably 20 years now. Nothing to be afraid of, it is very durable! I put all the parts in the dishwasher, I wonder why yours says to hand wash? Hmmm.... The only bits of advice I have is to make sure when you add powdery things, turn the mixer off, otherwise you might end up with it flying around your kitchen...
