I have the Cuisinart one. It has a gluten free setting (though I only use the white and wheat settings - they cook better!) I recommend the cuisinart. All you do is mix the wet ingredients fist, pout them into the pan. Then mix the dry ingreidents, add them on top of wet. Then add yeast. Hit the button and forget about for 3 hours or so. How did you tear your quad? Playing soccer? I tore mine playing indoor soccer in law school - worst pain I had in a long time. It hurt with every step. To this day, I still pull that muscle when I play soccer and shoot too hard with that leg. Hope you feel better and welcome back! BB -

Not sure, It pobably wasn't the bacon, but you never know... How long have you been diagnosed? Many newly diagnosed Celiacs have tummy troubles and pseudo-glutenings for as long as 12-18 months after diagnoses (sometimes it takes a while to heal and for the body to get back to being normal). I know I had a real tough time with greasy and fried items... -

For the record, I have been "glutened" less than 5 times in the last 5 years. I think I went 2.5 years without issue once. Then again, I am meticulous about how I dine at restaurants. I always involve management and always try to talk to the chef when possible. If you want to venture out and try something new, go to a steakhouse and get a nice ribeye... -

It all depends on how much of a bubble you want to live your life in. Some people with celiac disease won't eat at restaurants or buy grocery items with multiple ingredients or even refuse to use BBQ grills, use teflon pans that have had gluten in them or even use BBQ grills that are not their own. Personally, I can't and won't live that way. I like restaurants...
