  1. Cara in Boston - Good points! It does say I am officially diagnosed in my records, so I don't need to worry about that! But that is good to know. I've talked to my parents and sister about getting tested, all 3 refuse. None of them have health issues to my extent, but they all have asthma...my mom has candida, my dad's allergies are getting worse and worse...
  2. I wish I could celebrate with some chocolate! Or some hummus! But instead, I will say that I had the best salad I've had in a long time for dinner. I can't have regular vinegars, so I've just been avoiding salads all together. All commercial brands either have vinegar, soy, or gluten - or all 3. I can have apple cider vinegar, but it doesn't smell very...
  3. ^ Ooh, another good idea! Celiac month. I'd get extra spoiled because I was diagnosed in July, and my birthday is in July! Lol.
  4. I always feel tired of what I'm eating! LOL. It is so hard for me not to grab hummus, especially. I lovveee hummus...but no chick peas are allowed on the SCD diet :'( But what keeps me going is the prospect of having a cheat day once a week, once my gut is healed. (Of course, within reason...obviously it will still have to be gluten free, and I will never...
  5. I didn't actually do a celebration, persay (but what a great idea!) but I did post a facebook status on July 5, 2014...which is one year after I got my results in. In the facebook status, I basically was remarking on how far I have come in the past year and how happy I was to finally understand why I had felt so sick for so long. And that is why I chose that...
  6. OI! Well at least that is all taken care of! I rarely have 'd' now, but my stool is much softer, usually. Usually solid. It varies. Sometimes I get constipated still. I'm not eating a lot because my diet is so strict. I need to slowly reintroduce food though, to not overdo it. The bloating comes and goes...but I also have a hernia and candida, so who...
  7. Definitely feeling fortunate that I am grain free right now! Rice was a HUGE staple in my diet. Rice cakes, rice crackers, and just bowls of rice with black beans or etc. I plan on reintroducing it eventually, once a week. Hopefully arsenic levels go down naturally...
  8. Wow! That is awesome, no cold in two years? I guess it'll just keep getting better then ey? Last October (right on Halloween, actually) I got very, very ill while at work. I went to the doctor the next day and I found out I had severe bronchitis that was on the verge of pneumonia. The weirdest part? I got sick a couple of days after a glutening. I ate...
  9. I posted a thread a couple of days ago about my boyfriend, who was battling a nasty cold. He started feeling sick on Saturday. I ended up staying over until Monday night, and left Tuesday morning. During this time, we spent a lot of time cuddling and watching movies, and we had to share a bed (we used different blankets) obviously I did not kiss him during...
  10. Thank you for your input! And your support! (hugs!) I feel the same way. Once I joined this forum and started reading about endoscopies and biposies and everything, I was really scared about what my villi/insides could possibly look like. I mean, I was lactose intolerant for 3 years before even being diagnosed, did that mean I was past the point of...
  11. Thank you! I hope I am too. I seem to be tolerating some foods that are high in histamine again, such as sunflower oil, almond butter, raspberries, etc. For awhile I could not eat almond butter at all....and the chips I normally ate (that are cooked in sunflower oil) started making my throat itch. When I last tried them, no reaction. So the low histamine...
  12. Thank you for your input! My question really was not whether or not a biopsy was important for those newly diagnosed by a blood test, or those trying to get a diagnosis in general. I was diagnosed by a blood test over a year now - and I was just wondering if it was really that big of a deal that I never had a biopsy. My doctor never mentioned anything...
  13. Thanks for all of the feedback! Stephanie, I understand what you are saying completely, but it does say on my records officially that I do have celiac disease, despite not having the biopsy done. As soon as the results came in he called me and told me to immediately go on the gluten free diet, and he had me come in again in a couple of weeks to check up on...
  14. If you guys can tolerate sunflower seeds/butter, Suncups are amazing! They are gluten, nut, egg, and soy free - and when I emailed the company, the person I talked to says they are planning on releasing a dairy free version soon! I found them at Stop & Shop. They're a bit pricier than peanut butter cups, (I think $1.99 for a two pack) but so worth it...
  15. Kareng - Thanks for the tips/photos! We don't have a Costco membership, but luckily his parents do! Apparently we can't get one if we don't own a business? He tried applying for his own card and that's what he was told (his father has his own business) Either way, he has mentioned getting a Dutch oven before and I didn't know what that was. I have a lot to...
  16. Haha, I love how you put "soup" in quotes. I was mortified once I realized how the pasta overtook the broth/vegetables. Oi. I was the same way! I loved Lipton noodle soup and ate it all the time when I was sick. I loved the broth, but I preferred having a lot of noodles. The issue with all of this isn't so much money, it's the space. He has a pretty small...
  17. Well, here is an example of the two batches I made. First, it came out really clumpy because I put too much pastina. In desperation, I kept adding water to water it down, but to no avail: So then I went to a nearby corner store and picked up more broth, then added that into the leftover soup. Much better! But we definitely need to either...
  18. Oh no. This sounds too complicated! Lol. I am sure that if I tried to make gluten free noodles in soup that my first few batches would definitely come out slimy, or too hard due to my trying to avoid them being slimy. What I plan on doing for myself is making zucchini noodles and using them, since I am on a very strict diet right now (SCD diet - no grains...
  19. We don't have a pressure cooker or crock pot. He just moved into his house a couple of months ago and we have the basic essentials. It's his house, I haven't moved in yet - and he doesn't do any cooking. He has a few pots, that's it. We're going to have to add a pressure cooker to the list. nvsmom - the noodles aren't gluten free, it's pastina. I had...
  20. My boyfriend isn't feeling well, so I decided I was going to make him some soup. I picked up Pacific Chicken broth, a package of soup greens (includes parsnips, turnips, dill, parsley, leeks, carrots, celery, and onion), chicken breasts, and noodles. A good girlfriend I try to be, a good cook I am not (yet). Can anyone help me think up a really quick and...
  21. Yes, I still have a lot of issues. I have been gluten free for just over a year as well. I am currently gluten, soy, yeast, dairy, legume, and grain free, and also eating a low histamine and low sugar diet. Sheesh. It seems like it will never end. If it helps, my stomach feels pretty good right now. I didn't give them up all at once though...I slowly did...
  22. Radley - Again, I feel your pain. I am not a cook. I don't necessarily enjoy cooking either, unfortunately...and I know that this will eventually have to change. My boyfriend has a food processor at his house, so I am looking into recipes I can start whipping up soon. I made us baked apples recently..it was super easy...the only ingredients were apples, butter...
  23. I still have a lot of heath issues, even after going gluten, soy, yeast, and dairy free...which I am blaming on my persistent candida problem. Have you thought about making zucchini pasta? You can use a spiralizer if you can find/order one online, but they also have recipes that don't require one. There are tons of recipes online. I have noticed I do best...
  24. Thanks for the answers, guys! I have not looked into oxalates, but i will definitely look into it! My skin seems to be much better already. This is going to sound strange, but apparently it depends on the brand of almond butter I buy! If I use Stop & Shop's brand of almond butter (only ingredient is almonds) then everything is fine. But I had bought the...
  25. I started realizing I had a problem with soy about 6 months or so after I was diagnosed. I still had GI problems (especially bloating) and after seeing a naturopath, I realized I needed to start doing elimination diets to try to pinpoint the foods that were causing issues. I had always tried to avoid soy in general, but I had actually never noticed how much...
