  1. That's exactly what mine tasted like! It was pretty good, and easy to do, especially since I am a novice at cooking. The batter was really thick and not drippy at all like regular pancake batter, so we kind of had to glob it on the waffle iron. I'd say they were a success though, the bf ate all 4 of his I saved 2 of mine. They were pretty filling!
  2. Thank you! I appreciate it. That recipe is a bit tough for me with all of the foods I have to avoid. I've never had protein powder, but I think it's "illegal" on the diet I am on. I try to stick to whole foods as much as I can. Luckily, I found a really quick and easy recipe that only required basic ingredients that we already had in the kitchen (apart from...
  3. I can't have yeast, due to the candida overgrowth :\ Hopefully I'll be able to find something.
  4. Hi! Okay, as previously stated...I am not a cook and I have never made homemade waffles or pancakes, let alone gluten/grain free waffles/pancakes. Can anyone give me advice on how to make a simple waffle batter? Do I need to add anything like xantham gum or guar gum? The flours have no additives. What would I need? For flours, I have "Let's Do Organic...
  5. Just a few things, really just reiterating points others have said: - It could be the coffee, regardless of if it is gluten free or not. I can't drink coffee anymore either :'( every time I go I have to run to the bathroom. I'm not entirely sure why...I don't know if it's related to the candida overgrowth or what, but no coffee for me. - Could...
  6. My energy levels actually seemed to improve a lot once I started a low histamine diet! I've noticed that if I eat a lot of foods that contain higher levels of histamine (I've been eating eggs scrambled with salsa for breakfast daily) I get tired easier. I was officially diagnosed with a sleeping disorder before I was diagnosed with celiac disease - I do not...
  7. Oh that's right! I think I remember you posting something about living in CT at one point. I've lived here all of my life, and this past summer was my first visit to Mystic since going gluten free. My boyfriend and I went there for our one year anniversary. We spent five days there...we went to both casinos, the seaport, the village, and the aquarium. We...
  8. Agh, I love eggplant! My grandma makes the best eggplant parm, but I can't have it anymore since she uses regular breadcrumbs (and I don't want to have to have her go into the whole big deal to make them gluten-free - but her eggplant is soo good) There is a store in Mystic, CT (it's a seaport with a large aquarium and a village with lots of stores -...
  9. I would totally share my cookies with this bunny! He(she?) wouldn't have to steal one! (Just wanted to share, I love this photo. SO CUTE!)
  10. Solandra - Thank you! I agree. I don't define myself as 'sickly' or anything of that nature. Sure, before I was diagnosed I was in an awful rut, but now I have been gluten free for over a year and I've gotten the hang of it. I am very careful, and I am on a very strict diet. I am improving, slowly but surely. Yes, anyone can develop health problems. His father...
  11. I can't discuss my weight on here (mainly because I don't weigh myself, lol!) I go by my pant size and how my pants fit. I have very large breasts, and my weight has never been accurate. Before the celiac disease really started to hit me (skin issues, fatigue, weight gain, more intense GI symptoms, etc) I was a happy size 8. I am 5'5", by the way. Then...

  13. Oh no, now I want lasagna! Lol. I really want to try to make eggplant lasagna (uses eggplant as the noodles) it looks so good! Open Original Shared Link Also, (since you mentioned someone recommending crackers) I'm not sure if you can have them or not...but I love Mary's gone crackers brand super seed crackers. They are vegan, gluten, tree...
  14. I think anyone dealing with refractory celiac disease should definitely look into the Specific Carbohydrate Diet. I suppose by the guidelines, I myself would be considered refractory. The gluten free diet was helping, but it wasn't enough. I still wasn't losing the weight I gained. The bloating was still awful. My rosacea was awful...my scalp, etc etc. I...
  15. Thank you, I appreciate it. I can't wait to get my levels checked!
  16. I had noticed a bit of thinning in the front of my hairline as well...it was noticeable around where my part was. It seems to be getting better now. Are the three of you using gluten free shampoo/conditioner? I saw a tremendous improvement in my hair/scalp when I switched to all natural hair care. My hair is naturally very curly, so it would frizz all...
  17. I know you're right...I just get so frustrated when I am going through so many drastic lifestyle changes beyond going gluten free, and still there is so much negativity. It always was so discouraging to spend so much time researching and redefining my diet and lifestyle, just to have my boyfriend make morbid comments. It was like a slap in the face. Now that...
  18. I'll try to keep this brief. I have been with my boyfriend for nearly a year and a half now. I got diagnosed with celiac disease less than 2 weeks after we became official, and he has been pretty great about it. He immediately downloaded gluten free apps to his phone, he's careful about cross contamination, etc etc. But there was a brief period in time...
  19. I just wanted to throw my 2 cents in to this topic... I went to the doctor last summer (July 2013) because I just didn't feel good at all. EVERYTHING I ate seemed to go right through me, or give me sharp stomach pains. Sandwiches, minestrone soup, my mom's fried dough, salad, etc. Except for pizza. I found this out the day before my 3rd date with...
  20. Oh wow, thank you everyone for your answers! Using olive oil sounds a lot easier, but I will definitely look into the cooking spray for other uses. It could come in handy. I hadn't heard of the sprayers either. I haven't used the waffle iron yet...my diet is so strict (grain free, etc) and I haven't had time to run to the store to buy almond flour. But soon...
  21. GottaSki - That's great! I was really happy that I managed to stay over and take care of him and somehow not end up sick too. I didn't take any medications, either. I have had at least 2 nasty bugs since getting diagnosed with celiac disease. The first one was actually around Halloween of last year (after 4 months of being diagnosed) I don't know if this...
  22. It is soooo good! What is in a typical chef's salad? It has meat usually, right? I'm odd - I don't like meat except for grilled chicken...and turkey sometimes. I would love to add cheese to it, but my diet is super strict..no cheese right now :'( (Dairy free and low histamine version of the SCD diet) Ideally, I would add chickpeas, tomatoes, shredded...
  23. Oh wow! I'll have to look into it. I viewed the website and for some reason it doesn't list the ingredients. Grr! But hopefully it will be easy to find in a store. Thank you!
  24. Does this even exist? My boyfriend's mother just gave us a brand new waffle iron, and I want to try a recipe for SCD approved waffles. You need to spray the waffle iron, but every cooking spray I've seen has soy in it. Has anyone seen anything different? Could I just brush the waffle iron with olive oil? Thanks in advance!
  25. Oh no :\ I'm sorry to hear that. Have you figured out why you still have inflammation? Are you getting cross contamination somewhere, etc?
