Eh... "the best" is going to be relative. Personally, I like the flavor that bean flours add to most gluten-free recipes, but I know a lot of people who don't. I also love the taste that millet flour adds to muffins, but my husband finds it quite bitter... Good luck with the recipes you try! Gluten free means there is no wheat, barley, rye, or oats*. Wheat free means there is no wheat. So, wheat free may still have barley, rye, or oats - which are sources of gluten. My favorite recipe for quinoa is to make with the regular quinoa and water ratio directions, but add boullion, and mexican spices (I use the ones from Spice Hunter, but you could just use chili powder, cumin, sage, cayenne, oregano, and pepper). With a good boullion, it's fab! -

brown rice can be used as a base for stirfry (meat or veggies or both), in soups, in casseroles, as risotto (short grain brown rice, for this one), pilafs, etc. millet, teff, quinoa, buckwheat, amaranth, corn can also be used in a variety of ways, with the generally rule that the smaller the grain, the "creamier" a consistency you'll end up with, though... -

Make your own! Beef, carrots, onions, potatoes, a touch of canola oil, sage, cumin, salt, pepper, a little sweet rice flour (or corn starch), broth (or boullion and water, and optionally a touch of red wine) and half an hour. (The only trick is to brown the beef in the oil a bit first.) Quite tasty, and you can make a big batch for leftovers. WAY better... -

Sometimes it's just canola and crushed red pepper. Sometimes it's that and gluten-free tamari. Sometimes I use ginger as well. Sometimes garlic instead. Sometimes jalapeno or habanero in addition or instead. Sometimes Thai Kitchen's red chili paste. Sometimes chili sauce. Sometimes a bit of lemon juice. It varies.

Roast the chicken, covered, of course, without overcooking it, and the dark meat will be delicious! Grilling chicken legs is fabulous too - the key is to just not overcook them. You can also use dark meat in soups and stews. Don't forget to consider getting ground pork and/or sausage as well, for higher fat options. -

they do now make a pam with flour, however, for baking, that IS a problem for celiacs. regular pam is gluten free. -

vegans don't eat honey because it comes from a living creature - bees. no jello either, as the majority of gelatin comes from beef. (strict vegetarians also avoid gelatin.) -
Except for the 10% of celiacs or so who react even to those uncontaminated oats. There is no specific test (other than trying them and hoping you display symptoms) to determine if a particular person with celiac is one of those 10% will develop villi atrophy from oats.

Here's the thing... all the IgA's were negative, and IgG's were positive, but you don't have a total IgA test for either to tell you whether or not the standard reference ranges are valid for either girl! So those 'negative' IgA results may not *in actuality* be negatives. They need a total IgA test in order to properly read those results. -

I think that if you're looking primarily at forums, you've got a highly skewed sample that is demonstratably not representative of the celiac population in a number of ways, and IQ is likely only one of them.
