Have you given any thought to gluten sources other than food? Not to be indelicate but could the gluten be coming from gluten-containing suppositories or perhaps hemorrhoid medication? If temperature is an issue, have you tried placing a folded blanket between the bed sheets at the foot of the bed and sleeping with your feet inserted into the folded blanket? Probably not much use now but maybe worth a try next winter.

If the little curvy thing is your ear lobe, could it be that you have pierced ears and one of them is infected? Admittedly, the only experience I have is my daughters but I think I remember their mom trying to dissuade them from piercing their ears by using the specter of infection among other things. -
This is an excellent point and very important for people to understand. It is a systemic problem that goes well beyond just doctors. Fee-for-service insurance systems do not handle gray areas very well. They work best when every ailment/problem is yes/no, on/off, clear-cut. I've experienced that when I would eat too much salt or when I would let work get to me and my blood pressure would spike (similar to what you mentioned in your post). In my case at least, gluten probably wasn't a factor. However, if you are on a gluten-free diet, your celiac-related symptoms/problems should subside. That should reduce stress levels...
