  1. I just wanted to update. I made this over the weekend and it was really tasty! I put spinach in the sauce and pureed a potato in with the onion. It thickened it nicely but I didn't make nearly enough sauce, I think the corn pasta sucks up the liquid quite a bit. Very tasty! I topped it with cut up tomatoes and a little parmesan cheese. It was a bit much for...
  2. There are many other foods that can cause issues in that department! I always feel like IBS is a symptom not a diagnosis. I would suggest looking into working with a nutritionist to figure out what is causing the problem. Or doing alot of research on your own to create an elimination diet to see what is bothering you. I think my biggest help has been keeping...
  3. You are lucky to have caught this in the beginning, hopefully that means you can make a quick recovery! I also have major issues with coffee and artificial sweeteners. If you start to develop pain or problems as you continue a GFD, make sure to keep a diary to see what is causing the problem as you may have developed other allergies or sensitivities.
  4. Thanks everyone. Im feeling much better tonight. I drank a load of water and the stomach pain seems to have gotten better. It rained, like crazy! So its much cooler and I managed to make some kick ass chicken and veggie fried rice out on the deck in my electric wok.
  5. baby- I have discovered I cannot drink coffee at all. Major pain, not even run to the bathroom either, just severe stomach/intestinal pain. doubled over, terrible.
  6. THAT IS DISGUSTING! I try to avoid them and I think I should just continue to avoid the stuff and just use regular sugar sparingly like I usually do.I thought it was just a fancy word for sugar.
  7. This says 'sucralose' not sure what that is, i just looked it up and its fake. I know 'ose' means its some form of sugar so It didnt occur to me that it was artificial when i purchased it. i know we don't usually buy artificial sugar products unless we make a mistake. Like that time my BF made a mistake of getting sugar free ice cream, i refused to eat it...
  8. I had blood tests come back positive after being gluten-free for awhile and my biopsy also showed enough damage for diagnosis after over 4 months gluten-free. Although I did make some mistakes with cross contamination and wasn't nearly as vigilant as I am now that I am diagnosed. Everyone is different of course. If you feel like there is a chance you have...
  9. Thanks Ravenwood. I think i should probably just stick with my lime or lemon in water. Darn me for wanting a little change in my life. It was supposed to rain at 2, then 3 and now, who knows. I can't wait for some cooler weather. Now we had a water main break down the road and there is news helicopters circling above the house and the doc next door is barking...
  10. It's so hot in NJ today and im just feeling ill and gross. It seems that now in addition to coffee, I seem to be having a problem with sweeteners? I drank some mio type stuff after breakfast and now I am having horrible pain in my stomach/ intestines, not sure really what it is. Is it normal to have problems with sweeteners? Im not having D,just pain so far...
  11. Thanks you guys. I think I might just go with potato starch because it sounds like i can adjust if necessary. I can't wait! I will update later in the week when i finally make it.
  12. You guys think I should use different proportions? I used to go on the rule that 1 tbls of fat + 1 tbls of flour to thicken 1 cup of liquid. I never measure anything exactly but I have a good eye. This will be my first gluten free roux, so im really hoping its not a bust. Like I said its been a year or more since Ive made my famous mac n cheese, I know it...
  13. I'm planning to make some Mac n cheese with veggies this week. I haven't made it in probably a year or more, I am confident that wegmans gluten free pasta will be delicious. I used to make it with a roux with flour of course, I was thinking of baking a potato and using that to thicken the sauce. I also have gluten-free cornstarch. Anyone have any experience...
  14. Laura, perfect! Thank you! You pre make yours and store in the fridge?
  15. Im just saying you are the one always complaining about how people are putting fear into others when they question being glutened by a product that they are unsure about. I think it is also wrong to give hope to someone with even talking about this subject. The facts are already out there if someone is wondering. They are on google if it is searched and they...
  16. I recently ate their regular crinkle chips and i was ok, my brother gave me the bag and it was marked gluten free with no disclaimer. I have never even seen their kettle chips but i will stick with what i know is ok. Also wegmans has the best chips and I have never had a problem with any of their products that were marked gluten free. In fact ive been...
  17. I hope you get it back. I have a great savory recipe for a greek quinoa salad if you ever get it back. Well it's my own recipe which is still in my head and not on paper yet, gotta write it down.
  18. Several products also have disclaimers. "Recommendations: Two UltraCaps with each meal or as directed by your healthcare practitioner. Caution: While Gluten Defense* will reduce the level of reactive gliadin and gluten proteins in a meal, it is advised that celiac disease sufferers continue with their normal gluten exclusion diet as even small amounts...
  19. I wish I had apples. I need to go shopping. I have been ok with Quinoa so far, I hope it stays that way.
  20. I was actually just looking into the forum and found it, but I understand how you might make the assumption that I stumbled upon your post because it was helpful. I think the issue is that people who think these products will help them with their gluten problem, celiac or not, are NOT doing the research. If I google your question, the top results are...
  21. No dear, I read it. I'm just saying I thought it was a well established fact because I am always seeing it brought up and I was wondering why we were beating this poor dead horse
  22. I used to have oatmeal occasionally but the oats i have are not gluten-free, and I would rather splurge on some new baking products and chicken this week than certified gluten-free oatmeal. I feel like quinoa may be healthier, does anyone have any breakfast quinoa recipes to share? I was thinking cinnamon, raisins and walnuts? Thoughts?
  23. I thought it was a well established fact that these types of pills do not work for people with diagnosed celiac disease? no?
  24. I used to have this daily or even sometimes and even orange color. I did have it after going gluten-free too, but less often now, and it seems to be getting better daily. I would talk to my doctor about it, your poos should be getting better not worse.
  25. I had one of those S poos that they talk about on Dr OZ for the first time last week. I was pretty pleased with myself. Congrats on your poo
