  4. If you e-mail Heinz they will send you a gluten free list. The Delimex taquitos are included on this list. Some are gluten free, some are not, so please be careful.   8. I shop Walmart and mail order. Wal-mart's GV brand labels gluten free so I buy mostly GV brand products. For my mail order products I use shopbydiet.com and kinnikinnick.com. Both are great!
  9. I was warned of this by a wine maker. It was either Kendall Jackson or Robert Mondavi, I can't remember which. They explained it to me when I called inquiring whether their wines were gluten free. I, however, have never gotten sick from wine. Well, not gluten sick anyway.
  10. Tot Loks... You actually need a key to open the cabinet doors. Do a search for them. They are WONDERFUL!!! You can just take the key to bed with you then. On the other hand, perhaps you could lay out some safe, gluten free snacks at night that are tasty for a 7 year old, some of her favorite nutritious snacks.

  14. From the research I've done, it appears as though there is approximately a 1/20 chance of first degree relatives of a Celiac developing Celiac at some point in their lives. My doctors told me that my daughter should be tested every five years, even if asymptomatic, just to catch it early. Take that for what it's worth. I would definitely recommend getting...

  19. I use the same flour combination for every recipe I make and I haven't had a failure yet. I make my flour mix in bulk so I have it on hand later. I use 3 parts white rice flour, 2 parts potato starch, and 1 part tapioca starch. For every 1 to 1-1/2 cup of flour mix I add 1 teaspoon of xantham gum.   20. I haven't. My feet are still painfully bony. Though, I'm not sure I've done nearly as much walking lately. I'll have to see how my feet do at Disney. Maybe they have gotten better and i just don't know it.

  22. Disney is the best place in the US for food allergies/intolerances. They are so sensitive and understanding. All of the chefs seemed to be VERY well versed in allergies and they were super careful. I didn't get sick once when we went there last year, either time.
  23. Have you shown him your Enterolab results? I know most doctors don't put much weight in Enterolab, but some do. Perhaps he will accept that as an official diagnosis. It's worth a try. If I were you, I'd probably go back to going gluten free since it's solidified in your mind. You know you have a problem with it, there's no need to prove it to your doctor...
