I thought caramel was a no-no. Come to think of it, I'm not sure where I got that idea, but it has been solidly in my mind. Recently, I've seen a couple of references to items that contain caramel as being gluten-free. A cake recipe and most recently some kind of candy. Is caramel always a concern? A concern under certain conditions? Never a concern...

Do you have the Hormel brand in your area? Hormel chili WITH beans are on the Hormel gluten free product list. (I haven't checked in the last couple of mos, so you need to check for yourself). I can't think of a lot of recommendations in Memphis. There is an Outback on Hacks Cross Rd that I would have recommended, because I have eaten there safely probably a dozen times. Last weekend, however, I was severely glutened by them. In Memphis, there is a Carrabbas (sp?) on Poplar Ave. No personal experience, but I hear they are Celiac-friendly...

My GI put me on Flora Q when I was diagnosed with Celiac. It's over-the-counter but most pharmacies keep it behind the counter so you have to ask. Highly recommended.

I second the vote for Wildfire Grill in Atlanta. It's out near the Perimeter Mall, so may be a bit of a trek, but SOOOOO good, and you won't really feel like you're having to limit your options. In addition to the cc issue of most brands of oats, there is the additional concern of a protein in oats called avenin. Some celiacs react to avenin similar to gluten. I just had a look online, and the 2 you mentioned specifically, Santa Fe Grill and Chicken Herb indeed do not list a questionable ingredient. (Sorry, absolutely no offense, I just have learned to read, read, read as much as reasonable for myself) Malt Extract is listed as an ingredient in the Classic Beef RiceXpress even though it carries a gluten free... -

Be careful with the Lunberg Farms RiceXpress. I know many (all-?) say gluten free right on the front, but read the ingredients. At least one of the flavors that is marked gluten-free, lists Malt Extract as an ingredient. I agree with you. I think pity parties are probably just a part of human nature. It can be easy to pout about hardships in life, about not having it as good as someone else. How do you know it's rancid? Hope that's not a stupid/obvious question. I grind a reasonable amount at one time and keep the extra in a ziploc in the fridge (enough that I am set for about 1 month). Should I not be doing that?

Pamela's is WONDERFUL in a bread machine. (I have a zojirushi). GFP is also good, but Pamela's is my preference. It's great with just water, but I usually add about 1/4 c Dari-Free & the balance water. I also have started adding about 1/4 cup flax meal (self ground from seeds) to the dry. Good for you Bev! Pamela's chocolate cake mix using the recipe on the side of the bag that uses sour cream. Oh my gosh...VERY moist, VERY chocolate. Even my very discriminating, gluten-loving in-laws raved about this one! For frosting I made the recipe on the back of Hershey's cocoa.
