  1. We're everything FREE, here. Losing wheat and rice has been very traumatic here for us. I'm having a hard time finding a "bread" that she can eat and pasta. She likes the Tinkyada pasta, but it's brown rice so she shouldn't have it. I've tried the quinoa pasta and she doesn't like it. I just found a pizza crust that she likes from www.savorypalate...
  2. Thanks Liz ~ so you mix the xanthan gum directly into the mix? I have been adding a tsp. of it in every time I make something. I am not sure about my dd and the rice ~ actually, in her blood test, the rice came up as slightly more allergic than the wheat?! It's crazy!!   3. Hi Becky ~ how long have you been gluten-free? Did you know that there is a gluten-free bakery in Eagan? It's called Bittersweet Bakery. I haven't been there, but am thinking of calling to see if they could make something for my dd. Our Rainbow has a better selection than the Cub. SuperTarget is also starting to carry things now.
  4. Hi Becky ~ I'm in Savage MN ~ I shop @ Valley Natural Foods in Burnsville for my dds packaged food. I'm pretty new to being wheat-free. She doesn't have celiac, but is allergic to wheat, as well as many other things - see sig. She is doing so much better since being off wheat and rice in October. It's quite amazing! How about you?
  5. Liz ~ what were the proportions of your flour blend again? I wish I could use brown rice flour. Wonder if I could try your recipes subbing w/sorghum? Patti ~ I am trying w/sorghum.... the only success I've had was Carol Fenster's banana muffins and her sandwich bread (made as muffins)... I did modify her blend to 1 1/2c. each of sorghum flour...
  6. Yep ~ canola oil for both. Did this come from The Gluten Free Kitchen? It looks a lot like a recipe that I tried from that book.
  7. Hi Becky ~ Im in the Twin Cities area of MN.. not sure where you are. PF Changs has a gluten-free menu. We haven't eaten there but I've read of good reports here. We have eaten at Outback and Chili's successfully.
  8. We like the Vance's Darifree here for baking as well. You can make it creamy or thin. My dd will not drink it alone, but I bake w/it and make smoothies for her. I have also just subbed water instead of milk too. Depends on what you are making and how much liquid.

Has a basket, a top goes over it all so there is no splashing of hot oil. So far I've made a bunch of safe chicken nuggets, fries, even some doughnuts once. Clean-up is a breeze!   12. Hmmm.. I'll have to go check them out... do they have rice flour in them? I haven't used this mix either but my favorite egg replacer is 1 1/2T water, 1 1/2T oil, 1 tsp. baking powder for each egg. Have you tried that?

  15. Have you tried any of the Carol Fenster blends? I have had success w/her banana bread (made into muffins) using a bit of a modification: 1 1/2c. sorghum flour 1 1/2c. potato starch 1 1/2c. tapioca starch I also used that blend to make her "sandwich bread" into muffins. They are very good out of the oven. OK toasted the next day or so.
  16. Not sure how old the kids are... but my kids love little toothpick skewers w/fresh fruit on it (strawberry, grape, melon, pineapple). I also like the safe trail mix idea. Or popsicles.
  17. Richard ~ I disagree completely with you... I have not told my dd yet because I want to have the time to process this whole mess. She, like Nini's dd, is going to be VERY UPSET. She has many food allergies (see sig) and has to deal w/being different far too often, in addition to wearing a medic-alert bracelet, sitting at a peanut-free table, different...

"While this product does not contain nuts, it is produced on the same machinery as other products that may contain nuts" One bag has it, the other bag doesn't... So, now those will be OUT for...
  19. Are these dairy-free or have a "processed in the same plant as peanuts"? I'll have to look for them next time I'm at the store. I just looked at the Wendy's site and it says that they do not have a dedicated fryer for their fries. It may be fried w/the chicken or fish.. that could be a problem too.
  20. We like the Alexia fries and Dh's curly fries from just a plain ole potato - nothing else added! I'll have to check the McCann ones...

  22. OMG! I just went back and read more of the thread?! So, wheat and dairy have ALWAYS been in the fries?! WTH?! ((Nini)) ~ I am so with you on this! I am about to cry too for our kids. Esp. after 2 failed attempts at making cupcakes for a birthday party this weekend. And, now Car won't eat the muffins I've been making her. I'm just sick!!...
  23. I'm so sad to read this thread here and on my allergy board. Not that we eat there a lot b/c it just is disgusting to watch my dd eat their "beef patty" w/o a bun. But now to know that fries will be out too! I also had troubles viewing the current site. I will be shooting off a letter too!
  24. I'm going to try these cookies during naptime today! It seems easier for me to modify than the other. I'm going to use sorghum instead of the brown rice and sub for the eggs. I'm always having to change recipes!
  25. Patti ~ I get it from my local co-op. The nearest Whole Foods didn't carry it here. If you can't find it, I'd be happy to buy one and ship it to you. Seems like I remember you had to buy a bunch from them.
