  2. Rachelle, Sounds great! My family went to Great Wolf in Sandusky, Ohio, last summer (near Cedar Point). It was the first food-free vacation I had in my daughter's whole life. The head chef there personally cooked and walked us through the food also. They even offered to prepare us picnic lunches for Cedar Point! We ate big breakfasts at the buffet...
  3. I would suggest going to the library. When my dd was first diagnosed, I checked out every gluten-free cookbook they had. I found that we liked some recipes, but not others.   12. I don't understand why the allergist wouldn't have you remove all of those food items either, especially peanuts! Carleigh is allergic to wheat also, a 2 on the scale. That ended up being the final piece of our puzzle to get her on the way to being healthy. But, we had already eliminated all of the other foods on our list. Her celiac testing came back...
  13. Wow! I ordered another sample kit on Wednesday, and I received it in yesterday's mail! Obviously, it was sent USPS and not DHL! I just can't believe how fast those shipping gremlins are!!   15. ((hugs)) You know, if he has environmental allergies, that can really trigger the eczema also. My dd has multiple food allergies, environmental allergies, and ezcema. She is really struggling right now with the eczema and food is not the issue.

  17. That is a nice site. The pictures look great. They said that they have had good results using gluten-free flours. I think I would try one of the recipes that they have for free before spending the $$. Cake is one thing that I haven't been able to make that my daughter liked more than once. I stick to banana muffins for a sweet treat for her right now...
  18. Yes, SAH/WAHM = stay at home/work at home mom. GREAT idea about the temporary employment agencies, Phyllis!! Why didn't I think of that too? I did that while I was between jobs and getting ready to move. I loved the time I spent "temping".

  23. Something that has helped my bread is to preheat the oven to a low setting (200 for me), turn it off, and le t the bread rise to just below the rim of the top. Then, without touching the bread, kick the oven back on to whatever it is supposed to be (400 for me). I rise the bread for 20 minutes, and bake the bread for 20 minutes. When I take the bread...
