I underlined part of your post that is confusing to me. Who are you saying tested this chocolate product for gluten and who considers it to be gluten free? If it's not labeled gluten free then I doubt some company has gone to the expense of testing it. If they had tested it and found it to be gluten free, wouldn't they advertise it as such? I think the hydrolysis from the water added to the poacher is critical, not just heat and pressure. Besides, using a pressure cooker just to cook eggs would be a lot of trouble. My poaching method uses the microwave. Very fast and simple. -

More than likely, your doctor ordered the tTG-IGA antibody test if he/she ordered only one. It is considered to be the one test that combines good sensitivity with good specificity. We can't help you with that result without more information. Do you have online access to your medical records? We would need to know the name of the specific test as well as the reference range for negative vs. positive used by the lab that did the analysis. The serological test will not be valid if you have been off gluten for a significant period of time, say for weeks. The article is not contradicting this reality. It is saying that if your serological test was indeed strongly positive there is no need to go through the pain and hassle of going back on gluten just to have a biopsy. Is that clearer? I think...

It doesn't say that you don't have to have been eating gluten before the serological antibody test. It is saying that after you have the antibody test and your test is decisively positive then there is no need to do a gluten challenge after that in order to prevent a false negative for the biopsy since there is no need now for the biopsy.

Sirenna, have you explicitly asked your doctor to run tests for celiac disease? Explain to the doctor that the first antibody blood testing was done while you were eating gluten free and that this may have caused the negative results. I tried duck eggs scrambled but they still gave me an unhappy tummy. But both chicken eggs and duck eggs don't bother me when I poach them. -

I agree with Wheatwacked. Many or all of the symptoms you describe sound like vitamin/mineral deficiencies to me. Celiac disease, by definition, involves inflammation from the immune system attacking the lining of the small bowel, the "villi" where all of the nutrition from the food we eat is absorbed. I have this puzzling experience with eggs. If I cook them in a pan as in scrambled eggs, hard boil them or bake them as in quiche, they make my tummy unhappy.
