I would not put much trust in tested Thiamine levels since tested vitamin and mineral level blood test results are not necessarily indicative of what is going on in the cells, just what the blood levels are as compared to medical whatever standards have been established for low or high, which may not be optimum levels. TT0202, are the supplements your mother is providing you gluten free? Wheat starch is often used in pills as a filler. I would check on each one when and if you do decide to go gluten free. Both the antibody blood test and the endoscopy/biopsy are positive for celiac disease. "Scalloping and blunting of the villi" equates to a positive biopsy even if the word "positive" wasn't included in the consultant notes. The effects of one accidental glutening experience should not last a month IMO. Are you sure you haven't continued to get some gluten since then? And, maybe something else is wrong that has nothing to do with gluten but is coincidental.

I agree with Russ314 on taking folate to prevent neurological tube defects. My wife and I lost an anencephalic child years ago and found out later it likely could have been prevented by folic acid supplementation.
