ARCHIVED Herb Cheese Bread
Fiddle-Faddle replied to Fiddle-Faddle's topic in Gluten-Free Recipes & Cooking Tips
Actually, I think cooking wine with lemon in it would work just fine. Lemon goes well with wine, cheese and Italian herbs! Fruit juice might be a little too sweet. -
Excellent points--I did not think of these possiblities. My only worry is that your current doctor might not detect them!

ARCHIVED Please Help Me Choose Endoscopy Or No Endoscopy For My Son.
Fiddle-Faddle replied to momof6's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
JUst out of curiosity, why doesn't anybody think that a trial of the gluten-free diet might be a better indicator and safer course than an endoscopy? There ARE risks to the endoscopy because of the anesthesia, and there are false negatives. What if the endo results are negative? Does that mean you wouldn't try the diet? What will an endoscopy do that... -
ARCHIVED Newly Diagnosed With celiac disease
Fiddle-Faddle replied to Ogie Oglethorpe's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Hey, Dan, welcome aboard! I'm a Pittsburgher, too. The Cranberry Bravo restaurant is terrific--they have gluten-free pasta! The manager and then the chef will come to your table and tell you what they can make gluten-free (they make their sauces twith cornstarch instead of with flour!). Outback Steakhouse is also good, and if you ask the waiter at CHeesecake... -
This is modified from a country cookbook I've had for years that has gluten in just about every recipe! These are the measurements that worked for me. The original recipe called for 1/2 c milk and 1 egg, and I doubled those just because the dough didn't look right. 2 Cups Bob's Red Mill wheat-free biscuit and baking mix 1 tsp sugar 2 tsp dried onion...

ARCHIVED My Little Experiment
Fiddle-Faddle replied to Noel1965's topic in Coping with Celiac Disease
I caved in after about 6 months gluten-free (and feeling SO much better) and had a Chinese dumpling. I had no reaction whatever. However, I don't see this as license to eat gluten. I already have enough autoimmune problems, and I know enough to realize that more will develop if I go back to gluten. The nice thing is, I don't react to cross contamination... -
ARCHIVED Megan's Gagging Isn't Any Better
Fiddle-Faddle replied to TCA's topic in Parents, Friends and Loved Ones of Celiacs
Prayers sent for little Travis and his family! I'm so thrilled to hear how well Megan is doing. There is NOTHING that child (and you) cannot accomplish!! Thanks so much for the update--I'll be at the party in spirit only! -
ARCHIVED So Jerry Is Very Frustrated....
Fiddle-Faddle replied to JerryK's topic in Coping with Celiac Disease
When you think about it, how many people with neuro symptoms actually have endoscopies looking for villous atrophy? Very few....so for all we know, maybe they all have villous atrophy! It's only recently that they figured out that DH is celiac, with or without villous atrophy. -
ARCHIVED Poll: Were You Or Your Children Breast-fed?
Fiddle-Faddle replied to Mtndog's topic in Parents, Friends and Loved Ones of Celiacs
All true; however, I am now convinced that, while there is definitely a genetic component to celiac, especially when it appears in an infant, gluten intolerance combined with continued gluten ingestion DOES lead to celiac (if you define celiac as changes to the villi). And as an adult, you can be as "healthy as a horse" one day, and suddenly develop an... -
ARCHIVED So Jerry Is Very Frustrated....
Fiddle-Faddle replied to JerryK's topic in Coping with Celiac Disease
Jerry, I don't even know if I have celiac or merely gluten intolerance--and for me, it makes absolutely no difference. Not because of the villous atrophy (which DOES happen after you continue to eat gluten when you are gluten-intolerant), but because I know enough people with fibromyalgia, diabetes, rheumatoid arthritis, MS, and other autoimmune disorders... -
ARCHIVED So Jerry Is Very Frustrated....
Fiddle-Faddle replied to JerryK's topic in Coping with Celiac Disease
Anyone besides me think that the Little Woman is also gluten intolerant? Being an addict is the first sign... Jerry, she may not be spending the time on the toilet that you did, but does she complain about bloating? Does she think her tummy is too fat? Does she get frequent headaches? Mood swings? There are many NON-digestive symptoms of gluten... -
ARCHIVED Post Diagnosis, Depression
Fiddle-Faddle replied to sherylj's topic in Related Issues & Disorders
THere is a very strong link between bipolar and caffeine, of all things. Try to cut down, if you can, and eliminating it altogether is probably best. Caffeine is basically a legal (and often delicious--can you tell I miss it? ) DRUG. -

ARCHIVED So Jerry Is Very Frustrated....
Fiddle-Faddle replied to JerryK's topic in Coping with Celiac Disease
Jerry, buy a copy of Annalise Roberts' Gluten-Free Baking Classics, buy the flours she suggests, buy two plastic air-tight bins to store them in, and make up her "Bread Mix A" and her "Brown Rice Flour Mix." Then you can use them in her recipes just like gluten flour, and whip up some treats that blow Girl Scout Cookies out of the water! Her brownies... -

Nic, most of us here on this board believe that IBS is the doctor's way of saying, "I'm full of B___S___." Irritable Bowel Syndrome is a "garbage" diagnosis; it's what the doctors call it when they can't figure out what the problem is. It's not a diagnosis at all, it's a Syndrome--a collection of symptoms. If you look it up, the symptoms just happen...

ARCHIVED Passover Is In 3 Weeks
Fiddle-Faddle replied to cycler's topic in Gluten-Free Foods, Products, Shopping & Medications
WHERE did you find gluten-free gefilte fish??????!! What brand is it? (And does it taste any good?) I miss gefilte fish so much! I just stocked up on Manischevitz Kosher-for-Passover gluten-free egg noodles!!! But as cycler said, read the labels! A lot of stores put out a lot of Manischevitz products around Passover, assuming if it says Manischevitz... -
ARCHIVED Vinegar And Acid Reflux/heartburn
Fiddle-Faddle posted a topic in Related Issues & Disorders
So I've read in several places that a teaspoon of vinegar can "cure" heartburn. I've been on Nexium for over a year now, and Prilosec and Zantac before that, so I would love to stop taking meds. I forgot to take my Nexium this am, and the heartburn is coming back with a vengeance. I took a teaspoon of vinegar (BOY, was that nasy going down!), and it... -
I was told here in Pittsburgh that they don't use your blood if you have any autoimmune disorders.

ARCHIVED Not Sure What To Do
Fiddle-Faddle replied to Swthrtpookie's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
You may find that your thyroid dosage may need to be adjusted down after going gluten-free. My dosage had been raised 6 times in 4 years, but after going off gluten, my endo had to keep lowering the dosage. But I had to call in complaining of hyper symptoms to get her to do the bloodwork (usually, she only checks once a year unless I am calling in with... -
ARCHIVED Clinton Wheat Allergy
Fiddle-Faddle replied to miles2go's topic in Publications & Publicity
If it were that easy to get to the president's food, I'm sure someone would have poisoned Bush a long time ago! (Why bother with wheat?) -
ARCHIVED Floridian/cecile
Fiddle-Faddle replied to Fiddle-Faddle's topic in Introduce Yourself / Share Stuff
Yes, I saw her last journal posts on Daily Strength--and they are really alarming. I don't know her well enough to know what's going on, and I was really worried (still am). She didn't say anything about taking time off to deal with the troubles, she just posted what sounded like cries for help, but I don't know how to help, or even if she is still there... -
She doesn't seem to be a member here anymore. Does anybody know what's happened to her and if she is okay?

ARCHIVED Is Barley .002% Considered gluten-free?
Fiddle-Faddle replied to gfgypsyqueen's topic in Parents, Friends and Loved Ones of Celiacs
There is a very decent-tasting potato-based milk called "Vance's Dari-free." I believe it is only available mail-order, but I could be wrong. It is not expensive, though, as it comes in a powder (lower shipping charges!).
