  1. Actually, I think cooking wine with lemon in it would work just fine. Lemon goes well with wine, cheese and Italian herbs! Fruit juice might be a little too sweet.

  3. JUst out of curiosity, why doesn't anybody think that a trial of the gluten-free diet might be a better indicator and safer course than an endoscopy? There ARE risks to the endoscopy because of the anesthesia, and there are false negatives. What if the endo results are negative? Does that mean you wouldn't try the diet? What will an endoscopy do that...
  4. Hey, Dan, welcome aboard! I'm a Pittsburgher, too. The Cranberry Bravo restaurant is terrific--they have gluten-free pasta! The manager and then the chef will come to your table and tell you what they can make gluten-free (they make their sauces twith cornstarch instead of with flour!). Outback Steakhouse is also good, and if you ask the waiter at CHeesecake...
  5. This is modified from a country cookbook I've had for years that has gluten in just about every recipe! These are the measurements that worked for me. The original recipe called for 1/2 c milk and 1 egg, and I doubled those just because the dough didn't look right. 2 Cups Bob's Red Mill wheat-free biscuit and baking mix 1 tsp sugar 2 tsp dried onion...
  6. I caved in after about 6 months gluten-free (and feeling SO much better) and had a Chinese dumpling. I had no reaction whatever. However, I don't see this as license to eat gluten. I already have enough autoimmune problems, and I know enough to realize that more will develop if I go back to gluten. The nice thing is, I don't react to cross contamination...

  8. When you think about it, how many people with neuro symptoms actually have endoscopies looking for villous atrophy? Very few....so for all we know, maybe they all have villous atrophy! It's only recently that they figured out that DH is celiac, with or without villous atrophy.

  10. Jerry, I don't even know if I have celiac or merely gluten intolerance--and for me, it makes absolutely no difference. Not because of the villous atrophy (which DOES happen after you continue to eat gluten when you are gluten-intolerant), but because I know enough people with fibromyalgia, diabetes, rheumatoid arthritis, MS, and other autoimmune disorders...

  12. THere is a very strong link between bipolar and caffeine, of all things. Try to cut down, if you can, and eliminating it altogether is probably best. Caffeine is basically a legal (and often delicious--can you tell I miss it? ) DRUG.
  13. What will he do if your villi have or have not improved? It's not like you can go MORE gluten-free! If the outcome is not going to change by having an invasive procedure, why have it?

Jerry, buy a copy of Annalise Roberts' Gluten-Free Baking Classics, buy the flours she suggests, buy two plastic air-tight bins to store them in, and make up her "Bread Mix A" and her "Brown Rice Flour Mix." Then you can use them in her recipes just like gluten flour, and whip up some treats that blow Girl Scout Cookies out of the water! Her brownies...

I just stocked up on Manischevitz Kosher-for-Passover gluten-free egg noodles!!! But as cycler said, read the labels! I've been on Nexium for over a year now, and Prilosec and Zantac before that, so I would love to stop taking meds.   25. There is a very decent-tasting potato-based milk called "Vance's Dari-free." I believe it is only available mail-order, but I could be wrong. It is not expensive, though, as it comes in a powder (lower shipping charges!).
