If you could absorb anything and everything, how come you don't swell up and burst from all that water seeping through you when you swim? Only topical benadryl is absorbed through the skin.   5. Blue cheese has pretty much universally been declared safe. I've never had a problem with it. Even the very few blue cheeses that still have a bread starter for the culture do not have a measurable amount of gluten. richard
  6. I'll join Lisa in saying that in more than 10 years of eating gluten-free I've NEVER found a cheese "coated" or "dusted" with flour. In my mind, that one qualifies as a celiac urban myth. richard

  8. Bacterial overgrowth is not uncommon. I've heard of celiac doctors who automatically put celiac patients on probiotics. richard

  14. I've had the bugs in non-imported flours, so I wouldn't blame it just on imported ones. FWIW, I don't seem to react noticeably to small amounts of CC but I most certainly do react to any substantial amount of gluten, and I've yet to ever have a problem with a flour I bought at an Asian market. richard

I have nothing to do with setting this up but I got notice from a local restaurant that there will be a first-ever (for the Roanoke, Va., area) gluten-free expo featuring local businesses and restaurants that offer gluten-free food or products.   22. Most people who have celiac eat food that has either that same warning or that has been processed on the same lines. I wouldn't worry. richard
  23. Whether or not a strict gluten-free diet is sufficient depends entirely on the individual. It was all I needed (and I was EXTREMELY ill), but others discover they have other intolerances, such as dairy. I also didn't need bland foods. However, there's no question that you're best off with basic unprocessed food to start off with. richard

    "Attract" gluten during the curing process? What the heck does that mean? Never heard of it. If you know of sausages with "fillers" that contain gluten, please post them on here. I've never found one. If you know of a turkey that's injected with anything containing gluten to "plump" them up, please post the brand here. I've never found one. richard
