  1. I once heard a celiac doctor in the Atlanta area (Cynthia Rudert) who generally put her new patients on probiotics because bacterial overgrowth is frequently found with untreated celiac.   2. You're overreacting, although there is a lot of gluten. Gumbo is probably out, although you can ask. There is a version thickened with file.   13. Obviously this anecdotal, but when I was diagnosed with celiac, they also noted that I had diverticulosis (I had a colonoscopy as they were trying to figure out what was wrong). A year or so later I had one episode of diverticulitis. Ten years later my next colonoscopy showed no diverticulosis. richard

  17. I'd be looking for other causes for the problems you're describing. These are NOT common celiac symptoms. richard

  24. I know that since 2006 a few deli meats that used to have gluten have been changed. I think deli meat is just one of those things, like hot dogs and sausages, that folks simply assume might have some sort of wheat filler even though that's rarely or never the case. richard

For one thing, just about anything they're going to put in you in an emergency is going to be gluten-free because IVs and injectables are universally gluten-free.
