I once heard a celiac doctor in the Atlanta area (Cynthia Rudert) who generally put her new patients on probiotics because bacterial overgrowth is frequently found with untreated celiac. It can also be difficult to detect and diagnose (sound familiar?). According to her, the probiotics can't hurt and might help. This was 10 years ago. Can't say if she's changed... -

You're overreacting, although there is a lot of gluten. Gumbo is probably out, although you can ask. There is a version thickened with file. Jambalaya made the right way will not have gluten or roux. My liver enzymes were high and because I did drink too much at the time, one doctor immediately decided I had destroyed my liver drinking. Except it immediately started getting better with IVs. Hmmm, all of the Worchestershire sauce I've seen in the U.S. has been gluten-free, so I'm not certain I would have identified it as the item that might have contained gluten. richard -

Obviously this anecdotal, but when I was diagnosed with celiac, they also noted that I had diverticulosis (I had a colonoscopy as they were trying to figure out what was wrong). A year or so later I had one episode of diverticulitis. Ten years later my next colonoscopy showed no diverticulosis. richard -

Virtually any of the finer restaurants in the French Quarter will have a chef who knows about gluten, although NO cuisine is rife with gluten. I know that since 2006 a few deli meats that used to have gluten have been changed. I think deli meat is just one of those things, like hot dogs and sausages, that folks simply assume might have some sort of wheat filler even though that's rarely or never the case. richard -
