As of this morning I'm down 17#. Will have the thyroid checked tomorrow. I am able to eat now though. Energy and mood is all good. Maybe I have a tapeworm.... :P

I'm so happy to hear that you're able to eat now. It's funny - with all of the tests I've had I've never had my thyroid checked (perhaps no reason to check it).

Clark just came home from being away for four days and he has two possible connections that would allow him to work from home (or do minor traveling).

So he just gets home and tonight is my sleep study. I've had some surgeries and intense tests but this study scares me more than all of them put together.

Please say a prayer.

Did you know that if you search this sight for "sweet potato" there are 1610 posts about them? (1611 now).

I was trying to find the one Jess gave me last year. You put them in a crockpot with orange juice. They were very good.

I am having a devil of a time figuring out Thanksgiving this year. My mother is supposed to eat extra low sodium. The regular low sodium diet is twice as much sodium. the problem is that she won't not eat it if its being served. Everyone else will be pissed that we aren't having Au gratin potatoes or some other cheeseful sodium laden dish.

Then my Bro who lives in Oregon and rarely communicates with any of us, sends an email last week "Oh, Don't know if I told you, we will be in town for Thanskgiving". They go to his wife's family's house in town. I really don't want them over as she has many food allergies, real & imagined. If she doesn't care for a food, she is allergic to it.

I am thinking of running away from home. :ph34r:

Kherrighnne, you can only do so much when you're preparing a big meal for countless people -- I would take the low sodium into account, but beyond that you cannot cater to people's myriad "perhaps' allergies. As celiacs we're all there -- if you have trouble with a common food/-ingredient, you need to bring some of your OWN food just in case, and to take the pressure off the overworked cook. I always do this and never feel put out at all.

What she does is ask for a PB &J at the end of a meal she doesn't eat. Similiar to J who can be a bit picky.

And if my BIL doesn't like it, he can take the $1000+ my parents have given them over the last 3 years for a new oven and buy one! Then invite everyone over there! I am happy to bring my own plate and something to share.

Hub & I were saying we would really rather have lasgna. Not very low sodium but I could balance it out over the whole meal.

Can you create a lower sodium version of the potatoes? I found this site: Open Original Shared Link talking about cheeses. Maybe you can practice some cheese sauces combining mozzarella, salt free cottage cheese, and some cheddar to see if you can get something tasty that's reasonably low in sodium.

It says fresh Moz is low sodium. I think we are getting an argument for lasgna. Except SIL only does dairy if chocolate is envolved. I'm hoping they will be eating with her family & just come over to visit.

Honestly, Bro is not on my good list right now. My dad has prostate cancer. My mom has an aortic valve that barely funtions with a 50% chance of surving another year. He won't call them or answer thier emails. Obviously, he isn't going to dr appts or sending a 15 yr old over to clean gutters or cut up tree branches.

End of rant. Jess- do you remember the sweet potatoes?

Hub saw me getting outta the shower last night. His exact words were: "Oh. My. God." I'm 5'11' and I'm down to 157. I'm not sure I think I look good! But my favorite jeans fit! :P

That sounds like a great plan! We're trying to talk my grandma into pitching in and ordering pizzas for Christmas Eve. She always works too hard and then b%$@#es about it! :lol:

I found these:

pile the peeled, sliced, taters and yams in the crockpot along with chopped onion and some orange slices. A bit of orange zest is good too, if you like the surprise 'zing' of serious orange flavor while you're eating. You could also add some pie apples, but maybe halfway through cooking so they don't get mushy.

Cook on low for ~6 hours (check them for done-ness at about 4). When done, stir in a few slices of cooked, crumbled bacon (or sprinkle it over the top in the serving dish).

I peel the orange and limit the amount of zest 'cause I don't really like the shock of the intense orange flavor. Maybe dried zest would be a little easier, or just skip it. You could flavor after cooking with a splash of orange liqueur if it needed a bit more. Some people put some orange concentrate in, but I don't like it too juicy.

That's it! Thanks! I will not use the zest if I make them. They got bitter the next day & i think zest might be why.

I think its very convienent to not have a working oven. Can't have anyone over. I think I thought about disabling mine last year.

So yesterday I had to go over the hill to get my hair cut (too short! :( )and just before I start the climb I come up behind this WIIIIIIIDE LOAD truck transporting a brand new building munching machine into the city from the port. They don't normally use my road, but this was too wiiiide for the tunnel, and too wiiiide and loooong to go over the other pass (would have never made it round the switchbacks) and it couldln't go over Evans Pass because that is still closed because boulders keep falling down on it every time there is an aftershock. So there I was chomping at the bit as this thing crawled up MY road taking up the whole width of the road and going about 4mph. And it was all shiny and new and yellow but pretty soon it would be out in the tomato patch like all the other building munching hornworms, wreaking destruction and loving every minute of it whilst its cowboy operator would be having the time of his life just tearing things down as little boys like to do. I suppose it's just as well we have men because I couldn't be out there munching up all those lovely buildings - not permitted on my diet :P When I eventually arrived at my parking lot just after twelve, I asked the parking fairy to make a place for me, and I got the last one in the lot. By the time I got out of my car at least six vehicles were circling :lol: And my hair is still too short!!!!

My dad was excited to tell me he got 3 tattoos today of a religious nature! If I posted a pic of them, I would be banned.

He had his first radiation treatment for prostate cancer. They tattoo little crosses to help line up the radiation machine correctly. He is finding the whole thing quite interesting. :D

But, unfortunately.....Shroomie's hair is too short!

The US House of Representatives voted today declaring pizza to be a vegetable (providing it has at least two tablespons of tomato paste!!) :lol: Hurray for pizza and french fries, the school veggie staples. :blink:

I read something about that in the newspaper. Wow, that makes me feel so much better. So my question is: Is that two tablespoons per slice or per pie? :huh: Either way, it's probably gross and I'm glad my kids can't eat it... :lol:

      Celiac Disease causes more vitamin D deficiency than the general population because of limited UV sunlight in the winter and the little available from food is not absorbed well in the damaged small intestine.  Taking 10,000 IU a day (250 mcg) a day broke my depression. Taking it for eleven years.  Doctor recently said to not stop.  My 25(OH)D is around 200 nmol/L (80 ng/ml) but it took about six years to get there.  Increasing vitamin D also increases absorption of Calcium. A good start is 100-gram (3.5-ounce) serving of salmon,  vitamin D from 7.5 to 25 mcg (300 to 1,000 IU) but it is going to take additional vitamin D supplement to be effective.  More importantly salmon has an omega-6 to omega-3 ratio 1:10 anti-inflammatory compared to the 15:1 infammatory ratio of the typical Western diet.       Thank you for sharing your thoughts.  I respectfully disagree.  You cherry picked a small section from the page.  I will do the same below: The agency is seeking information on adverse reactions due to “ingredients of interest” (i.e., non-wheat gluten containing grains (GCGs) which are rye and barley, and oats due to cross-contact with GCGs) and on labeling issues or concerns with identifying these “ingredients of interest” on packaged food products in the U.S. “People with celiac disease or gluten sensitives have had to tiptoe around food, and are often forced to guess about their food options,” said FDA Commissioner Marty Makary, M.D., M.P.H. “We encourage all stakeholders to share their experiences and data to help us develop policies that will better protect Americans and support healthy food choices.” --- end quote Anyone with celiac disease is clearly a stakeholder.  The FDA is encouraging us to share our experiences along with any data to help develop future "policies that will better protect Americans and support healthy food choices".  I see this as our chance to speak up or forever hold our peace.  Like those that do not participate in elections, they are not allowed to complain.  The way I see it, if we do not participate in this request for public comment/feedback, then we should also not complain when we get ill from something labeled gluten-free. There is nothing to send or receive. http://doodlesnotes.net/index3.html I tracked everything I ate, used the National Nutrition Database https://www.foodrisk.org/resources/display/41 to add up my daily intake and supplemented appropriately.  It tracks about 30 nutrients at once.

      Hello @catnapt, That's so true.  Every person with Celiac Disease has different symptoms.  There are over 200 that it mimics.  Too many still believe that it is only a childhood disease you outgrow.  Or it's psychosomatic or simply a fad.  Idiots.  It's easy to get angry at all of them.   You just have to pick at the answers until you find the ones that work for you.  I too suffer from not being able to take the drugs that work for "everyone else".  SSRIs make me twitch ane feel like toothpicks are holding my eye open, ARBs cripple me.  Statins cause me intestinal Psuedo Obstruction.  Espresso puts me to sleep.  I counted 19 different symptoms that improved from GFD and dealing with my nutritional defecits.  I couldn't breath through my mouth until I started GFD at 64 years old.   My son was born with celiac disease, biopsy diagnosed at weaning.   So why are we the one-percenters.  Why, after being silent for so long, does it suddenly flare? There is the possibility that you have both Celiac Disease and Non Celiac Gluten Sensitivity.  NCGS was not established as a diagnosis until 1980.  NCGS is diagnost by first elimating Celiac Disease as the cause, and showing improvement on GFD.  Nothing says you can't have symptoms from both.  Wheatbelly: Total Nutrition by Dr. Davis was helpful to me. We come to the forum to share what we've learned in dealing with our own symptoms.  Maybe this will help someone. Speaking of which if you don't mind; what is your 25(OH)D vitamin D blood level?  You mentioned a mysterious Calcium issue. Vitamin D, Calcium and Iodine are closely interactive. It is not uncommon for postmenopausal women to have insufficient intake of Iodine.   (RDA): Average daily level of intake sufficient to meet the nutrient requirements of nearly all (97%–98%) healthy individuals; often used to plan nutritionally adequate diets for individuals You are a one-percenter.  You may need higher intake of some essential nutrient supplements to speed up repairing the damages.
