The Absolutely Best Gluten Free Bread I Have Had!

I swear I am so happy! I had heard about this bread from a couple of people and thought there was no way it would taste like wheat or be soft, light and spongy like wheat. I have to tell you it is! I can't believe I have been suffering all this time. My brother who does not have celiac disease came over right after I baked a loaf and he had four slices! Anyway here is the link: Open Original Shared Link

Also if any of you live near Downers Grove, Il., they just opened up a gluten-free only store there in August 2005. I found them by searching where to get the bread mix from. The name is Eat to Live and their number is 630-964-5316 (I have no financial interest in this business).

Bread is the one thing I really missed because I love sandwiches, french toast, garlic toast, etc. so I really am pleased with the product.

Also they had some english muffins by Kinnickik or something like that that was excellent! Nice and crusty outside and soft and spongy inside. I'm in heaven!!!

I've been raving about Anna's breads for a year! I love them too, sometimes I do them in my bread machine other times I put them in the oven and make rolls, its so good tasting!

Which one of their bread mixes did you try? Also...did you use a bread machine?

Have you tried their banana bread mix or the pumpkin break one?

Anna's does have the best texture...

I have tried the banana bread mix and was not crazy over it. However, after adding more bananas and making muffins (instead of a loaf of bread) I love it.

I cut out the rice because it was affecting my stomach at the time ... not necessarily dermatitis herpetiformis. It was Tilda Basmati Rice, sometimes wholegrain rice. I was willing to do whatever it took to heal. Too much fiber also disagrees with me as I have UC.

But you didn't answer my question. When you consume gluten, is there an identifiable reaction within a short period of time, say a few hours?

You can still have celiac disease with negative blood test results, although it's not very common:  Clinical and genetic profile of patients with seronegative coeliac disease: the natural history and response to gluten-free diet: https://www.ncbi.nlm.nih.gov/pmc/articles/PMC5606118/  Seronegative Celiac Disease - A Challenging Case: https://www.ncbi.nlm.nih.gov/pmc/articles/PMC9441776/  Enteropathies with villous atrophy but negative coeliac serology in adults: current issues: https://pubmed.ncbi.nlm.nih.gov/34764141/

I am only wondering why you would need to cut out rice? I've never heard of rice being any issue in those with DH.

My mother has celiac disease and was diagnosed with Afib around 8 months ago. She's 81 and around 2 months ago had ablation therapy done, which is a very common procedure to treat this, and has been out of Afib 95% of the time since then. Apparently the full effects of this treatment don't kick in for 90 days, so the doctors expect her recovery to possibly reach 100%. Be sure to discuss this with your doctor.
