for my b-day. Well the last time I did that - was my

last time! I broke out from head to toe in hives and

some kind of nasty rash that left scars.....

Suffice it to say I'm really limited on what I eat -

I don't bother with beef or pork, they both make

me sick.

Soy, eggs, fish, corn, peanuts, mint, and more that I can't think of.

All except for the mint make me sleep, or pass out, literally, if I eat a lot. (I can sneak a bit of egg or corn chips and I'll be loagy) After I wake up I get really nauseated, so I don't eat them anymore. Peanuts make me scratch just to be around them (this never was the case before) and I've always be bugged by mint and minto toothpaste/gum/mouthwash, it makes me feel really nasty.

I thought gluten was hard-I can't imagine soy and dairy!!! I only avoid gluten, although I notice a slight reaction after a whole bowl of cereal or ice cream. And I try to eat as many animals as I can-pork, beef, chicken, deer, elk. Pork and chicken are my favorite. Especially pork ribs. Yum!!!

For what it's worth..

I cut out all flours, soy, corn, rice and dairy and still wound up with cramps and C. It seemed as though even a fruititarian diet would plug me up. Finally I experimented with eating a whole bell pepper plus one jalapeno three times a day, once at mid-morning snack, once before lunch and again before supper. Now dairy, soy, corn and dairy are no problem. I can eat again and everything goes as it should.

Hmm gluten of course, and Egg cause my son is allergic and I was never realy a fan to start with so easier to just not have it around. After that anything with advacdo in it! CAUSE ITS NASTY! YUCKY! OMG EW! And I tend to mostly aviod alcohol becuase I perfer to retian control of my self and not give it to a drink.

I tend to aviod that white crap that ppl try to tell me is "natural and healthy sugar", usally comes from the same ppl that tell me to avdio splenda/etc ause its "not nartural". LOL Thats very humorous.. splenda probably closer to natural then that white junk ppl ingest tons of. I just tend aviod all sweetners, I realy perfer "No Sugar Added" foods over "sugar free" or "we replaced the sugar with some other thing we found in a draw in the back of a school bus". :D If a non-sugar subsitute is gonna be added I always perfer splenda or honey over the others. I am still waiting on stevia to fall in price, when it does I will try that. When I do use sugar, I tend to use the REAL natural sugar, not that highly proccess white junk so many ppl think is good for them. :D

Other then that I pretty much eat anything, expect OMG SQUISHY ICKY PUCKY AVCADOS! EEEEWW!

Avacados, mmm, eat them all the time the squishier the better. :P

I can't have soy in large quantities. Aspertame really makes me sick but Splenda is okay. Citrus makes my guts churn and apples go right through me.

I'm allergic to gluten, soy, rice, dairy, nuts (deadly allergic to all of them), and aspartame. I'm not a huge fan of fruit, but *love* my juicer. I've discovered I can eat almost any veggie so long as it's roasted. :) I still eat beef and chicken, but very little fish (except the occasional salmon) due to the DH not liking fish.

I've avoided everything white for the past 25 years, meaning white sugar, flour, rice, vinegar, just because those are very unhealthy. Of course, now I avoid the whole grain flour as well.

I avoid dairy, it gives me stomachaches and diarrhea. I tried yogourt yesterday, because that used to be okay, and I got an instant stomach ache, so that's totally out for now.

I was diagnosed as having an intolerance to all nightshades three years ago, so won't eat potatoes, tomatoes, peppers, eggplant. Potatoes give me bloating, gas and diarrhea. Tomatoes give me migraines, and I'm not sure about the others, but I have no intentions of trying them to figure it out.

Eggs make me feel weird right now (burping up a strange taste, something feels off, can't really explain it), will try them again in a while.

I also tested intolerant to msg, coffee and the combination of fruit and grain (so, no baked goods, even now if containing rice flour, with fruit). The grain and fruit combo will give me horrible, huge hives within an hour, and I'll be itching all over for several days. And coffee makes me sleepy!

I avoid ALL artificial sweeteners, because they are poison. And that includes Splenda. It is made from sucrose. But they took three hydrogen oxygen atoms out of the sucrose and replaced them with CHLORINE! Right, chlorine is toxic. I have no intentions of EVER using Splenda. Here are some of the effects Splenda has on human bodies:

* Shrunken thymus glands (up to 40 percent shrinkage)

* Enlarged liver and kidneys

* Atrophy of lymph follicles in the spleen and thymus

* Reduced growth rate

* Decreased red blood cell count

* Diarrhea

I avoid raisins, because I HATE them! ;) Well, now I have another reason.

I now believe that I may have an intolerance to all salicylates as well. The list of foods I can now eat is an awful lot shorter than what I cannot eat.

The only fruits left to me are peeled pears and peeled golden delicious apples (bananas have no salicylates, but I am intolerant to them for whatever other reason). I can have absolutely no spices or things like vanilla and cinnamon. All teas are out (including fruit and herbal teas), except for chamomile tea (and I don't really like that one). Some nuts and seeds are okay, but a lot of them are not. The only sweetener left to me is maple syrup (which I fortunately use a lot, anyway), but honey is out (I had a lot of it). Fortunately, I've had to give up my favourite sweet, licorice already, because of wheat. So, I'm not upset about it anymore (well, not very :huh: ). A lot of veggies are out, too. It's a challenge for sure.

I was really aching again, and when I cut out the salicylates I started feeling much better. In about a month I'll be trying lectin foods again, to find out if I was wrong with them. I hope I was, it would add some things, like beans and eggs back into my menu, that would be nice (I thought that lectins might be a problem, which some of those foods would be no matter what, because quite a few of them also contain high levels of salicylates).

Okay, confession time. Did I mention CHOCOLATE? No, I didn't. I was in denial, I love chocolate. I thought that surely, nobody could expect me to give up EVERYTHING!!!! :angry:

I did test intolerant to chocolate three years ago, but that's the one I ignored. And now I gave up everything else I like, and thought that just plain, dark chocolate couldn't really be causing any harm. :ph34r:

Okay, I just had some chocolate. And bingo, instant stomach ache, and very painful hands, cold sweat and a headache just minutes after.

So, now I REALLY need a hug, because there is no more denying the fact that I am truly intolerant to chocolate. I have to give it up, starting this very moment. And it's MUCH harder than giving up anything else before, because it seems that's the only comfort food I had left. :(

On the other hand, maybe it was the chocolate all along that made me feel bad again after giving up gluten, not the salicylates! I guess in about a week or so, after the chocolate is out of my system, I'll try putting some spices on my food, to see what (if anything) will happen.

Interesting about your pepper cure. My mom has had "nervous stomach" most of her life in one form or another and used to guzzle Mylanta on a regular basis. Then she took cayenne pepper in pill form daily and her stomach is fine. Really weird for me because I cannot eat peppers - I have a toxic reaction. So they healed her stomach and destroy mine. Weird, huh?

I was just noticing this weekend it's been at least 6 months since I've had to remove a food from my diet. :) That seems a big accomplishment.

I am aparantly allergic to:

shellfish

aspergillus mold (in citric acid, black tea, fermented soy products, etc)

I am intolerant to:

nightshades

gluten

I am hypoglycemic and can't have:

alcohol (one sip makes me sick, too - seems a common gluten thing...)

refined sugars

Also, I don't do well on corn but do eat it in limited amounts. I am stringent about avoiding everything listed above, minus the corn, as minute amounts of everything (except the shellfish and sugar) seem to make me pretty sick. I have been on a really good streak lately, I think it's been 2-3 months since I've been glutened or anything else. Woo-hoo!

Someone on this list mentioned coffee and non-herbal tea gave her headaches - aspergillus is a mold that is commonly found in both. I don't seem to have problems with it in coffee (decaf) but definitely black tea causes the symtpoms she mentioned in me.

someone else mentioned they can't have ice cream or milk but cheese, etc are ok. There is more lactose in ice cream or milk - they usually add milk solids back in to make it thicker/creamier. I have a lactose intolerant friend who can have all dairy except ice cream and milk. He said Ben & Jerry's Cherry Garcia is the worst, almost instantly dooming him to the bathroom for a long period of time.

I get asked that all the time :lol:

I can eat rice, quinoa (in small amounts)

potato, lots of veggies, (TG I like broccoli) some fruits.

Obviously I don't eat any processed foods,

I just cook or prepare my own foods to

carry with me. And oh - lots and lots

of supplements and vitamins.

Fortunately in the Atlanta area we

have several stores with fresh organic produce.

Though I do spend about half a day grocery shopping!

Almost all intolerances below give me gastronomical (sp???) problems but yeast knocks me out for a few hours and makes me fuzzy headed for a few days. Also, almost all my arthritis-like pain has disapeared but I don't know which food or foods contributed to that.

I can only eat unriped fruit (yellow, slightly green bananas bother me but green with some yellow do OK) so I don't do that too much. I can have honey though, not sure why because I guessed there would be some type of yeast but I'm OK with it.

I have had symptoms of Celiac since I was 8, and am now 61, so I have learned to avoid all grains, all milk and dairy products, including casein and whey, as well as egg whites and yeast. I wheeze severely with Asthma if I eat any of these foods, and I have stomach aches, headaches, aches and pains in my joints, and feel simply miserable if I get them my mistake. Last week I made Christmas fudge and remembered that I could eat marshmallows, so I used marshmallow creme in the fudge. WRONG! One whole night of wheezing and being unable to breathe got me to read the label, where I learned that the marshmallow creme contained egg whites. Best of luck to the rest of you who are struggling with these same problems.

So far I have taken out gluten (of course), dairy (casein-so that means non-dairy as well), soy, corn (for now), eggs, coffee (even decaf), non-herbal tea, and now I'm thinking citrus fruits because of these stupid knee pains that won't go away. I also don't eat anything processed anymore, not even candy. Not for a while anyway.

The gluten is obvious, most of my symptoms cleared up from that alone. The dairy gives me stomach aches, nothing else really. Soy also gives me stomach aches, but not the soy in my calcium pills for some reason...?.....the corn I'm am currently testing on because I had cornmeal, regular corn pieces, corn oil and buorbun derived from corn (of course), and each time seemed to bother me. But I haven't had the corn alone yet, with nothing else with it, so I will test that in about a week. Coffee and non-herbal tea give me a weird headache, where it even hurts to touch a piece of hair on my head. As soon as I took that out, the pain was gone. I'm thinking from dehydration? ......And I don't eat anything processed because it seems everytime I have tried recently, I get sick, and all of the artificial ingrediants in those foods, and candy just don't agree with me right now.

whew! haha, I have a lot these days, I know. But I'm still in the begining stages, so I'm thinking after a few years and things are given a chance to heal, I should be a little better! I hope! :huh:

Hi- Hope you don't mind that this is a question that is off the topic but I was curious as to your diagnosis which is just so recent.

Did you ever have blood work done for celiac that came back negative. What did enterolab do? Dr. Green did genetic test? I am curious ad your info caught my eye and I am thinking about my two sons who both have symptoms but had blood tests that show negative. I'm trying to decide which test to do next.

Well I just had food allergy testing done and I reacted to so many things there is barely anything I'll be able to eat once I start my elimination diet. On top of Celiac I found out with the biopsy that I have Eosinophilic colitis. Its where white blood cells that are associated with allergy collect in various spots in your body. Thats why we did the allergy testing. Soon I'll start the elimination diet, however the reactions for my other disease the EC can occur weeks after ingestion, so I'll have to eliminate foods for 3 weeks before I add them back in.

So this is what I tested allergic to and will eliminate:

gluten (of course)

apples

banana

green beans

beef

chicken

corn

egg

lettuce

milk

oats

oranges

peanut

pork

potato

rice

soy

squash

tomato

tuna

wheat

yeast

I guess I will live on fish and broccoli but I'm really bummed and depressed about this.

Susan, I have a brother who also tested allergic to beef and pork. But it wasn't the meat per se that was the problem, but the hormones and antibiotics the animals are fed, as well as beef being fed grain (they aren't meant to eat grain but grass).

He can eat all game (deer, rabbit, wild turkey, goose, duck etc.). You should try either finding these (which might not be as easy here as it is in Germany I think) or try organic, grass fed beef. You might be able to tolerate that just fine.

Are you near any Amish or Mennonite places? You should be able to find what you want there. Oh, and consider ostrich or bison as well.

There are lots of other vegetables left, other than broccoli! Be creative and try something new.

I just confirmed for myself that I am allergic to lectins this week. After having bad reactions to rice on Monday, and an even worse one to eggs on Wednesday I am sure I can't have lectins (by the way, all grains contain lectins, and gluten is a lectin if I remember right).

So, I just took Aspirin to confirm the salicylate intolerance and hope I won't get sick, because I want to eat fruits and herbs and spices again!

But I am afraid I am starting to get a reaction. :angry:

Ursula--This discussion on lectins is interesting to me. I recently cut rice and all other grains out of my diet. For 2 weeks I was eating only fruit, veggies, olive oil, and meat. During that time, the eczema that I've had for over 10 years cleared up on it's own. I began to lose the extra weight I gained after going gluten-free--which is good for me. Yesterday, I had chick peas on my salad, also canola oil. I also tried a little corn today. My eczema is starting up again and both my eyes are very itchy and irritated. Could this be a sensitivity to lectins? I really had never heard of this before reading some of the posts here. I looked at your link above, and a light bulb kind of went off. Any advice you can offer on this would be greatly appreciated :)

Patti, I am still pretty new to this. But I know I felt much better when cutting out the lectins. With the rice on Monday, one of the symptoms definitely was that my eyes were tearing badly again out of the outer corners.......something that had been bothering me for years and cleared up since cutting out gluten and lectins. And the eggs made my feet, knees and hands ache again, making it hard to go up stairs (amongst other symptoms). Also, since Monday I am breaking out again in what looks like acne on my face (but is probably a kind of dermatitis).

My skin had cleared up almost all the way these past three months. I used to get hives and rashes frequently. I thought going off gluten cleared these, but maybe it was lectins that were the problem.

I don't mean I am not gluten intolerant, but gluten caused the intestinal symptoms (well, not only those, of course). It looks like the lectins caused the skin problems and maybe even the stomach aches.

Just try avoiding all the lectins Krispin is listing and see what it does. If you feel better, and your eczema clears up, you'll know to avoid them for now. As she says, maybe after a year or two you might be able to reintroduce some of them. But there is no guarantee.

I find that all starches make me gain weight, so I rarely have any. I only bake with non-grain flours, and only as a special treat once every few weeks. I've lost quite a bit of weight these past months, and I need to lose a lot more (I am one of those celiacs whose weight gain went out of control for no apparent reason, but I am finally losing weight, now that I am off gluten).

Ursula--Thanks, I'm going to try and cut the lectins out again and see what happens. My eyes have been itchy and tearing like crazy the past couple of days and the stupid eczema, like I said, is back :angry: . One more question--what kind of non-grain flour do you use? I tolorate potato very well--I could maybe mix one of those flours with potato starch flour to bake occasionaly. Like you, the baked goods are what keep me from losing weight--if I stop them, I begin to lose right away. I do best on a limited diet of just produce, meat and olive oil. I didn't realize that eggs were lectins--they have always made me very ill--the most nauseous I ever get is from eggs. Another thing I never thought about is the oil made from grains--I had switched to all olive oil, but these last few days, have used some canola oil I had in the pantry. Thanks again for the info.--I will go back to the Krispin list and study it some more. Let me know how you do now that you've figured out your problem foods--I'll keep you posted on the lectins.

Patti, I use (and may have to modify that) a mix of buckwheat flour, tapioca flour, arrowroot flour and ground hazelnuts (you can use ground almonds, but they are high in salicylates and out for me). I find that makes a nice flour. I don't know if you can bake cake with that. But I use it to make crumbs (with lard and maple syrup) to make a nice apple crisp. It also works well for cookies, and pancakes if you add liquid (almond milk is nice, if you can tolerate almonds).

Potatoes are high in lectins AND salicylates, and I can't tolerate them at all, so can't use potato flour.

I confirmed the salicylate intolerance, by taking aspirin and eating foods high in them yesterday, and I am quite ill today as a result. Oh well, at least now I know.

Deb, your husband might be intolerant to salicylates (all the things he can't tolerate are high in salicylates, except for the cheese). Check out the link in my signature and see what you think.

I am just curious, did you have reactions before you got allergy tested I am gluten and dairy free and wondering what made you get futher testing?

      @BlessedinBoston, it is possible that in Canada the product in question is formulated differently than in the USA or at least processed in in a facility that precludes cross contamination. I assume from your user name that you are in the USA. And it is also possible that the product meets the FDA requirement of not more than 20ppm of gluten but you are a super sensitive celiac for whom that standard is insufficient.

      No,Lindt is not gluten free no matter what they say on their website. I found out the hard way when I was newly diagnosed in 2000. At that time the Lindt truffles were just becoming popular and were only sold in small specialty shops at the mall. You couldn't buy them in any stores like today and I was obsessed with them 😁. Took me a while to get around to checking them and was heartbroken when I saw they were absolutely not gluten free 😔. Felt the same when I realized Twizzlers weren't either. Took me a while to get my diet on order after being diagnosed. I was diagnosed with small bowel non Hodgkins lymphoma at the same time. So it was a very stressful time to say the least. Hope this helps 😁.

      @Jmartes71, I understand your frustration and anger.  I've been in a similar situation where no doctor took me seriously, accused me of making things up, and eventually sent me home to suffer alone.   My doctors did not recognize nutritional deficiencies.  Doctors are trained in medical learning institutions that are funded by pharmaceutical companies.  They are taught which medications cover up which symptoms.  Doctors are required to take twenty  hours of nutritional education in seven years of medical training.  (They can earn nine hours in Nutrition by taking a three day weekend seminar.)  They are taught nutritional deficiencies are passe' and don't happen in our well fed Western society any more.  In Celiac Disease, the autoimmune response and inflammation affects the absorption of ALL the essential vitamins and minerals.  Correcting nutritional deficiencies caused by malabsorption is essential!  I begged my doctor to check my Vitamin D level, which he did only after making sure my insurance would cover it.  When my Vitamin D came back extremely low, my doctor was very surprised, but refused to test for further nutritional deficiencies because he "couldn't make money prescribing vitamins.". I believe it was beyond his knowledge, so he blamed me for making stuff up, and stormed out of the exam room.  I had studied Nutrition before earning a degree in Microbiology.  I switched because I was curious what vitamins from our food were doing in our bodies.  Vitamins are substances that our bodies cannot manufacture, so we must ingest them every day.  Without them, our bodies cannot manufacture life sustaining enzymes and we sicken and die.   At home alone, I could feel myself dying.  It's an unnerving feeling, to say the least, and, so, with nothing left to lose, I relied in my education in nutrition.  My symptoms of Thiamine deficiency were the worst, so I began taking high dose Thiamine.  I had health improvement within an hour.  It was magical.  I continued taking high dose thiamine with a B Complex, magnesium. and other essential nutrients.  The health improvements continued for months.  High doses of thiamine are required to correct a thiamine deficiency because thiamine affects every cell and mitochondria in our bodies.    A twenty percent increase in dietary thiamine causes an eighty percent increase in brain function.  The cerebellum of the brain is most affected.  The cerebellum controls things we don't have to consciously have to think about, like digestion, balance, breathing, blood pressure, heart rate, hormone regulation, and many more.  Thiamine is absorbed from the digestive tract and sent to the most important organs like the brain and the heart.  This leaves the digestive tract depleted of Thiamine and symptoms of Gastrointestinal Beriberi, a thiamine deficiency localized in the digestive system, begin to appear.  Symptoms of Gastrointestinal Beriberi include anxiety, depression, chronic fatigue, headaches, Gerd, acid reflux, gas, slow stomach emptying, gastroparesis, bloating, diarrhea and/or constipation, incontinence, abdominal pain, IBS,  SIBO, POTS, high blood pressure, heart rate changes like tachycardia, difficulty swallowing, Barrett's Esophagus, peripheral neuropathy, and more. Doctors are only taught about thiamine deficiency in alcoholism and look for the classic triad of symptoms (changes in gait, mental function, and nystagmus) but fail to realize that gastrointestinal symptoms can precede these symptoms by months.  All three classic triad of symptoms only appear in fifteen percent of patients, with most patients being diagnosed with thiamine deficiency post mortem.  I had all three but swore I didn't drink, so I was dismissed as "crazy" and sent home to die basically.   Yes, I understand how frustrating no answers from doctors can be.  I took OTC Thiamine Hydrochloride, and later thiamine in the forms TTFD (tetrahydrofurfuryl disulfide) and Benfotiamine to correct my thiamine deficiency.  I also took magnesium, needed by thiamine to make those life sustaining enzymes.  Thiamine interacts with each of the other B vitamins, so the other B vitamins must be supplemented as well.  Thiamine is safe and nontoxic even in high doses.   A doctor can administer high dose thiamine by IV along with the other B vitamins.  Again, Thiamine is safe and nontoxic even in high doses.  Thiamine should be given if only to rule Gastrointestinal Beriberi out as a cause of your symptoms.  If no improvement, no harm is done.       I have been diagnosed with celiac in 1994, in remission not eating wheat and other foods not to consume  my household eats wheat.I have diagnosed sibo, hernia ibs, high blood pressure, menopause, chronic fatigue just to name a few oh yes and Barrett's esophagus which i forgot, I currently have bumps in back of my throat, one Dr stated we all have bumps in the back of our throat.Im in pain.Standford specialist really dismissed me and now im really in limbo and trying to get properly cared for.I found a new gi and new pcp but its still a mess and medical is making it look like im a disability chaser when Im actively not well I look and feel horrible and its adding anxiety and depression more so.Im angery my condition is affecting me and its being down played

      Wondering if anyone knows whether Lindt chocolate balls are gluten free. The Lindt Canadian website says yes but the Lindt USA website says no. The information is a bit confusing.
