Since I make my own spaghetti sauce and there's just two of us, we usually end up on a 3 day run of sauce related meals:

Night 1 - Spaghetti

Night 2 - Chicken Parmesan (made with gluten-free breadcrumbs, gluten-free waffles processed work well for this)

Night 3 - Pizza! (I use chebe mix)

Otherwise? Chicken tenders made with potato flakes (known as Nini's chicken :) ), goulash made with tinkyada macaroni, gluten-free chicken fried steak, stir fry with any combo of meat and veggies, smothered bbq chicken (grilled, with sauce, melted cheese, and mushrooms), souvlaki (with rice and tzaziki sauce), meatloaf (potato flakes instead of breadcrumbs), roast chicken and potatoes, chicken soup, potato soup, mac and cheese made with tinkyada, spanish rice, greek rice...

Possibilites are endless :)

Beef stew, Nini's Chicken, steak grilled outside and baked potatoes, meatloaf (made with potato buds), baked pork chops--roasted potatoes done alongside, Tinkyada Pasta with gluten-free meatballs, pot roast with carrots and potatoes, grilled Cook's ham steak with sweet potatoes, pork roast with german potato salad, stir fries, homemade chicken soup, etc.

Non-gluten-free husband and I love mexican food! Tacos, tostadas, enchiladas, taco salad, taco soup, nachos. I will use hamburger, chicken and shredded roast beef alternating so we don't get burned out.

I really like to make potato dishes, like baked potatoes with chili on top, grilled chicken with roasted potatoes or mashed potatoes. Roast beef in a crock pot with carrots, onions and potatoes.

I also like to eat eggs scrambled and then in a tortilla with salsa and canned or hash browned potatoes (husband likes steak in his).

I love italian food too, and will make chicken parmesan, spaghetti, pizza (with chebe mix or Gluten Free Pantry french bread mix) w/ canadian bacon or hamburger and veggies on top. I have yet to find a good recipe for fettuccini alfraedo...would love to make my own.

Not much of a stir fry fan, but I'm sure there's lots of good things you can make stir-fryish. I like rice with seasoned chicken, or rice pudding (for dessert or breakfasts).

Can't think of anything else right now...hope this helps :)

I love homemade soups - taco soup, leftover roast soup, chicken veggie soup, double potato soup, pumpkin soup, chili (which can be eaten with rice, corn bread, corn chips and salad fixings, or with hotdogs, etc.). My sister makes clam chowder, too, but I had a bad experience with clam chowder in 6th grade that I doubt I will ever recover from, so I don't make it.

Baked potatoes

BBQ ribs,

pork chili verde,

orange pork chops,

poached salmon,

parmesan Mahi Mahi,

Honey-BBQ salmon,

chicken fried rice,

cashew chicken,

orange chicken,

waffles or pancakes,

BLT's,

pasta salad (using Tinkyada pasta - with chicken, corn, cheese, olives, carrots, peas, etc (cook the veggies first)),

chef's salads,

corn on the cob,

burgers (we've always skipped the buns on homemade burgers),

tacos (we eat a lot of those!),

nachos (corn chips spread with refried beans and cheese, then broiled till melted, then add lettuce, tomatoes, etc.),

kalua pork (boneless ribs + liquid smoke, salt, and water, crock-potted all day, then shredded - YUM!)

I could go on and on!

Tinkyada is the best rice pasta -

here is a nice eat-in-front of the TV or DVD dish:

"Gina' s Crab-based nacho dip" ;-)

Layer into a glass baking dish:

Bottom layer:

Amy's veggie refried black beans

Next layer:

Mix together Gluten-free Casein-free tartar sauce, some Gluten-free Casein-free mayo (not much), crab out of the can (as much as you like), salt, pepper and choped green onion (I 'invented' this layer after feeling sorry for myself that I cannot have dairy...It really makes up for no cheese and the crab flavor is great!)

Next layer:

Muir Glen Corn and Black Bean Salsa - mild

BAKE to heat through, THEN

Top with:

Gluten-free Casein-free guacamole

Dish out and dig in with Black Bean tortilla chips...YUM YUM

I've gotten 'raves' - my FAV for a quick and tasty, healthy fun meal, and great to bring to a potluck or party

2 Oscar Meyer Turkey Sausages

1-2 large Chicken breast

1 can Muir Glen fire roasted tomato

Lea & Perrins worchestershire sauce

McCormick garlic powder

Kraft shredded mozzerella cheese

Cut chicken into smallish peices (about half dollar to quarter sized) and begin to cook on medium heat

Add tomato (do not drain)

Cut sausage into medallions and add

Add garlic and worchestershire sauce to taste

Boil liquid off while stirring frequently

When most of the liquid is cooked off, pour into baking dish and coat with a layer of mozzerella cheese

Bake at 425 until cheese is brown on edges

Serve immediately

I would also recommend getting yourself a couple of gluten free cookbooks. My favorites are Incredible Edible Gluten Free Food for Kids by Sheri L. Sanderson (not just for kids) and Bette Hagman's the Gluten Free Gourmet Cooks Fast and Healthy. In the Incredible Edible book are recipes for buttermilk pancakes that are divine if you add blueberries, biscuits and biscuit sandwiches, crustless quiche, and a ton of other yummy things. The Bette Hagman book has a lot of great stuff too including a super quick, easy, and inexpensive pizza crust recipe. I can now make a pizza from scratch in 30 minutes. :D

I never finished the 101 recipees :ph34r:

These are all "fast food" since the idea was things you can cook in the same time as it takes to boil rice or gluten-free pasta.

They are not the best recipees.... but the idea is they are good recipees to make quickly.

It leaves out a few of my favorites (like zuccini pasta) because of the cooking time of the zuccini...

so here's Zuccini pasta.

One decent zuccini per person

Clove of garlic per person (or adjust to taste)

2x Table spoons olive oil per person (good strong olive oil is better here)

pecorini (or whatever chilli you prefer) obviously with qnantities adjusted accoring to the chilli

Parmesan, grated or sliced but not powder

(I also use my own chilli oil... which is all the offcuts I make on chillies thrown in olive oil with a few herbs and a bay leaf) so I add some of this

Slice the zuccini VERY thin... I use the slicing side of a cheese grater while the oil heats up to a medium heat with the thinly sliced garlic and chilli... then cook the zuccini until its starting to go golden brown and all the water has been expelled. (20-30 mins - this should help you gauge the heat)

Cook gluten-free pasta.... rice taglaitelli is quite good with this ...as opposed to corn pasta equally good for different things and just drain and pour over the oil and zuccini and mix in coursely grated parmesan....

You can cheat on actual prep time.... (the zuccini needs very frequent stirring) by adding course salt tot he zuccini and leaving on kitchen towel for 30 mins... then wash the zuccini off (to get rid of the salt which now contains the water from the zuccini) and pat dry with clean kitchen towel....

Cuts cooking time down to half or less.... but you loose some taste from the zuccini...

What I usually make when I don't have anything in mind is a stir-fry of meat and vegetables, usually fried in olive oil and seasoned with garlic, red pepper, paprika, and black pepper, served over rice. Last night the meat was pork and the vegetables were onions, red peppers, and eggplant (sauteed separately).

Last night I tried the chicken strips. I just mixed this gluten free all purpose baking mix, and the potato buds, dipped the chicken in milk then rolled it in the mix, salt and pepper, BAM! Omg. They were so good, and very easy to make, thats always a plus when your busy all the time.....

If you think you ar seeing double it is because I pasted this from the "coping with" thread!

Weekend Lunch - Sweet potato & a sliced onion fried in extra light olive oil french fry style, serve with baked beans, (pinto beans, catsup, mustard, chopped onion, brown sugar, cook in microwave 10 minutes)

dinner: seared pork chops in a skillet, remove to a plate, saute bell peppers, celery, onions, garlic in skillet, remove to a bowl, brown one cup of rice in a skillet, add one jar of classico spaghetti sauce, fresh basil, fresh oregano (if you have fresh if not season to taste), about 1 cup of water, stir in the sauted veggies, put pork chops on top, bake in 350 degree oven till rice is done (my pork chops are thin so they will be done, if yours are thick just cook a little longer).

beef casserole: Brown a pound of ground beef with a chopped onion, add a can of cream of celery soup or mushroom or your own homemade cream soup base, a can of English peas drained, a Tablespoon of mustard, stir up, top with dollops of mashed potatoes (leftover is good), sprinkle with any cheese - or leave it off bake in 350 degree oven till all bubbly.

veggie bake: cut up red potatoes or sweet potatoes, carrots, onions, squash, etc., add a bunch of garlic cloves - I just cut the top & bottom off & cook a couple of heads, lightly coat with olive oil,salt & pepper, sprinkle with fresh herbs, bake in 350 degree oven till done - will be slightly brown on edges. I think this goes good with brown rice and cole slaw.

2 8 oz. cans tomato sauce

1 14 oz. can diced tomatoes

2 cans pinto beans, drained & rinsed

2 c. beef broth

4 oz. can diced green chilies

1 can refried beans (optional)

2 Tbs. McCormick taco seasoning

Cook hamburger with onion. Drain grease. In a large soup pot, combine hamburger with all the other ingredients and heat through. Taste it . . . if you want it to be spicier, add more taco seasoning. Serve over corn chips (Fritos) with cheese or sour cream.

My favorite - it's quick, easy and gives you great left overs that I usually make into a stir fry, or you could do fajitas or something as well...

1 flank steak (buy big enough for left overs)

1/2 c soy sauce (gluten-free of course)

1/2 c packed brown sugar

dab of oil

tsp each chopped garlic and chopped ginger (use more or less to your taste)

dash red pepper flakes if you like

Heat the oil and brown the garlic and ginger in it. Stir in soy and brown sugar, stir together and let cool a bit. Take your flank steak and score a large diamond pattern into it. Pour marinade over it (I use a large ziploc bag). Do this at least 6 - 8 hours before, or I usually do it the night before. Turn steak often while it's marinating. Heat the grill or broiler hot, then just quick cook 5 - 6 min per side (if that really, but I like it a bit rare). Yummy!! Remember to slice the steak thin and across the grain.... oh - and let it set for 10 - 15 minutes before you slice it.

To serve fancy - set aside some of the marinade first, then pour the rest over the steak. Heat up that marinade and top the meat right before serving. You can also toast sesame seeds and slice green onion for garnish.

This is now known as "famous steak" in our house. Enjoy!!

      My husband just had shingles going on 7 weeks now. We had been putting Vaseline on the blisters and lidocaine cream and he was prescribed an antiviral.  Also he still has the nerve pain it was bad and is getting better it is his upper left torso. His dr prescribed gabapentin 300mg 3x a day and he's also taking naproxen 500ng 2x a day and tylenol 1000mg every 6 hrs. Hope this helps  The lidocaine cream is by tylenol and is available in a large tube on Amazon or at Walmart

      What are your daily meals? Guilty pleasure snacks? Protein bars? I feel when looking for gluten free foods they are filled with sugar cholesterol. Looking for healthy gluten-free protein bars. Something to fill since sometimes I feel like not to eat anything. Especially if on vacation and unsure of cross contamination I figure go with a salad and protein bar to fill and play it safe.

      Unfortunately, there is presently no test for NCGS. Celiac disease must first be ruled out. NCGS is thought to be much more common than celiac disease. We know that celiac disease is an autoimmune disorder but the mechanism of NCGS is less clear. Both call for an elimination of gluten from the diet.

      Thanks for your reply Trents…most appreciated.  I am unfamiliar with celiac labs terminology so I wanted to know if the presence of HLA variants (DA:101, DA:105, DQB1:0301 and DQB1:0501) that the labs detected had any merit in predisposing one to be more sensitive to gluten/carbs than the general population?  Also,  I found what you said about NCGS very interesting and I appreciate you mentioning that.  I’ve worked hard to research and advocate for myself with my Hematologist and now with a new GI, since my bowel surgery and to maintain my Vitamin B12 health concurrent with keeping my levels of Iron in the optimal range. I’ve been tested for SIBO (do not have it), biopsy showed negative for HPylori, and have had Fecal studies done (nothing showed up) and I understand how a loss of a large amount of bowel could be highly impacting re: SIBO, malabsorption and motility issues. So I’ve managed pretty well diet and elimination-wise until just recently. That said, this new problem with extreme bloating, distention and upper girth, NAFLD just occured over the last 4 months so it is new for me and I thought celiac might be a possible issue. I’ll probably just continue on in this less gluten/carbs seem to be better for me and see how reintroducing certain foods go.  Thanks again.

      Thanks bumped it up and now take all 3 vitamins 2 capsules each with the super b complex at breakfast. I will give it some time to see if I notice a difference. I am going to track my eating daily diary on a myfitness pal app to see if the "claimed" gluten free foods bother me or not.
