I did pretty well today.

B - 2 pieces of chicken sausage

L - quite a few rice crackers, about 1/4 C marinara sauce with about 1 Tbs sheep milk Romano cheese stirred in, 1/2 a chicken/apple sausage

S - a few blueberries off our bush

D - homemade chili

S - med. apple

Hello All

The last time I posted I was working and could not get some free time away from the cranky babies that I had in the nursery to be able to safely post and still watch my babies.

So on Friday at work I had

Amy's Black eye pea dinner

D Coke

Saturday woke up at 12:30pm and went to eat at El Chico at 4pm

Grilled chichen Montera with veggies and Rice

Sunday

B- well kinda lunch time so I guess it was lunch

2 eggs, 2 turkey bacon, oreda hashbrowns that I grated some cheese in, and 2 gluten-free toast

coffee, and Lactaid Milk

Still full from my late lunch so I will eat maybe around 10pm or maybe later so I wont be so hungry by 7am. But I know that I will eat what I brought with me because there is never anything good for me to eat the cafeteria except for maybe the chicken but not always and since I have been bring my own food so I can make sure that I am eating right I have been saving so much money I have gone down from spending $36.00 a pay check to $10.00 a pay check on just drinks or maybe some chicken.

Tonight my meal will be

Brown rice tortilla with gluten-free cheese, sunshine burger and salad with gluten-free dressing

well, i had an awesome day today. i didn't eat gluten-free though. so that ends my 3 day streak which i am guilty to say is probably the longest time i had eaten gluten-free in a row. i went to the beach with my friends (i was confident that i wouldnt feel sick when we got there because i had been eating gluten-free!... usually i wouldnt want to go because i would be scared i would get sick) i got really burnt at the beach but whatever it was awesome! then after i went to another friends house and watched parent trap which is an awesome movie... i can't believe how innocent lindsay lohan used to be :( anyways, now i'm going out again! haha

what i ate today... not very healthy but i was running around (excuses i know)

no breakfast. oops i woke up late.

for lunch i had this chicken rice salad that is AMAZING.

for dinner i had chinese food with my friends... that was the non gluten-free part. CRAP. if i had planned ahead i could have brought food with me but as always i just go wherever my heart takes me haha and it didn't think enough to pack some dinner! next time i will think a little before i leave the house for the entire day. but man was it a fun day!

I am a stay at home mom but for fun this weekend I helped out some friends of the family at their Pigglys stand at the local Scottish Highland games. We are talking beer batter fries, bar-b-que turkey legs, fries with cheese sauce, cheese burgers, polish dogs, onion rings, and fried zucchini! And I did not have even one bite. I am so proud of myself. In fact we were so busy that I did not eat anything all day. But when I got home I had some gluten-free turkey sausage and green beans. I think that I might have another small meal before I go to bed because I only had about 500 calories today and that's just not healthy. Still haven't weighed myself. Too scared!

I think that the salad dressing is Annie's Naturals, I kinda like it but maybe there is something else that I have not tried, I'm a little cheap when it comes to groceries because I try to keep within my grocery budget and with me haveing to buy gluten-free $$$ I just buy bread, rice tortilas, sunshine burgers, brownies, cheese slices, maple buckwheat flakes that I know are gluten free from Whole Foods and the rest at Walmart or Albertsons, Krogers. And I'm learning what I can buy from Wal-Mart that just maybe gluten-free. So I tend to buy what costs the least I'll have to check the bottle when I can get to it, I brought the bottle with me because I did not have time to put it into a container. And if you have a Whole foods I have never tried it but the 365 brand is gluten-free and I think that Paul Niewman is as well I might be wrong on that one.

i got up this morning and did some pilates with sharon mann on tv, and now im sitting here drinking some water and reading post before i go get ready for the day. once the kids get up we are going to go for an walk, i have hit an plateau on my diet so i need to step it up this week.

I have given up my iced tea that I drank every morning, now I am drinking water. I am also at my desk eating Strawberry Corn Flakes.

PS-Over the weekend I was doing something and my fiance says did you legs get slimmer?

Good morning all ok well good evening to most, this is my morning since I am working. I did not get much sleep because I had things to do before going to work tonight, thats the draw back of working nights sleeping days, but I can manage to switch hit during days when I am not working. Usually if I were eating gluten I would be dog tired and not concentrating very good and not in a good mood, what a differance makes when you are eating what your suppose too. Ok here is what I had today I went to bed this morning at 9am and woke up at 1:30pm because I forgot to set my alarm for 3pm but thats ok I'm off tomarrow.

You have some color in there, orange, green, yellow. I think that it all balances out and just enjoy you choices.

I eat a lot of chicken and turkey sometimes I think that I'm overduing it with the chicken and turkey but it is better for me than the red meat, and I need more fruit.

And what is Hemp milk is it good?

Sometimes I wonder if I have any self-control left in me at all! I did so well on Saturday, and then blew it royally yesterday at a barbecue and then didn't do so well today either. I should stand up and say, "Hi, I'm Liz and I'm a food-a-holic."

Today:

B - bowl of pasta salad and a kiwi fruit

L - Rice with curried chicken, almonds, tomatoes, olives, pineapple, celery, onions and coconut (Was at a friend's house for a family get-together and they had this thing they called "mountains" - it was yummy, but I ate too much. The really nice thing that my friend did was to have me make the chicken and curry gravy stuff so my kids and I could eat it.)

D - plain chicken leg, about 3/4 C plain rice, apple

and you can do it, just make sure you drink your water that was the key for me.

gl on getting rid of the antideprassants, i know that can be very tough on people

the antidepressants are frustrating. i've gotten down to 1 from 3 in the past year and a half. now just gotta kick that last one.

I also try to stick to Crystal Light (only 5 calories!) but it just isn't the same :(

Crystal light is gluten-free? I thought it had gluten. Maybe just the Walmart brand does.

Crystal Lite is gluten free, but contains magnesium oxide, which can cause gas and bloating. I already take magnesium supplements (not oxide). So I'm very sensitive to Crystal Lite reactions. Instead, try sugar free Koolaid which is also gluten free.

no problem, it is hard to drink the water, i have been finally getting back to drinking about 80 ounces an day and i feel great about it, but i always have to pee and that is so frustrating lol

:) Yeah, I like hemp milk, but it probably woudn't be as good to someone who can have dairy. It's a good alternative to milk...it's much creamier and a bit more nutritious than rice milk.

So...today so far:

B- one apple, one banana and peanut butter

L - tinkyada pasta and some herb salad with balsamic vinegar

D - I'm really hungry, so hopefully I'll make something good :)

i ate completely gluten-free today. :) other than that it was pretty unhealthy, i had some cereal, some rice, and then pasta and bread for dinner. i did eat carrots and a salad though. i need to buy some fruits i don't think i've had fruit in forever... that's really bad.

and My meal for tonight at work will be

Hamburger with cheese, pickel, onion, on gluten-free English muffin

coffee later at 5am

I will not be surprised if I have gained weight with all this junk that Im eating, but at least it is not sweet junk food.

Ummm, two bags of potato chips. I feel like a poster child for the "don't shop when you're hungry" campaign.

One thing this thread has taught me is that I need to keep quick healthy foods at home all the time 'cause if I try to run to the store when I get home I don't do such a good job.

      I realized it is actually important to get an official diagnosis because then insurance can cover bone density testing and other lab work to see if any further damage has been done because of it. Also, if hospitalized for whatever reason, I have the right to gluten-free food if I am officially celiac. I guess it gives me some legal protections. Plus, I have 4 kids, and I really want to know. If I really do have it then they may have increased risk.

      Been off this forum for years. Is it that important that you get an official diagnosis of something? It appears like you had a trigger (wheat, gluten, whatever) and removing it has resolved your symptom. I can't speak for you, but I had known what my trigger was (gluten) years before my diagnosis I would just stay gluten-free and get on with my symptom free condition. I was diagnosed over 20 years ago and have been symptom free only excluding wheat, rye and barley. I tolerate all naturally gluten free whole foods including things like beans which actually helps to form the stools.

      No coincidence. Recent revisions to gluten challenge guidelines call for the daily consumption of at least 10g of gluten (about the amount in 4-6 slices of wheat bread) for a minimum of 3 weeks. If possible, I would extend that two weeks to ensure valid testing.

      Thank you both for the replies. I decided to bring back gluten so I can do the blood test. Today is Day #2 of the Challenge. Yesterday I had about 3 slices of whole wheat bread and I woke up with urgent diarrhea this morning. It was orange, sandy and had the distinctive smell that I did not have when I was briefly gluten free. I don't know if it's a coincidence, but the brain fog is back and I feel very tired.

      @Jane02, I hear you about the kale and collard greens.  I don't do dairy and must eat green leafies, too, to get sufficient calcium.  I must be very careful because some calcium supplements are made from ground up crustacean shells.  When I was deficient in Vitamin D, I took high doses of Vitamin D to correct the deficiency quickly.  This is safe and nontoxic.  Vitamin D level should be above 70 nmol/L.  Lifeguards and indigenous Pacific Islanders typically have levels between 80-100 nmol/L.   Levels lower than this are based on amount needed to prevent disease like rickets and osteomalacia. We need more thiamine when we're physically ill, emotionally and mentally stressed, and if we exercise like an athlete or laborer.  We need more thiamine if we eat a diet high in simple carbohydrates.  For every 500 kcal of carbohydrates, we need 500-1000 mg more of thiamine to process the carbs into energy.  If there's insufficient thiamine the carbs get stored as fat.  Again, recommended levels set for thiamine are based on minimum amounts needed to prevent disease.  This is often not adequate for optimum health, nor sufficient for people with absorption problems such as Celiac disease.  Gluten free processed foods are not enriched with vitamins like their gluten containing counterparts.  Adding a B Complex and additional thiamine improves health for Celiacs.  Thiamine is safe and nontoxic even in high doses.  Thiamine helps the mitochondria in cells to function.  Thiamine interacts with each of the other B vitamins.  They are all water soluble and easily excreted if not needed.
