Molasses Cookies

Here's the recipe I use for molasses cookies. It was originally a gluten flour recipe and I rolled it out to make soft thick cookies. I haven't tried to roll it out with gluten-free flour, but we make drop cookies with raisins in them, and they would be great to frost and decorate.

1 C shortening

1 C sugar

1 C molasses

3 beaten eggs

1 C sour milk (milk with a Tbs of vinegar in it; I substitute rice milk with vinegar for casein free)

1 T (heaping) soda

3/4 tsp xanthan gum

Spices to suit: 2 tsp ginger, 1 tsp cinnamon, 1/2 tsp cloves, 1/2 tsp nutmeg

5 1/2 C gluten-free four (I use Bette Hagman's original formula with rice flour, potato starch and tapioca starch)

1/2 -1 C raisins (optional)

Mix, drop by spoonfuls on greased pan. Bake in moderate oven until just done, 350 degrees for 8-10 minutes.

These are really good, and other people can't tell that they are gluten-free.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute.
