Thank you so much....was nice to finally hear your voice as well.

 

I had a crappy couple of days of health with no apparent source -- but today is different -- I woke up with little pain and in a fantastic mood -- it's my birthday and the first one that I haven't felt like s$#& in over ten years!! 

 

It is also bike to work day -- since i have no official job yet -- I took a long route to see Mom and hit four "pit stops" - picked up several tshirts, sd bike route maps, water bottles, green tea, oranges, clif and mojo bars for the honey, chapstick, pencils and tube repair kits -- was having entirely too much fun...felt like a kid trick or treating on a bicycle....got side tracked so stopped back in home for an ice pack and will head out to see Mom now with another out of the way route to hit two more pit stops and pick up the $25 gift card from a somewhat nearby grocery store that I won at the recent celiac awareness tour.

 

Dinner will be grilled chicken salad with yummy fruits and vegies while I watch the new Star Trek -- boys will have popcorn and hubby is sampling the upscale glutenous concessions to give celiac son - that is a new employee there - a report so that said son can be a bit more animated about his opinion of the gluten options when asked by patrons.

Wacky schedules have led to dinner plans not at all going as planned lately. I was under the impression last night that the class I was covering was over sooner than it was, so my husband microwaved a pizza before I was home. We are trying the burgers and fries thing again tonight. I'll be home when he gets here, there is nothing lurking in the fridge and I am staying away from stores so I don't buy food I shouldn't. Really... we're having burgers tonight. I mean it this time.

Taking a break from all this work we've been doing and having friends over for dinner tonight. yaay!

 

Hot crab dip with crackers and crostini

Sherried stuffed mushrooms

Glazed pears, pecans and gorgonzola salad with champagne vinaigrette

Grilled filets with port wine and mushroom sauce 

Twice baked stuffed potatoes with bacon, shallots, cheddar, chives

Green beans (really, they are haricot verts, but Karen makes fun of me when I say that :P  )

and

Ski's Pineapple upside down cake with bourbon vanilla- spiked whipped cream

 

Plus wine, champagne, cocktails, whatevs they want.

 

Yup, I should have a nice histamine response going by 11PM  :ph34r:  LOL

Bahaha, I kept reading farther and farther going omg that is SO not on the list! Have fun. :D You're so lucky that we all live so far away or it would be a regular house party!

 

My husband is working until 10 tonight. I may just grill a chicken breast and tell him to bring a bagged salad home. That would involve a little cheating myself because I have a brand new bottle of Brianna's ranch to crack open and there isn't a snowball's chance in hell I'm having a salad without ranch if there is a bottle of it in the house I can have. Ranch is one of my very serious weaknesses.

Brianna's vinaigrette with the strawberry on the bottle, has become our favorite thanks to your suggestion. I try not to look at the other flavors. But I figure that, even if your salad has as many calories as a Big Mac is also has a lot more fiber and vitamins than one.

That one is good too! And the champagne one! Actually, I've never tried one I didn't like. :lol: I just got so excited when I found dressing without crap in it that I started buying all the "safe" ones.

I want it all...and I want it NOW!  just teasing...I do want it all and wish I could pop over....taking a break from studying...edited something out as a few of my classmates know I'm on here....lol

 

Off to hit several grocery stores as our fridge and cupboards are a bit bare -- well bare for our house -- and then take care of a problem at my Mom's -- not sure what is for dinner...probably food ;)

use round cake pans that have a bottom that is removable -- doh!  at least my kitchen smells like carmel this morning -- not going to be fun to clean out the oven -- will have to wait until later -- off to cram a bit more and play taxi driver.

i have been lurking from my phone mostly - here comes the onslaught of our kids and their families - #4 (& her cat, boyfriend and 2 roommates) left yesterday but will be back in 3 days.  #1 (& her husband and daughter & oh, Lord, i hope they didn't bring their animals) will be here sometime this afternoon.  #2 arrives saturday (& her husband, 2 sons, 2 dogs, 4 kittens, 2 fish) my sister (& her husband & 2 sons) arrive friday.  my bff (& her daughter, hopefully) is still putzing around with her game plan lolz.  and harry lives across the alley lolz maybe i'll make him mow the yard !  2 days of rain and the 'lawn' exploded.  i hope i don't lose the 2 yr old!!

 

last night (STOP ME THEY ARE ONLY FIVE BUCKS!!!) i made oysters again.  the fish girl at the food city and i are buds...

 

perch with tomato/onion topping and lemon parmesan cream sauce

-rice-

spinach in the oysters so *viola!* no veggie lolz

 

time to kick it into high.  this is going to require cake.  for breakfast.   ^_^

Happy but tired today, doing volunteering work, proving to myself I can work soon. Daughter fell asleep at 5.30, so expect to be up about 3 am. Life is never dull :)

There should be in mine. It's just that someone always thinks it is there for some nefarious purpose I guess and takes it out. The pineapple upside down cake my husband made for his mother on Mother's Day is still smoking on the bottom of the oven. It is entirely possible I handed him my old springform.  :ph34r:

 

So I am subbing today for a full day and my husband has to leave the house at 2:30 to go to work. That is the same time the afternoon class is over so I won't see him until he gets home at like 10:30. I have been trying all day to talk myself out of going to In N Out on my way home for my dinner. So far after 6 hours I have been unsuccessful. It isn't especially hot here today but I just am really feeling like a vanilla shake.

Um.... well.... its like this... your milkshake didn't make it home. It was delicious though!

 

Driving past the place on my way home is not at all conducive to making it home without fast food. :ph34r:  I guess it was a burger kind of day here too!

      Were the two tests done by the same lab? Do the tests have the same normal ranges?  Each test manufacturer uses their own system of units when reporting results. Have your results gone down at all since diagnosis?  Are you sure you’re gluten free? Do you eat at restaurants? I would recommend that you take a really good look at your gluten free diet. It took six years for me to get all my results down to the normal range (I was originally positive for TTG IgA, TTG IgG, DGP IgA, DGP IgG and EMA). I started just avoiding wheat, rye and barley.  My results came down but one was still high.  Then I made sure any processed foods were labeled gluten free.  My results came down more but one was stubbornly positive.  Then I would only eat processed foods if certified gluten free or from a manufacturer with an excellent reputation among those with celiac disease.  All my results were finally normal. My results went back up a little when I started doing a lot of baking with a reputable but not certified gluten free flour.  When I switched to certified gluten free flour my results went back down to normal.

      As a more generalized response to your question, I've been contacting Costco customer service for several Kirkland products because they are either unlabeled or contain the generic warning label about being packaged in a facility that handles all major food allergens. Each time I ask, my question is assigned to a specific person who researches it and emails me an actionable response that says, more or less, "no risk", "possible risk", or "definite risk". All of the answers have the caveat in the example below. Also, they recommend that you buy the product, submit the question ***with the lot # of your purchase*,** and then return it if you don't like the risk profile. This is because some products are made at different facilities with different risk profiles. Here is an example of a recent email response: "This is [name] with the Costco Member Service Resolutions Team. I am happy to let you know we got a reply back from our Kirkland Signature team. Here is their response: This item is gluten free. This information reflects the sender's knowledge on the date the information is being provided. Ingredients and processes are subject to change without notice. I hope this satisfies your inquiry about  [product name and stock #]. If you have a follow up question for me about this item please don’t hesitate to ask. I am happy to help! If I do not hear back from you within 48 hours I will consider this case closed. " Like pretty much every food source, you have to decide who you trust and then live with that. I tend to trust these responses because a person investigates it, their answers are detailed (not generic), and also because sometimes they say "nah, don't eat it". Hope this helps.

      There are thirteen essential vitamins:  eight B vitamins, four fat soluble vitamins, and Vitamin C.  They all work together.   If you are deficient in one, you are probably low in the other dozen.  Celiac Disease affects the absorption of all the vitamins, and the dozen or so essential minerals, as well.  Cobalamine Vitamin B12, needs Folate B9 and Pyridoxine B6 to function properly.  Pyridoxine B6 needs Riboflavin B2.  Vitamin C is needed to interact with B12 as well.  Thiamine B1 and Niacin B3 are also needed to provide the energy for these vitamins to function properly.  If one is also low in Folate and Pyridoxine, B12 Cobalamine is not going to be able to function properly and the body doesn't bother to absorb it.   Vitamin D is safe even in high doses.  Vitamin D3 should be supplemented.  Vitamin D2 is not as well utilized because it's synthetic, not a form the body can utilize easily.  Vitamin D must be activated by Thiamine Vitamin B1.  Insufficient Thiamine B1 will make one feel "dopey".  Thiamine is needed for brain function.  The brain uses as much energy just thinking as your muscles do while running a marathon.   Multivitamins do not contain sufficient amounts of essential vitamins to correct nutritional deficiencies.  Supplementing with ALL eight B vitamins, extra Thiamine (don't use the form thiamine mononitrate because it's not absorbed nor utilized well), Vitamin C and the four fat soluble vitamins will be more beneficial than just supplementing one or two vitamins by themselves. With sufficient amounts of essential vitamins, the immune system gets regulated and becomes less reactive to other things like pollen, molds and animal dander.  Sleep apnea is frequently found in Thiamine insufficiency.  The eight essential B vitamins are water soluble and easily excreted if not needed.  The B vitamins all work together.  Supplement them together.       i have been gluten free for about 2 yrs i had a ttg recently done my blood test was .7 higher then last time. i must be doing something wrong im still not in the normal range. What advice would anyone give?

      He should definitely have his vitamin D and Vitamin B12 checked.  I have celiac and i always felt tired, sometimes i described it as dopy.My vitamin D is always low at times extremely low which can affect you. But  I also did some research and contacted my doctor to see if she checked my Vitamin B12 and She said she didn’t check my vitamin B-12 because a wasn’t Anemic and the normal protocol is , if you are not Anemic they don’t test for B-12.  She had no problem doing the test for me and it came back super super deficient . So I was given a shot of B12 once a week for 4 weeks and I give myself 1 shot intramuscular once a month now for 18 years. Once your B12 is low it can take a long time to bring it back up and sustain it. I think it took about 6 months to get a decent number and about a year to get it right. I do get my Vitamin D checked but not yearly more like every other year because it is a more expensive test and I tend to always be low. I do take a vitamin D supplement but I would talk to your doctor before taking a supplement to make sure you don’t take too much especially if you are already taking a multivitamin. Because too much D can also have some bad side effects.  Celiacs tend to be able to take a higher dose due to our digestive and malabsorption issues but always talk to your doctor before taking. Other things could be making him feel extremely tired  like new allergies like pollens, animals, molds etc.. sleep apnea is a huge one( cause extreme fatigue) and some medications. Just other things he can have checked! Good luck
