Yeast, Gluten And Refined Sugar Free Bread With Heavy Bottom.

Hello,

I have been trying out new recipes of stuff I made up that is gluten, yeast and refined sugar free. The last few loaves of bread have had a heavy bottom and I was wondering if anyone had any advice.

I use the Cuisineart bread maker and I'm very happy with it, however I mix my breads in the kitchenaid mixer because I found the bread maker does not fix well. I have tried mixing longer and not mixing as much and I still get this "settlement" layer on the bottom.

Advice? Thank you so much!

What flours ? Are you using gums?

My first thought is try adding a bit more vinegar and baking soda for some more leavening.

yeah, it's hard to determine what's gone wrong without knowing what you're using as ingredients.

      I was instructed to take Algaecal as alternative to bisphosphonate drugs for osteoporosis. I did for 2 years, 1200 mg a day. My cholesterol spiked above normal during this time. We watched it and finally determined best to get a test to see if calcium was causing the spike. I have never had high cholesterol before. Could the celiac non absorption have caused calcium to build in my arteries? Now put on a statin to lower cholesterol (began at 180 went to 240 while on Alcagal). thanks
