Need Help With Birthday Cake Alternative

Does anyone have any ideas of what to have in place of a Birthday cake? I can't tolerate any of the mixes due to other allergies. No gluten, soy, dairy, nuts or corn. I would normally just bring something from home but this is for my Birthday. I usually just eat fruit for dessert but I don't know how well this would go over with the family.

I had had a box mix from Simply Organic for a carrot cake in my pantry. I made it after my most recent diagnosis so I'm sure it is nut and soy free, although I'm not sure on the corn or dairy status. I followed the pumpkin directions instead and added a bit extra in the way of spices and it was quite delicious.

Pie is always great! I make pie crust using recipe from the side of the box of lard (it's a blue box, snow-something or other brand) and it's perfect and flaky every time. (Disclaimer: I perfected gluten pie crusts at a very young age, apparently other people tell me pie crusts are hard?) I love fruit and pudding pies which I assume you can do with a dairy sub. It's summer, so a steaming hot berry pie with coconut ice cream also sounds positively divine.

I'm gonna stop now, I'm getting fat just thinking about all of this!

Can you do the So Delicious ice creams? You could have the expensive ice cream and they could have the regular dairy stuff. Add fruit if you like. We like to have vanilla or choc ice cream with fruit and maybe choc fudge sauce. Or a sorbet? They might have corn syrup. Maybe you could make your own? Lots of recipes for them on the internet. mix in the blender fruit & sugar and freeze. Could freeze in a muffin pan than each person could have thier own with more fruit on top?

Its so hot, who wants to heat up the kitchen. The good news this morning is the temps are going down. The bad news is the humidity is going up. :(

Would you be able to have pavlova? A gorgeous dessert comprised of meringue on the bottom, whipped cream or curd (or a fruit compote in your case) on top and then fresh berries. Stunning with blackberries especially. Delectable, easy and fruit-y.

Would you be willing to make a birthday cake from scratch? Gluten free goddess has some that fit your requirements, I believe. One of my favourites is her coconut cream layer cake (using coconut milk, no gluten or soy or corn). It is very good. Check out her website. Why not make gorgeous cupcakes using this (or another) recipe? They are fun and celebratory.

Why didn't I think of that? You could have stopped typing at pavlova. It is the most amazing, delectable, wonderful thing and ten times better than any old cake. The sort of thing where you take your first bite, close your eyes, sigh and wonder how you ever lived without knowing it exists.

I made a coconut flour cake with lemon, lime, and orange juice baked in, then I made a slow-simmered sauce with honey, the other half of the juice, and a lot of the zest on the stovetop and poured it over the top after slicing it. I let the cake cool but pour the sauce while it's still hot from the stove. Let that sit till the next day, you have some good cake! Made that for a friend one year who can't have chocolate.

Love, love, love Pavlova!!

A big favorite here is crustless pumpkin pie. You would need a sub for the dairy portion, but it is super easy to make . . . just follow the directions from the can of libby's and pour into a lightly greased pie pan and cook as directed. Whip cream (separate) for those that want it.

When I make it for Thanksgiving, I make a crusted pie (for everyone) and an uncrusted pie (for my daughter). My daughter's goes first because everyone wants to give up the extra calories . . . we all just want the filling anyway.

That being said . . . I would still vote for the pavlova

I have never, ever used cornstarch in Pavlova, actually. It's just a basic meringue with egg whites, sugar and cream of tartar (or a touch of vinegar).

If you have an old cookbook laying around you could just use the meringue recipe from it. Or take your pick from googling meringue or lemon meringue. I add a touch of red wine vinegar for the flavor, I'm not sure I'd be a fan of the apple cider although any vinegar should technically work. I also plop it into little individual ones instead of making one huge sticky thing I have to cut. It also means I can have some as soon as it's done cooking and no one will notice.

This is like the one I use. It is very simple and foolproof - it will be lovely! I usually make a raspberry coulis to drizzle on top which would be so nice for your birthday! :)

I know you cannot have the hazelnut cream - just disregard that. It will be fine without but will need some sort of sauce such as coulis. Sounds and looks fancy but is not! This is what the coulis will look like...

If you are willing to do one from scratch, the vanilla bean cake from the Spunky Coconut is awesome. I do it every year for my son's birthday. It is free of all those things you listed. I usually do the frosting from Enjoy Life chocolate chips which does have corn I believe, but I'll bet you can sub something else or change up the frosting.

I think Enjoy Life is always free of the top 8, so should be corn free.

So this isn't cake but it's very yummy and simple, since that's what I'm all about lol the Enjoy Life "chocolate chips" are quite yummy, allergen free. For my birthday present my best friend came over and made me chocolate covered strawberries!! She just melted the chocolate chips and dipped huge organic strawberries in it...oh my goodness, so yummy!

A bit late .. but something to try -

Wacky Cake - Gluten-free, dairy-free, egg-free, nut-free, corn-free, soy-free..

1 1/2 cup gluten-free flour*

3 Tbsp cocoa powder

1 cup sugar

1 tsp baking soda

1/2 tsp salt

1 1/4 tsp Guar gum

1 Tbsp apple cider vinegar

5 Tbsp oil

1 tsp vanilla

1 cup water

Preheat oven to 350

      This treatment looks promising. Its aim is to provoke immune tolerance of gluten, possibly curing the disease. It passed the phase 2 trial with flying colours, and I came across a post on Reddit by one of the study volunteers.       Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.
