  1. I just use balsamic vinegar and olive oil. It is my favorite and I never get sick of it. There are other salad dressing brands, like Annie;s, that are very good and many are gluten-free and listed as so on the bottle.
  2. I am happy to tell you that the vast majority of coffee is gluten-free......plain old coffee flavored coffee. The "cross re-activity" theory has no basis in reputable science. It seems to be making it's rounds on the internet but I wouldn't give that any credence. Coffee can be an irritant to the GI tract and if you are new to the diet, that might...
  3. People get sleepy after lunch from eating too many carbs. Most days for me I eat a large salad with many veggies and beans and then add a protein to it. You are vegetarian so it will prove more difficult. I usually add chicken or salmon or some other fish. I am the one who is running circles around all the sandwich eaters at work. By 3:00, they are running...
  4. Orange......I need your attention here. You have Celiac Disease and need to go gluten free. I'll tell you why........I have Celiac, Sjogren's, Hashi's and Reynaud's. These all can come with un-diagnosed Celiac Disease. Your immune system will continue to look for things to attack when you are eating gluten and shouldn't be. It all boils down to inflammation...
  5. Sorry that I didn't answer your question sooner! Diana answered the question well. Genova Labs is one of the best labs in the US for cutting edge testing. They were one of the first to do a comprehensive Celiac panel and did my testing for diagnosis 8 years ago. I still do my Celiac antibody testing through them. I never was tested for pancreatic deficiency...
  6. Thank you, kareng, for beating me to this common sense and correct information. Coffee cups that have glue which gets slightly into the drink? And edible at that! Yum! Starbuck's have a different policy here in the States because so many people are sue happy and the courts make it easy. When in Europe, as Kareng stated, they have many gluten-free...
  7. I know it can be much easier to use boxed stuff but cooking from scratch is almost a must for us and in the end, the food you make will be far tastier and you won't get sick. It does help tremendously if you like to cook.
  8. I have no issues with lupini beans or the flour they are made of. Just because someone has an allergic reaction to it, doesn't mean it's nasty stuff. As mamaw said, it's a great source of protein and has been in the Italian diet for quite awhile now. If it doesn't agree with you, then don't eat it. Simple. If you eat it without a problem...carry on!
  9. Peter explained it pretty well and you will learn which companies with shared facilites will work for you. This has nothing to do with sensitivity and more to do with the fact that you are new and have a long way to go with healing. Besides, and I will say this without any malice intended.....what are you doing eating mashed potatoes out of a box? You...
  10. I eat these chips with zero issues and I am ultra sensitive to gluten hits....miniscule ones. I have gotten horribly sick from crumbs so I consider these chips safe. They have an excellent certification policy and most companies do not go this far to ensure safety. You have in your signature that you are unable to tolerate grains and these contain corn...
  11. Most of the time it's not low levels of gluten in commercially prepared gluten-free products. If these products were so contaminated, none of us would ever heal. If you are fairly new to the diet, then your gut will not be nearly enough healed to eat gluten-free commercial goods. Most of them do not have many ingredients like their non-gluten-free counterparts...
  12. Your answer totally cracked me and made me laugh. You are correct about your observation and all I can say is that rude and obnoxious seem to always get more attention than nice and polite. It's the same on the news.....do they ever tell heartwarming stories as opposed to depressing violence that is always on the tube? It's rare. As for me, I don't...
  13. Another problem might be how many times do you eat out? If you eat out on a regular basis, then you could be cc'ing yourself repeatedly from many sources, especially if the restaurants are not higher end. Trained chefs are educated in cc issues and line cooks at most restaurants usually have no chef training. But as a Celiac, eating out any more than once...
  14. Yup, Kareng........pretty radical, I agree. There may be another AI problem brewing and it may have zero to do with gluten. Rheumatoid arthritis and thyroid disease will give a person painful joints. These 2 diseases are common with Celiac. Even without these 2 issues, you need to be gluten-free for a quite a while before symptoms subside. I did...
  15. They aren't meant for use to eat gluten when you have Celiac Disease. They are meant to aid in the breakdown of food when you have pancreatic insufficiency, which can be diagnosed with blood work. There are also prescription strength digestive enzymes so these have been around for awhile. They may even be used for those with pancreatic cancer to help break...
  16. Peer reviewed articles mean nothing in real life when it comes to supplements that actually help people. They replace the enzymes that are not being released by the pancreas due to damaged villi in the small intestines. Without them, I would not have recovered as well as I have. For full blown Celiac Disease and those with severe villi damage, they can...

OK...so now we have more information. If HR is backing you up on these appointments, then it is up to them to clarify that with your boss. If he is going against established policy, then it's his problem, not yours. I also understand the deal with time off. We get time off right away also (newer policy than in the days of old) BUT I am always conscientious...
  18. That's just a basic liability disclaimer which means nothing. Lots of companies say something to that affect. I used Fluoridex toothpaste for awhile and it is gluten free. I am very sensitive and never had a problem while I was using it.

Since you have a lot of time off because, after all, you work a state job, then why not make appointments on your days off, if you have them during the hours that appointments are usually made? Also why do you think the notion of putting your time into a job before you start requesting a lot of time off is ridiculous? I have been at my job a VERY long time...
  20. See how funny people can be when they consume wine? If wine had gluten, they would be foggy headed and cranky. Or is it the flouride that makes you foggy headed and cranky? And does this mean that if I drink more wine, will it prevent further cavities? How brilliant is it that they make wine with flouride now, instead of having to drink all that tap...
  21. I would go one step further on this and say that you do not need separate pots and pans, depending on what the material is they are made of. Stainless steel is not porous and should pose no problem for use by either gluten or non-gluten foods, as long as they cleaned well. Teflon, aluminum and cast iron (uncoated) should be dedicated to gluten free. This...
  22. I am happy to hear that you had such a good time on your cruise and ate so well without worry! It really makes a big difference when you don't have to be anal about everything involving food. There is really no excuse for not going on vacation as a Celiac because everyone, it seems, are accommodating us well. Money talks......

Thank you for heads up on the name change for Mermaids. I love Leicester Square on a Saturday night! Thank goodness they gave me the correct gluten-free fish and chips...that would have been a disaster. But you are right.....I am at the point where now I can tell just by looking at food whether it is gluten-free or not. The food was very good there and...
  24. I don't recall saying that Diana had Sjogren's but gave her the information she needed to decide what she should do. If you don't have dry mouth, then it's highly unlikely that it's Sjogren's. There is a known reason for the disease.....it's autoimmune and if you go long enough with undiagnosed Celiac, your autoimmune system never calms down and you start...
  25. When someone has as many food intolerances as you do, eating out is not going to happen. I am sorry you suffer as you do but soy is one of the biggies and soy is used in so many restaurant foods and I'm not talking the cheap places either. Gluten and dairy free as easy to do, as far as cc is concerned also, but adding soy, grains and legumes to the mix...
