I tried to let my dd eat at school. They did try to provide her a safe lunch, but it was a disaster. They only served her a hot dog weiner or a hamburger patty, fries, and fruit. They did change gloves before serving her food, but I don't think it was ever safe. I send her lunch every day and keep snacks up there. I also asked the teacher to call me ASAP... -

Yes, she can be happy and still have celiac. She could be a silent celiac, which means she really has no outward symptoms, but she isn't absorbing enough nutrients to grow properly. She is also very young and testing in children that young is not very accurate. You would probably be better off just testing yourself and putting her on the gluten-free diet... -

Mine always sink down in the middle, plus they are thin. How do I fix that? They are done all the way and my oven works fine. I have a feeling it happens because of a serious lack of gluten! Any ideas to fix this? -
I get mine from an Asian food store. Along with rice flour, tapioca starch and potato starch. It is alot cheaper there.

If you cheat every week or two, you may as well forget about being gluten-free. Gluten in any amount does damage to your intestines whether you get sick or not. When you consume gluten, you are putting yourself at increased risk of cancer, other autoimmune disorders, and other stuff. I don't know about the salads at work. Unless you are picking croutons... -

My oldest dd throws up when she is glutened. She gets really bad diarrhea, too. One of my other dd's is usually constipated, but has diarrhea when glutened. Is your dd only having these symptoms when glutened, or is it all the time? If it is all the time, you shoucl look at other foods as the problem. If you do get the path report and it says no celiac, remember that the GI is supposed to take somwhere around 10 samples, but they usually only take 2-3. So he may have hit a spot that didn't have much damage. A good GI takes several samples. Keep us updated! I hope you are feeling better today! -

My dd#4 wasn't on the charts a yr ago. She has been gluten-free for about 1 yr and she is now in the 25%-50% range and doing great. It will happen. just give it time. I was getting exactly what you describe for a few months before I was diagnosed. They lasted a few months after I went gluten-free, and now they are gone. I assume they are related to Celiac, but I am not sure since I have probably had celiac most of my life and these didn't show up until just before i was diagnosed. -

There is no way in this world I would eat that! Here in the US, they are pushing for a limit of 20 ppm on foods labeled gluten-free. Some think that is too much! I wouldn't give it to anywone with Celiac. It just isn't worth it. -
