  3. I have always been heavy, then suddenly lost 60 pounds for no apparent reason- Celiac Disease. Since going gluten free I've managed to gain everything back even though I've tried to keep it off. I'm thinking my body is just trying not to starve to death.......or I"m an incredibly good cook.
  4. I have had Amy's rice crust pizza but I add toppings to it. There is a frozen Gillians pizza dough which is great to have around for a kind of quick meal. My back hurts a lot and I am tired quite often , I guess it takes a while to get our bodies back to "normal" what ever that is.
  5. After practicing a while I think we eat pretty normal meals, I really don't like gluten-free spagetti, but lasagna noodles are very good. I don't cook anything that I can't eat, but the family likes everything that I make. I still would like to make a good onion ring......I'll keep working on it. But your family really has to at least attempt to be helpful...

  7. Another good "cracker " is shredded parmesian cheese on a silpat in little fairly thin mounds - bake them at 400 for about 10 min or until they look browned on the edges. Take them out cool and they taste great.
  8. In the freezer section there is a bread called Ryeless Rye- has caraway seeds in it and toasted it tastes really good.

    I really enjoy left overs after Thanksgiving- we always go to relatives houses I feel much better just bringing what I know I can eat.   13. I found that tylenol pm keeps me awake- kind of hyper actually.....strange for me I'm never hyper.
  14. I was diagnosed with osteoperosis about the same time as Celiac , I take Fosomax. I am now one and onehalf inches shorter than I used to be. At night I move around a lot because if one side doesn't hurt the other does. It just keeps getting better and better......

  18. The people on both cruises I have been on were very helpful-, if it assigned seating it is especially nice because the waiters know you after the first day. I avoided buffets, for obvious reasons, and did have a lot of steak and potatoes. Sometimes that seems to be my life in a restaurant- but if there was anything they could do for you they would.   19. I really miss my blue cheese on a salad or with an apple for a snack. I think gorgonzola and blue cheese are off limits.

Tonight we had roasted vegetables and fried chicken.....Cut up your favorite root vegetables-carrots, parsnips(very tasty) onions sweet potatoes and potatoes, cut into bite size pieces lightly coat with olive oil salt and pepper.   21. I have been overweight my entire life...losing 60 pounds in less than 4 months without trying is what brought me to gluten-free living. Since diagnosis I have gained all that back and have tried and tried to at first to just keep it off now- lose it all again. Nothing seems to work.

We recently went on a cruise on Royal Carribian and they were excellent in providing gluten-free foods for me-they recognized me at every meal and brought gluten-free bread and made sure I knew what I could and could not have.
