  1. I recently went to a party and went prepared, carrying a purse filled with goodies. Low and behold the buffet had nothing that I could eat on it, but there was also nothing that the girl across the table could eat either-a fellow Celiac, newly diagnosed . I got to share my goodies... and had a great time.
  2. I've tried onion rings before and they were a disaster--thanks I love onion rings.
  3. HI-I was just watching the food network and they were making whoopie pies, for the filling they used marshmallow creme and confectioners sugar. Of course this is not a recipe, but I thought that it would create much the same taste as twinkie filling. I haven't tried it yet but now I need to get the pan and get started.
  4. I'm getting ready to go to a function as I write-I've got my purse full of whatever I'll need for the evening because it is one of my husbands students, no one I know....so I'm just going to be ready to have my purse goodies to eat...otherwise I get cranky and am no fun to be around.

  6. In February of 2004 I felt so bad that I called my daughter at work to have her take me to the doctor. I was doubled over in pain, was sent to emergency room. I had a very bad case of kidneystones, they put a stent in to clear the blockage and I went septic..6 pints of blood and 4 days in the intensive care unit I found out that I was going to have a hystorectomy...
  7. It would be nice to stop at Cinabon instead of just smelling it as I walk by. Actually, not having to worry about medications containing gluten or if the friend that fixed dinner used the wrong soy sauce ,wondering where you went wrong because your blood test came back high again. I don't mind not using gluten -it's just that it is hidden in so many places...
  8. Bean Soup Soak a bag of small white beans over night. Drain , in a pan saute an onion, and about 3 carrots chopped in butter. Cut up a piece of ham and put in with the vegetables add beans and enough chicken broth to cover , also some salt and pepper and a bay leaf. Boil until the beans are soft. I use a had held blender and smash everything until blended...
  9. Parmesian cheese shredded and put on a silpat in a 400 degree oven for about 5 minutes until brown around the edges. When cooled they are great .
  10. I tried mixing my own once and wasn't that good- could be me. I have since then tried Bob's Red Mill and Pam's baking mix . I think it is mostly because I just don't take the time to mix my own. But they seem to work well when doing a quick cook.
  11. In Provincetown on Cape Cod there is a great restaurant that we've eaten in for years....then Gluten Struck. Their BBQ Pepper Shrimp was my favorite. They sell a recipe book so I bought one to see if I could do it on my own only gluten-free. I just thought I'd share their recipe so you (that like a great shrimp dish could enjoy.) 1Tbl. pureed garlic...

  13. I recently had a Jennies coconut macaroon...$.75 They also have a carob one. gluten-free DF and it is pretty big very moist. Individually wrapped so I'm not tempted to eat a box....
  14. There is a frozen pizza dough , Gillians, I believe. It is great to have on hand when everyone else would like a pizza. The key is massive toppings.

I was at work Thursday evening (grocery store) and a coworker directed a lady to me....anyway, she has a 2 year old grandson , she wanted to make sure she had safe treats for him when he came to visit. She was so supportive and interested in making sure he would be safe and not feel left out. It just reminded me of how many people try so hard to make...

  17. Hi, I'm a biopsied(?) Celiac Spru person. My sister has had a blood test that came out negative, but she exhibits sooooo many signs of Celiac that I keep encouraging her to go gluten free just so she could feel better. So far I have not succeeded. I think that to give up gluten, etc. is hard enough without a snobery attached as to whether or not you...

  19. ok, this is way out there perhaps but have any of you heard of Lame Advertisement juice? My sister started me on it and it does make my joints feel better. Perhaps I'm just thinking it does....but it does seem to help. It is mostly different fruit juices and is expensive but I like it. Well, since I do not sell this Lame Advertisement I just use...
  20. What I've learned at large family functions is- take what you want to eat with you. Thanksgiving last year I took a lot of my favorite foods, and some dessert and it was fine. Christmas I was not prepared and miserable. It was my first experience with the holidays. Everyone means well, but until they have to live with the disease they will never understand...
  21. I went nuts when we started -bought all the flours mixes -funny thing was I really didn't eat a lot of bread, etc. before I was diagnosed. Now I mostly use plain meat , vegetables and fruit and add gluten-free flour when needed to thicken etc. For special occasions I do like to experiment with all my neat gluten-free stuff.
  22. It is great to feel so much better- I couldn't lift a 3 pound weight , I barely made it through a day of work and then just sat down and did nothing when I got home. My family had had a big enough scare with my health that going gluten free seemed to be minor . When you put things in perspective life could be a whole lot worse. My numbers seem to be...
