  1. It's a good book. Daughter also has a banana allergy. Apparently that's getting common. We were just in the ER today. She may have chipped a bone but we have to wait till the swelling is down to see. Anyway... I was ticking off all her allergies...7 in all...and the lady said, "What? No shellfish?" The one thing she isn't allergic to is something...
  2. I have the GLUTEN-FREE Celebrations cookbook by Carol Fenster. On page 202 there is a recipe for crackers using a small amount of grated onion. I have made these several times. I can never quite get them as small as she says to. So I get 10 crackers instead of 20 and because they are bigger they do not get really crisp. Instead they make nice bread-like...
  3. My daughter and I love this stuff! Open Original Shared Link She likes the pasta and chreese, although I don't care for it too much. Tastes too much like mustard to me. I do like the nacho chreese sauce though. Can't tell it from the real thing! For pasta that's close to mac and cheese I like: Open Original Shared Link The Say Cheez. Very...
  4. I do this too, but instead of turning off the heat I turn it down as low as possible. With my gas stove I could get a really low flame. I can't do that with the electric stove so I might need to eat a bit more water. As for the soup, you must cook the rice first and then add it to the soup. I was given this tip by a chef. If you put the rice straight...
  5. One favorite I used to make but can't now due to additional food allergies was a hit with everyone who tried it. It was never the same twice because I often used leftovers. Start with some largish shapes of pasta and cook until just tender. Be sure not to cook too much. Drain well and put in casserole. Add in some cooked ground beef or any other cooked...
  6. I sometimes make baked potatoes then top them with a sausage gravy. I used to use the Road's End until I realized that Tamari was soy. Doh! We have additional food allergies so I have to get creative with food.
  7. Yes, I've had reactions two days later. A day later. Sometimes three days later. For me, dairy causes mainly stomach problems.
  8. I was told by several Drs. that neither one was any better. But to call our insurance first to make sure that they did not cover one and not the other. One Dr. also said since her dad didn't believe in allergies, for us, the prick test would be best because hopefully once he saw the swelling he'd believe that she was in fact suffering. Alas, his reaction...
  9. My daughter is allergic to soy. She does not have the life threatening kind of allergy and in her case the reaction will vary. She once got stomach pains while eating soy containing crackers. But usually her symptoms are skin rashes and nosebleeds. Took me a while to figure out that the nosebleeds were related to soy and peanuts. She usually has a bleed...
  10. If you like Spaghetti-Os you'll like this. Tastes just the same. But more expensive! I keep a case of this onhand for those times when I need a super quick meal for my daughter.
  11. Here's a link that could explain things better than I could: Open Original Shared Link As you can see, the kosher salt is in larger pieces. I've seen this used in recipes where you encrust a piece of meat in it then break the salt away to serve. I should think if you tried regular salt for this you'd wind up with an overly salty dish. That being...
  12. AFAIK I don't have gluten problems but I do have food allergies and that is a symptom. Eggs are my worst allergy and if I eat an egg you'd think there was an ocean crashing and falling in there. Luckily most of the time this happens it's night and I'm home in bed so nobody else has to hear it.
  13. We used to have one here that was supposedly gluten free, but I gave up on them after daughter got sick several times from eating their products. You can still buy those products in this area, but I think the restaurant is no longer. Found out the woman who runs the place had lied to us about one of their baked goods, telling us there were no eggs in it...
  14. I don't like garlic so I just leave it out of my recipes. If it's something Italian, I use Italian seasoning, making sure to buy a brand that doesn't include garlic. Last summer I bought some green onion sets that were garlic flavored. My daughter loved them. I didn't, because they did taste of garlic. I don't know if those would work for you or not...
  15. I wouldn't advise doing this. First it might not be accurate. Second, if there were a life threatening reaction, you'd be too far from medical attention. My daughter and I had the RAST test done. That's a blood test. Doesn't make you sick or itchy if you do happen to be allergic to someone.
  16. White rice is just white rice. Shouldn't have anything added to it so it should be gluten free. If yours is getting mushy you might be adding too much water to it and possibly cooking it for too long. I do not have a problem with mushy rice and I am not that particular to brand. I usually just buy whatever is cheapest. I've also bought the pre-cooked...
  17. I bought it some years ago and thought it was good but it was before we knew of our food allergies. I can't recall the ingredients. And yeah, I have the same last name. Bought it to give to all the relatives, although it seems we are not related to the people who make it.
  18. Although I don't have celiac, I do have food allergies. I am allergic to dairy, extremely allergic to eggs and can't have soy because of a thyroid problem. So croutons are off of my list of things to eat because all that I've seen contain one or more of those things. Although I must say I do not like them to begin with. Ick! We dined tonight at a...
  19. We eat them with no problems.
  20. I can no longer use my old recipe due to food allergies. I used to use a cream of mushroom soup or a white sauce, sometimes adding cheese. But now we can't have dairy or soy and the white sauce I've come up with using rice milk or Vance's Dari Replacer have been too thin and sweet tasting. So what I do is cook the noodles until just under done. I then...
  21. Ener-G and Enjoy Life Foods are totally gluten free.
  22. My daughter isn't thrilled with them. I've bought them twice for holiday dinners at the request of my mom. I think it would have been easier if we'd just skipped all the rolls but since others insisted on rolls, it is hard for my daughter to sit and watch them eat rolls with none for her. Both times she merely picked at a roll, eating little more than...
  23. I get it at the health food store. If you have a Magic Bullet or a coffee grinder, you can make your own using the whole seeds.
  24. For years I thought I was just lactose intolerant. That's what the Dr. told me. I stopped drinking milk and felt better. I thought I could handle a little milk cooked in something. Thought I could eat cheese. Then at age 46 I had an allergy test done and found out I was allergic to milk and 2 other foods. I can not have any dairy at all now. Not even...
  25. I too agree on the cooking time being too long. And I find with the gluten free pastas it's best to slightly undercook. I test them frequently, taking one out, running it under cold water then tasting it. I stop the cooking when it's still slightly chewy.
