The diabetes certainly would complicate things. Keep in mind if her blood sugar is too high or too low she will be hungry. As someone else already said, feeding her protein and fat with meals is essential to keeping full for longer. Maltodextrin is not gluten. However... McDonald's fries are a much debated topic here. Apparently the oil used to fry them in at some point contained wheat and milk. I know of two kinds of licorice that are gluten-free. Running Rabbit is one and it actually has the licorice flavor even in the cherry and raspberry flavors. That's one my daughter will not eat at all. She goes like their plain rice bread and she loves the one with the seeds and fruit in it. -
I would beware of those. Often there is a gravy or sauce on the meat or they use flour to brown the outside. Some hams have gluten in them. That being said if those were the only choices of meats, I'd go for the ham over the others. My daughter only has an allergy though and not celiac.

I used to eat a lot of soy. Tiger's Milk bars, roasted soy nuts, canned soybeans, vegetarian burgers and even Edamame.
