  1. Also, do not replace liquid sweeteners in gluten free recipes with granulated sugar- sometimes it will work, most of the time it will not. Keep in mind that batters are not going to behave the way you're used to, and you can't use the look/ consistency of the batter as a gauge the way you used to do either.
  2. Ahhhh, I see. In that case coconut flour and almond flour are good choices. Also, try looking up recipes made with almond butter, very easy and it usually turns out amazing. Very good brownie recipe using almond butter on Elana's pantry website.
  3. No, I've just read people say they've used those rice paper rolls to make baklava. Always a good idea!

  9. With all of the other restrictions, both self-imposed and physically necessary, that I have to deal with, I must confess that I wake up every day and tell myself 'At least I still have dairy. At least I still have dairy.' So I had whole plain organic yogurt with spiced fried apples for breakfast! Mmmmm.....
  10. I made cheeseburger chowder. Grass-fed beef, onions, potatos, pan-roasted cauliflower, scallions, milk, sharp/extra sharp cheddar & romano, and a whole pound of sour cream. Not for the the faint (or clogged!) of heart hahahahaha!!! Ooooooh so tasty, especially in such cold weather.

  15. Well, I loved the Kettle Cuisine soups in the freezer, but apparently my local stores don't CARRY them anymore.....
  16. You could also try making a cake with a different set of flours. There are gluten free cake mixes out there. You can also bake from scratch gluten free with rice flour, sorghum flour, all kinds of flours. This will result in a cake more like what you're used to. It's entirely possible you're just intolerant to coconut......
  17. On top of Celiac, I can't have peanuts, and have now gone entirely grain and sugar free in an attempt to control some pretty intense system-wide inflammation. Also, a lovely gift from my ex-boyfriend before I broke up with him left me with cold sores, which I never got before, so now I have to observe the herpes diet if I don't want outbreaks. Which means...

  21. Your taste buds aren't ruined, and no gluten doesn't ruin taste buds! LOL! I thought the soup was kinda funky too, I mean it's edible, but I think my standards have been raised a bit above that at this point....
  22. It is likely with this diet change that the prilosec will become unnecessary, just something to keep in mind. Sounds like you are on the right track!
  23. Couple of things about this recipe- I have never seen a coconut flour recipe call for that many eggs in relation to that much coconut flour. Also, it's telling you to use honey/maple syrup for a reason. If you are absolutely insistent on using regular sugar, I would make a simple syrup with it first, thereby turning your sugar into a liquid sweetener...
