I have read before that the casein and soy proteins are similar to gluten. Maybe casein and soy are sometimes confused with gluten in people with celiac disease, and the antibodies attack the intestinal wall because the protein is mistaken for gluten? I don't believe that this would happen to everyone with celiac disease, but maybe to those people who have... -

I'm not really sure... I'm guessing that casein and soy could cause intestinal damage; however, I am not sure if intestinal damage from soy or casein is common. I would suggest getting allergy and intolerance tests to see if you are allergic/intolernce to certain foods. -

Many people with celiac disease have an intolerance to lactose until their villi heal. The enzyme that digests lactose is located in the tips of the villi. Therefore, when the villi are damaged, some lactose can go undigested and cause problems. Maybe try eliminating dairy for awhile and see how you feel. You could also try making fruit smoothies with rice or almond milk. Smoothies can be quite similar to ice cream if they are made the right way. Just add more fruit! I have read that casein, the milk protein and soy can cause a "flattened or blunted intestinal surface". I read this on page 41 of Breaking the Vicious Cycle by Elaine Gottschall. -

I found the bouillon at Sobey's, my local grocery store. I find that the larger grocery stores tend to carry the most products. If you cannot find McCormick bouillon, maybe try and see if you can find Imagine chicken broth. Imagine chicken broth could replace the bouillon in my recipes. I have had similar problems when eating at someone else's house. In the past, I was worried about hurting people's feelings if I didn't eat their food and then I got sick and was sick for about a week. I haven't made scalloped potatoes in a long time, I'm not even sure if I have ever made them! I will look for a good recipe and I will post it here. I think that one of my gluten-free cookbooks has a recipe.

I got the salad dressing at Sobey's. Do you have a Sobey's in your area? If not, Zares may sell them. Try and look in the larger stores. I find that the smaller grocery stores are less likely to sell special products.
