  17. IMHO you are playing with fire by eating sourdough bread. Being sourdough does not mean it becomes gluten free.
  18. Celiac is autoimmune and genetic. It does usually require a triggering event such as a severe stress, physical or mental, or an illness. Celiac could perhaps be triggered by being made ill by a severe mold infection but but I don't think it would be caused by eating moldy bread a few times.
