ARCHIVED Gluten Free Hot Dog Buns
cruelshoes replied to JennyC's topic in Gluten-Free Foods, Products, Shopping & Medications
The absolute best hot dog and hamburger bun recipe I have tried is from the book "Easy Gluten Free Baking" (Open Original Shared Link) by Elizabeth Barbone. They are soft, not crumbly and hold up very well. We use them for hot dogs, hamburgers and sub sandwiches. They are even good a few days later without freezing. The sandwich bread recipe in this book... -
ARCHIVED Grinder That Was Used To Grind Wheat
cruelshoes posted a topic in Gluten-Free Recipes & Cooking Tips
Pre-celiac disease, I had a years supply of wheat stored. I gave it all away to church members whan I was diagnosed. One thing I have not been able to part with is my electric wheat grinder. It is a Whisper Mill, and I paid $200 for it. I used it A LOT to grind wheat as I was really into baking my own bread with freshly ground whole wheat flour. In retrospect... -
Pre-celiac disease diagnosis, I was very good at keeping my 72-hour kit up to date. Here in the Seattle area, we are always being told about the catastrophic earthquake that is sure to come at any moment. I have been remiss in updating my foodstuffs in my kit. I am interested in what you keep in yours. Needs to be shelf stable and stay good for 6 months...

ARCHIVED Annatto Coloring
cruelshoes replied to jmd3's topic in Gluten-Free Foods, Products, Shopping & Medications
Annatto is a gluten-free ingredient. Open Original Shared Link Some of the older texts/sources do say it is not gluten-free, but this is untrue. -
ARCHIVED Anyone Ever Cheat On This Diet?
cruelshoes replied to sillyyak's topic in Coping with Celiac Disease
I would respectfully disagree on your statement above. Many individuals have their bloodwork/biopsies performed by physicians that are untrained or ill-informed on how to perform them. General consensus is that 10 - 12 samples should be taken when performing a biopsy to get a true picture of ones condition. I know many people who had only 1 - 2 samples... -
ARCHIVED So Impatient For Signs Of Improvement
cruelshoes replied to Boffin's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I use rice milk quite regularly when I cook for my SIL who is lactose intollerant. It does work quite well in all the recipes I have tried. One word of caution, however. Not all rice milks are gluten-free. At least one of the rice milks that I know of uses barley in its processing. Yes, it does seem sometimes that it is taking FOREVER to get better... -
ARCHIVED New To All Of This...
cruelshoes replied to SafeSpuds's topic in Parents, Friends and Loved Ones of Celiacs
When I first went gluten-free, it took me 3 days before I started to notice any difference at all. It took a good 3 months before my symptoms were mostly gone. Additionally, it sometimes seemed that I would slide backwards in my healing occasionally, and then start getting better again. I don't believe it was gluten exposure but, rather, my body trying... -
ARCHIVED Glutened From Miniscule Amount?
cruelshoes replied to geelet's topic in Coping with Celiac Disease
It has been my experience that the longer I am gluten-free, the less gluten it takes for me to get a reaction. I know that many others have experienced the same. How's that for a rude joke - the more careful I am, the less it takes to make me sick. No fair! Early on after my diagnosis, I used the communal toaster at work to toast my gluten-free... -
I made that same face when I had a burger with a bun I DIDN'T HAVE TO BAKE at Disneyland a year ago. The simplest things can be so satisfying.....

ARCHIVED Early Introduction To Gluten ! !
cruelshoes replied to irish daveyboy's topic in Parents, Friends and Loved Ones of Celiacs
We all have to make the best choice for our kids for our situation based on the information that is available at the time. It was not my intention to say that you did something wrong. I hope you are not trying to say that I did something wrong in how I chose to introduce gluten to our baby. We did as much research as we could and discussed it with the... -
Keep up with that SAP training. At my employer, they are always screaming for people with SAP experience. The SAP developers especially make some major cash! I have been working with it for 6 months or so, and hope it will serve me well sometime down the road. I had a horrible boss a few years ago. She micromanaged me, and tracked my arrival/departure...

ARCHIVED Chebe No-frills Mix?
cruelshoes replied to cruelshoes's topic in Gluten-Free Recipes & Cooking Tips
I ordered it directly from the Chebe website at Open Original Shared Link It is so much cheaper than buying the packages and I am such a cheapskate. Thank you so much for measuring that out for me. I can't wait until it gets here to start making me some Chebe! Who know I could get so excited about bread? The recipe you mentioned above sounds great... -
ARCHIVED Chebe-like Bread Without The Mix?
cruelshoes replied to ewalton's topic in Gluten-Free Recipes & Cooking Tips
I have this recipe, but have not tried it yet. I think it may be better used for chebe rolls than a wrapper like you want, though. Pao de Queijo Also known as CHEBE BREAD Preheat oven to 375 -
ARCHIVED New To celiac disease...recommendations For Convenience Foods?
cruelshoes replied to LouiesMom's topic in Parents, Friends and Loved Ones of Celiacs
Some good suggestions above. I will also add Dinty Moore Beef Stew and Hormel and Stagg Chili (Read the label because not all of them are gluten-free). Just a caution - no matter what list of safe foods anyone provides to you, you have to check the label EVERY TIME you buy something. Product formulations change all the time, and what is safe today... -
ARCHIVED How Do You Handle The Food At Your Support Group/rock Events?
cruelshoes posted a topic in Introduce Yourself / Share Stuff
I think I have made the decision to start a ROCK group. I want my son to be able to share food and fun with other celiac disease kids. Now I am thinking ahead to the food aspect. I want all the kids to be able to eat all the food without worry about accidental glutening or CC. I keep a totally gluten-free house, but many do not. How do any of you that... -
ARCHIVED Early Introduction To Gluten ! !
cruelshoes replied to irish daveyboy's topic in Parents, Friends and Loved Ones of Celiacs
Yes, it certaily does seem that our 2 sources are contradicting one another. The date on yours is 2003, and the date on the AAP study I cited above is 2005, so perhaps some additional study data was available for the AAP one. I think more research is definitely in order on the matter. I feel good about the choice we made with our current baby. Our pediatrician... -
ARCHIVED Can Someone Please Calm My Mind?
cruelshoes replied to lorka150's topic in Coping with Celiac Disease
Hi, Lorka! I'm sure you have already thought of these things, but how is your fiber intake? Soluble fiber acts like a bulking agent and absorbs water from the colon into stool making it easier to pass. Insoluble fiber can be abrasive to the intestinal walls (that's what it is supposed to do, right?). Are you eating things a lot of that? Hope you are... -
ARCHIVED Now What?
cruelshoes replied to Lisa Joy's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Lisa - Ursa Major is correct. You must continue to eat gluten until the endoscopy is complete if you choose to go that route. Otherwise you risk skewed test results, and may never get the answers you need. From all the research I have done, a false positive on the bloodwork is very rare. If your bloodwork says you have celiac disease, you very likely... -
ARCHIVED Early Introduction To Gluten ! !
cruelshoes replied to irish daveyboy's topic in Parents, Friends and Loved Ones of Celiacs
According to the American Academy of Pediatrics, introducing gluten prior to 3 months or after 7 months increases a baby's chance of developing celiac disease. Open Original Shared Link Here is one of the key points of the study: -
We have tried them. I seem to be able to tolerate them, but my son cannot.

ARCHIVED Can Being Glutened Cause Horrible Problems Passing Gas?
cruelshoes replied to Dianne W.'s topic in Parents, Friends and Loved Ones of Celiacs
Gas is definitely one of my son's symptoms. We call him the "gas man" when he gets glutened. It is unpleasant for all of us when that happens. -
ARCHIVED Biopsy Needed If Blood Test Is +?
cruelshoes replied to Tripletmomma2000's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
A positive diagnosis of celiac disease generally follows this course: 1 - positive results on the bloodwork 2 - positive results on an endoscopy (generally considered the gold standard for diagnosis) 3 - improvement in symptoms on a gluten-free diet Some people have a different combination of the three. Most MD's will generally not diagnose celiac... -
ARCHIVED La Tortilla Factory
cruelshoes replied to ebrbetty's topic in Gluten-Free Foods, Products, Shopping & Medications
We ordered both the dark Teff and Ivory Teff ones from gluten free.com. They do hold together very well, but I was not wild about the taste. Edible, but nothing to write home about. Not worh the extra expense IMO. They are somewhat larger than I wanted, too, and it was almost too much for me to eat. I know several people that are just bonkers over them... -
ARCHIVED What Do You Think Triggered Celiac For You?
cruelshoes replied to a topic in Related Issues & Disorders
He did not have a trigger that we know of. We had him tested after I was diagnosed because he is my first degree relative. He had no outward symptom other than not growing for a year. It really demonstrated to me the importance of having all first deree relatives tested, regardless of symptoms. My older daughter was negative, and we have not tested our...
