I have never tried the GFP mix, but I do not find Pamela's mix sweet at all. I store it in the cupboard, not the freezer,but I'm sure you could store it that way to keep it longer. -
No way - I would never eat Olestra. One of its side effects is anal leakage. Nooooo thank you! Good thing you read the label!

Sorry you are going through this rough patch. I can imagine I would be nervous too. If gluten has been creeping back into your diet over the years, your doctor should be able to tell from a blood test. If your antibodies are coming back positive, you will know that you have more detective work to do to figure out where it is coming from. It is not uncommon...

My current favorite gluten-free cookbooks are Easy Gluten Free Baking by Elizabeth Barbone and Gluten Free Baking Classics by Annalise G. Roberts. McDonalds Fries are gluten free. There is a small amount of wheat in the beginning par-fry process, but there is no gluten in the end product. They have been tested by a third party and they are gluten-free. -

I have subbed the Pamela's mix for bisquick in the imposible cheeseburger pie recipe from the Bisquick website lots of times. I just use it out 1:1 for the bisquick component of the recipe. It works great. -

My son and I are on the very sensitive side, and we have eaten this product without issues. I had to start hiding the bag because my son would scarf the whole thing! He loves it with yogurt for breakfast. I don't eat it to much because it is pretty high in fat, but it is really, really good. -

Please be very careful with Mrs. Mays. Some of the older stock had barley in the rice malt. My son and I both got sick from it. I called Mrs. Mays on April 30. She said that since 11/06, all their products are gluten free. The packaging has yet to be updated. The rice malt did have gluten (barley) in it before then. I believe this to be true for many people. Off and on, I spent a total of 4 years getting fed daily through an IV between the time my symptoms showed up at age 16 to when I was diagnosed at 34. Yes, the diet is a hard adjustment. What are you missing so badly that you are willing risk getting cancer to get it (Sorry if that sounds harsh)? I venture a guess that there is a gluten-free equivalent to most of it. It takes a good 6 months to get into the swing of the diet and have it not seem so overwhelming. We raise chickens. They love cracked corn, be we have to be careful not to give them too much because it is a "hot" food for them. Hot meaning that it raises their metabolism and increases their body heat. They can overheat if given too much, especially in the summer. Perhaps this is the same effect that your Uncle was talking about. -

That is a good question. When I was in high school, we had to decide on a dish to make and make up a grocery list for the teacher to shop for.
