ARCHIVED Stress And Food Intolerances?
jenngolightly replied to India's topic in Coping with Celiac Disease
Homemade sausage! I never thought of that. I've been singing the blues since I gave up sausage. Do you have a recipe? -
ARCHIVED How Long Until My Symptoms Go Away?
jenngolightly replied to CourtneyLee's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
It also depends on if you find that you are also intolerant to other foods. Many of us, after giving up gluten, find out that we also can't eat other things like dairy or soy or corn. You should absolutely stay away from dairy right now since your gut is healing. You will probably be able to eat dairy again when your villi get back to normal. Dairy is digested... -
ARCHIVED Stress And Food Intolerances?
jenngolightly replied to India's topic in Coping with Celiac Disease
Sausages have a lot of ingredients that could trigger icky feelings - sugar, corn syrup, soy, corn... You'll have to check your ingredients to see what the sausage has in it and what could have set off your problems. Many people develop problems with corn or soy after going gluten free. I MISS SAUSAGE! -
ARCHIVED Sample Menus Please

You said that finding things to eat is getting harder and harder? Does that mean you are finding that you are intolerant to more and more foods? If so, you could try an elimination diet and start with a few foods you know you can eat and work up from there. I have a lot of sensitivities, too. I started the Specific Carb Diet last May and feel SO much better... -
ARCHIVED Gluten Intolerance Or Celiacs Disease; Does It Matter?
jenngolightly replied to Slovis's topic in Coping with Celiac Disease
Cautionary tale: I took my daughter to a dermatologist recently (not Celiac related). His diagnosis was a "rash" and prescribed a cream. He didn't want to give her a confirmed diagnosis of psoriasis or eczema because it would go in her permanent medical records and he said that could have ramifications on her insurance when she got older. What those ramifications... -
Although I'm a big fan of electronics, gadgets, and software, I found it easiest to do it the old fashioned way and each night before I go to bed I write down everything I ate that day and what kind of "off" symptoms I had - bloating, eczema, gas, headache, etc. Patterns emerge. Anytime I try to use electronic options, I get lazy because there's a barrier...

ARCHIVED Remedies For Allergic Reactions - Bloated Face?
jenngolightly replied to jaknhk's topic in Food Intolerance & Leaky Gut
I've suddenly developed food allergies (not intolerances) as well. My doctor has prescribed an epipen because although my symptoms aren't life-threatening now, they can suddenly spin into anaphalaxis. For example, your puffy face could extend to a puffy throat and make it impossible to breathe. I use an eczema cream for the eczema and antihistamines for the... -
ARCHIVED I Can't Eat Anything Anymore! I Give Up :(
jenngolightly replied to Kimbalou's topic in Coping with Celiac Disease
I'm on an elimination diet called the Specific Carbohydrate Diet - it's very hard to follow and very restrictive, but I feel 100's times better than before the diet when I was only gluten-free. Check my profile for more info about SCD. -
ARCHIVED What Helps You Fight Cravings?
jenngolightly replied to possiblyglutensensitive's topic in Coping with Celiac Disease
I agree with some of the comments. I get stronger cravings for gluten foods when I'm getting cc'd from something. The longer I'm away from gluten, the fewer cravings I get. But having a few treats on hand is always good. I stay away from gluten-substitutes as those just make me miss the gluten kind - nothing is ever as good. Find tasty food that is great... -
ARCHIVED Unstable Immune System? -Vent Alert-
jenngolightly replied to MsMissy's topic in Food Intolerance & Leaky Gut
Sure! I know how you feel. You'll soon learn to eat things that you didn't know existed before. That's where I am now. It's kind of a game for me after 9 months of this ultra-restrictive diet I've started. I can't eat sugar, dairy, corn, soy, any grains, gluten (of course), starchy veggies, and I'm allergic to nuts. I think that's it... I'm also allergic... -
ARCHIVED Questions For Those That Have Done An Elimination Diet
jenngolightly replied to cahill's topic in Food Intolerance & Leaky Gut
Whatever you do, make sure you're getting enough fiber and water while doing the elimination diet. I goofed last week and ended up in ER. I've been a very good girl on my elimination diet for 9 months, but circumstances changed over the last couple of months which made me hungry so I added rice in about 3 weeks ago - at the expense of eating all my leafy... -
My biggest surprise was that vanilla extract has corn syrup in it. Geesh. You have to read EVERY label, just like with gluten.
-
No processed foods for me either and I kept feeling sick so I eliminated sugar, corn, soy, dairy, all grains, and starchy veggies last May. That did the trick - felt so much better. Then it became apparent immediately... I'm allergic to nuts. Will reintroduce those foods (no nuts ever, tho) one at a time in May to see which is the problem food(s).

ARCHIVED I'm Being Impatient, I Know I Am.
jenngolightly replied to DJ Jess's topic in Coping with Celiac Disease
Hi there - I get migraines too. They're a major symptom for me that I've been glutened. Just fyi - everyone's symptoms are different AND everyone's symptoms will last a different amount of time. Some people will have symptoms that last a day, some people's symptoms last 10 or more days. So, you may have gotten glutened once and it's just taking a while to... -
ARCHIVED Dh Is Ill And His Family Is Blaming My Gluten-Free Diet
jenngolightly replied to msmini14's topic in Coping with Celiac Disease
I hope your dh is okay. It must be very concerning that he's sick and you don't know what's wrong. Considering this is a new symptom after a few years on the diet, it's a good thing that you're consulting a doctor. Best of luck to you and your husband. -

Taco salad - brown ground beef with minced red onion, cumin, pepper, chili powder (8-10 min). Spoon on top of some shredded lettuce and add toppings: cheese, black olives, etc. -
ARCHIVED How Are The Grain-Free Folks Doing?
jenngolightly replied to precious831's topic in Coping with Celiac Disease
I have eaten rice a few times in the last couple of weeks - first time since last May. I've been feeling sluggish, tired, and gassy. On the other hand, the rice has filled my tummy and I'm not starving. Not sure what's better/worse. -
ARCHIVED Gluten-Free Makeup
jenngolightly replied to precious831's topic in Coping with Celiac Disease
I used to use Everyday Minerals but developed a reaction. I have very fair, sensitive skin. I switched to Meow Cosmetics (also online). Their website is awful. Use the Cat Chat Forum to have the experts determine which color is best for you. -
I did it - I ate apples with peanut butter almost everyday for over 2 years and now I can't tolerate peanut butter. Damn. It causes flare-up of eczema and respiratory issues. I'm okay with apples, though.

ARCHIVED How Are The Grain-Free Folks Doing?
jenngolightly replied to precious831's topic in Coping with Celiac Disease
It was a slap in the face when I found out about the nut allergy this summer. I kept trying to sub my old grain flour with different nut flours and was having all kinds of respiratory and eczema problems. I didn't know they were related, of course. I never ate nuts on a regular basis before the diet. I didn't like nuts. Then I went to the dr and dermatologist... -

I started the SCD diet on May 20th. I've been rolling along just fine until right before Thanksgiving when my oven died. I've been starving since then! Yesterday I broke down and added in white rice just so I'd feel full. I've lost 10 lbs since Thanksgiving! I'm down to 115 lbs at 5'5". I'm hungry and need to gain weight so although I wanted to stay off grains... -
Don't forget the oven mittens. Make sure you wash your oven mittens because they harbor nasty gluten!

ARCHIVED Gluten Free In A Gluten House Hold.
jenngolightly replied to Tynkfx's topic in Coping with Celiac Disease
The dishwasher is your best-friend in the kitchen! It's much harder for you to scrub off gluten from those cracks and crevices. The washer is a great tool for getting at every place on your dishes and you can co-wash with gluten items. Everything comes out sparkling. BUT !!! make sure anyone who puts away dishes washes their hands first! And make sure that... -
ARCHIVED Kitchen Shopping
jenngolightly replied to jenngolightly's topic in Coping with Celiac Disease
Your tips are all greatly appreciated! I'm perusing websites and seeing all kinds of great kitchens. All the best ones are out of my budget, of course. I definitely want an island! I'm wondering if a gas stove is better than a cooktop? I live in the mile-high city and it takes forever to boil anything. Any thoughts on this?
