  1. Altoids peppermints are gluten-free.
  2. Do make sure all your vitamins and other meds etc are gluten free. Also any coffees, teas or sodas or other stuff that goes in your mouth should all be gluten free. Soy free is easy if you stick to a whole foods diet and avoid processed foods. Unfortunately many of the gluten-free processed foods have soy in them.
  3. There have been quite a few threads about pies and crusts lately for some reason. Some people made crusts from Midel gluten-free ginger snap cookies, ground up. I think someone else made a crust from almond meal. Others are making crustless pumpkin pies. Seems like people can get pretty creative with the crusts and still have a good pie. I have not tried...

  8. Hi, It sounds like it could be a nuerological symptom. Celiac can affect the brain, and causes gluten ataxia in some people. Another possible cause would be low B-12 vitamin levels. That is also related to nerve function. And it is also a thing that happens to some celiacs. Some people take sub-lingual B-12 to help get their B-12 levels up. Anyway...
