  11. Eating soy initially gives me somewhat of a similar gluten reaction. I get really nauseous, get a headache, feel overall icky. BUT, the difference between the two is that a true gluten reaction takes me a week and a half to get over. Once the soy passes through my system, I'm ok. So, it's just a matter of hours.   12. I don't like Dasani either, it makes my tummy unhappy,too. Though, I am a bit of a water snob. My favorite is Le Bleu, which is a local company. They are as close as I get to distilled water, which I grew up drinking. Most other bottled waters taste like they came straight from the tap- which they probably did.

  16. It's hard to know without the specific tests they did. Hopefully, they did the complete celiac panel. If you could get the actual results to the tests, that would be very helpful. But, if your doctors are saying celiac because of your blood work, they are probably right. There's not much incidence of false positives. You should still get a copy of your blood...

  18. Xanthan gum is a corn derivative, so if you have corn problems, that could be the culprit. You could try guar gum to see if there's any difference. Or maybe it's one of the flours in the mix.
