  1. Yes. It's one of the "proofs" that you have a "gluten problem." Regular people can switch back and forth with no ill effect.
  2. Oh, that guy. Mark Basch. He is a one-man typing font of celiac/gluten intolerance misinformation, and now he's adding IRS problems to the resumé. You have to see this: Open Original Shared Link When he's not bashing the merely gluten intolerant, he's the Big Fan of the looser definition of "gluten free" to include processed gluten and up ...
  3. I responded within a few days of a gradual lessening of the dizziness, but I had complications with my c spine being messed up. Took longer for the vision problems to partially resolve, as my eyes will still cross when I get glutened. But I slowly regained my night vision, so I can see to drive at night (being able to see things at night continues to fascinate...
  4. I'm not sick, and I threw together a small 2 -buckwheat cake batch yesterday, and they stuck to the pan as if I had used caulk instead of oil. WTF. So for the second one I added extra oil to the pan, tested the temperature, spooned in the batter, and it still stuck to the pan really badly. Now I'm ticked, because I used the same buckwheat I had used...
  5. I would hate to see what sort of other self-destructive behaviors this person is encouraging others to do. Sounds like she's two fries short of a Happy Meal to me.
  6. If you are an oat reactor, have you tried switching brands of potato starch yet to avoid oat c'c ? I can't find it in local stores, but I know that there is some available mail order, if I want it. Otherwise, since I tend towards making things out of higher protein seed and nut meals, I just use tapioca or boxed chebe plain style for its tapioca if...
  7. It's a trade off. If I live just like a person in the 1800's, only with a kitchen out of the 1970's, I can have a life that can pass for somewhat normal circa 2013, other than... right now the lifestyle online magazines are taking cues from various lobbyists that they should portray my peer group as having a form of obsessive compulsive disorder regarding...
  8. The only thing I can think of is that once you mix the orange juice with baking soda or powder, don't let it sit a really long time because the acid in juice reacts with the soda. I've baked with mandarin oranges and fresh orange peel grated off of them first, with almond meal I made myself, and can assure you nothing bad happens - tastes pretty good.
  9. It was like swimming through molasses. THEN I changed my diet. But I still had really slow dial- up internet access for a while, slower than whale warp drive , until I changed carriers.
  10. I don't trust sunflower oils, it seems like I have random reactions (skin) to plain gluten free chips that are made with it, and I have seen a lot of sunflower seeds that are rotated in fields with other grains, or have the same combine equipment and are stored or run with grains. A lot of packaged sunflower seed in the stores says "processed in a facility...
  11. Try heading over to the cooking and baking forum here and doing some research on cross contamination, you may also want to send a parent over to see what to do with the kitchen, as it is a bit of a learning curve if there are also glutenoids in the house. You need to have a clean and uncontaminated work surface for your food preparation, this can be as simple...
  12. They are supposed to do the tests first, the blood tests measure whether or not you have antibodies to the proteins in the wheat family. A lot of people who are celiac or gluten intolerant also become lactose intolerant as a result, this may clear up after being gluten free for a while, so people can add back in cheese or yogurt. Others are casein (milk...
  13. How about you try the "weaning" process during a break from school, like a 3 day weekend, is there some sort of holiday period coming up that you could use to your advantage, start her on a Friday as that would give you four days ? There is a lot of controversy with adults and addictive substances as to how to best go about gradual vs. cold turkey...
  14. I had to laugh at loud at this post !  Like me with the Tazo brand and its certain flavors with gluten. Who the hell puts gluten in "honey" flavored tea ? I try to remember to put PLAIN tea bags in my purse. If I wanted soy, I'd order hot liquified Tofu ! If I wanted barley, I'd order soup ! I picked up a bottle of root beer to scrutinize...
  15. I'm glad he seems to have better insurance than I had at the time these symptoms really took off with me - trying to get taken seriously, and tested by specialists at the most common, big name HMO in the state of CA (the one with the catchy jingles on the radio ) was a complete nightmare. Even the Neurologist from Hellâ„¢ that I was stuck with in the next r...
  16. It could be the fat in the egg yolks is a bit much for her right now. Can you try just using the egg whites, and see what happens, or just using the egg whites in cooking other ingredients? This is as long as she is not having an allergic reaction symptom, like rash, itching, swelling, hives, difficulty breathing, etc. I am one of those people who had...
  17. You can go by how you feel, and introduce one new item at a time to see how you react to it. I was very, very strict and avoiding starches for a long time because I simply could not process them at all. Then, after a few years, I finally got to the honeymoon phase and got to try a lot of different items and got to experiment with baking a lot. And I am...
  18. You're probably not over the flu/stomach bug yet. Dairy Milk ? Uh, maybe.... not yet. Milk with lactose and honey with fructose and your gut just said, not happy with that. Can you do yogurt, to replenish your gut bacteria, after giving it a rest ? I was couchbound with some sort of virus over Christmas, fortunately never got sick to my stomach...
  19. Would any of you care to comment on the rather shocking things I see, claims about the gluten free diet, coming from the "Executive Director of the University of Chicago Celiac Disease Center" Carol Shilson, and its website, cureceliac.org ? see here: The University of Chicago's Dr. Stefano Guandalini is the one mentioned in the original...
  20. When I click on the above link here Open Original Shared Link I get this: "Cutting Out Gluten is Not for Everyone" from the Medill School at Northwestern University bolding mine. Do you ever read something erroneous in the media which gets quoted again and again, and wonder where the original source is ? Gluten free foods can't be...
  21. I read your other post also. My original intent with going on a grain free diet was to attempt to get my spinal arthritis symptoms under control. At the time I had been snookered into going into an HMO for health insurance because my spouse's co worker recommended them. What a mistake. The official policy of said HMO's so- called "treatment" for what...
  22. Hopefully you don't react to flax meal the way I do. It took me forever to figure that one out, and they put it in everything. Flaxmeal this, flaxmeal that, bleah. Last year I went oats-in- same- facility reactive. I remember the first time I had some soy flour cookies. I thought I was going to die. It just reinforced that I shouldn't do cookies...
  23. Wow. I guess the self - described finest medical researchers in the world just don't care if one suddenly dies, as long as there is no diarrhea involved ? They sure like to push this myth that a gluten free diet is impossible for mere mortals. They almost sound like gluten opioid drug addicts, I am beginning to understand why the "Wheat Belly"...
  24. What has changed since November ? It continues to infuriate me, the irresponsibility of these Pharmaceutical companies which continue to put GLUTEN into thyroid medications which are frequently used by celiacs. And nobody yet is willing to do a thing about it in "regulation land." There are two things going on here. One, the dosage of the thyroid...
  25. No way. To each its own pan. Not worth getting sick over.
