The What's For Dinner Tonight Chat
mushroom replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
My cure for the winter vegetable blahs is always a roast up of root vegetbles - sweet potatoes, potatoes, parsnips, onions, shallots, and a zucchini if you can find it and some tomatoes tossed in at the end. -
ARCHIVED Feeling Overwhelmed And Hopeless
mushroom replied to FrumpyWife's topic in Parents, Friends and Loved Ones of Celiacs
Okay, so I guess the question we should be asking here is, are you committed enough to this marriage to want to make it work? Because if the answer to that is no, you are going to be dragging your feet every step of the way. Once you have that question answered we can talk more about how you can do it -

No, no, not non-seasoned. Just don't let someone else do the seasoning for you!! -
That's the last thing I think of when I think Chinese, because it is such a hump getting over the soy sauce And the chilis with Thai food. And the legumes and nightshades with mediterranean. Just as well my family was British and my taste for more exotic developed (to the extent it did) later.

ARCHIVED Feeling Overwhelmed And Hopeless
mushroom replied to FrumpyWife's topic in Parents, Friends and Loved Ones of Celiacs
Okay, I see that you will probably have to buy some Chebe pizza crust mix (the easiest to start with) to make pizzas for ds2 and you will have to wean him onto some other cereal and bread. Eating gluten free is not a punishment, is not at all unhealthy, and in fact can be healthier than the SAD (standard American diet) which IS often rather sad.) You definitely... -
ARCHIVED Feeling Overwhelmed And Hopeless
mushroom replied to FrumpyWife's topic in Parents, Friends and Loved Ones of Celiacs
A celiac diagnosis in the family can be totally overwhelming at first, I give you that. But at some point you have to stop and take a big breath and say, not that this is not going to work, but "How am I going to make this work?" (I see that Karen has added a response so I will revise a little what I was going to say. The first thing that jumped out... -
ARCHIVED For Testing, What Is An "active Lesion?"
mushroom replied to roomorganizing's topic in Dermatitis Herpetiformis
Visible does not mean active, I'm afraid. If they are not driving her crazy they are probably not active If you want a positive result you should discontinue the AB's, and yes, eat gluten and try to stir things up a bit. You do know it is important that the testing is done on the skin immediately adjacent to a lesion, right? and not on the lesion itself... -
Or you can make a chopped filling for them including things like shrimp, roll them up and shallow pan saute them for a crisp hot version. It helps with the rolling if you place them on a square of parchment paper and roll with that because they can be a big fragile. (You have to dip them in very hot water to soften first.)

Sorry about the steep learning curve; hope you are feeling better. Costco, if you are a member, has gluten free whole roasted chicken. -

ARCHIVED Ugh. Dh But The Dermatologist Is Stupid
mushroom replied to glutenfreemamax2's topic in Dermatitis Herpetiformis
Uhmmm, my understanding of biopsying for DH is that you take a punch biopsy of clear skiin adjacent to the active lesion. It wouldn't seem to make any difference if it were scratched or not, so long as it was active. He is (or should be) looking for antibodies in the skin adjacent, not in the lesion itself -
Many posters have started topics as to whether there is a connection between celiac and heart arrythmias, skipped beats, and irregularities. I post on a forum called afibbers.org because this is one of my food-related curses. Today there was a new post by one of the founding members of the forum, who is a nutritionist, who posted a compendium of notes...

ARCHIVED Not Yet Diagnosed - Gluten Diet
mushroom replied to Icis's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Bread is merely used as the most common expression of gluten. You can take this opportunity to 'pig out' on all those things you will no longer be able to have, all the good pizzas, phyllo dough pastries, sourdough french, -- see, now here I am sitting here saying, what is it I really miss??? After a while you forget because you don't miss them that... -
ARCHIVED Fat Malabsorption - What To Do
mushroom replied to Wheresthebeef's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I personally feel that some digestive enzymes would help the most, preferably animal-derived, with lipase being the most important. Get the kind that you take with every meal. You need enzymes to break down the fats and gluten can often cause pancreatic insufficiency. You might try some betaine HCl as well. Don't start taking them both at the same time... -

ARCHIVED Scared I Won't Get My Diagnosis
mushroom replied to freeme808's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I am not sure where you live, freeme, but it appears that the lab the doctor uses does not run the DGP test, IgA and IgG, which is the newest test and the one most predictive of celiac IMHO. I base this on the fact he could not find it on the form - or maybe he was using an out-of-date form and could have written them in. It will be interesting to see what... -
ARCHIVED Help With Candida?
mushroom replied to lockerbear's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Perhaps I should add that it is recommended that you should only try one new thing at a time, otherwise you will not know what it is you are reacting to, if you react This is why it is advised that you get a basic group of foods you know are safe, even if it is only rice, apple sauce, sweet potato, white fish, for example. Once you have successfully eaten... -
ARCHIVED Would Like To Start Baking With gluten-free Flour... Just Don't Know How/what
mushroom replied to Worried mommy's topic in Gluten-Free Recipes & Cooking Tips
Gluten free baking is really quite different from gluten baking. You will generally need to mix different types of gluten free flour to get a good result. Perhaps two starches and one higher protein flour. The starchy flours are white and brown rice, tapioca, potato, cornstarch and arrowroot. To these you can add soy, sorghum, buckwheat, bean and pea... -
