With some forms of celiac disease, the symptomatology is not gastrointestinal - the neurological symptoms are a good example - so you cannot measure your improvement on the diet in the same way as with GI symptoms. It seems more reversible if you get it early. I got it in my sixties and am on permanent RA meds for it (psoriatic arthritis). -

If you are overweight because of celiac, it is common once you go gluten free that the pounds drop off whether you "diet" (i.e., low calorie) or not, so long as you gluten free diet. It is a total myth that you have to be skinny and anorexic looking to be celiac. My sister was -- I wasn't. Same genes. -

So far as I know, sea salt is okay; it is table salt that has iodine added to it. -
But at least you know you have it, even if they don't I have noticed this is a common pattern with Kaiser - they only ever run the tTG (and total IgA) but none of the other celiac tests, they never diagnose when it's positive, they seldom even order endoscopy (you were lucky there), and they don't recognize biopsy findings as being significant. Fruits and veggies, excellent!!! Beans, lentils, chickpeas, does she eat white fish? Rice, potatoes. You do not need a doctor's prescription or permission to drop gluten from her diet. It is not something that will harm her in the least and it may well be the answer to her problems.
