  1. That is wonderful, shopgirl. I think all of us gluten freeers have to become creative in order to enjoy our food and that was a very creative dish you whipped up. You're right. Speaking from experience, it is very challenging to cook gluten-free, dairy free, and stay low carb. Did you cook the meatball in a skillet before adding to the sauce?

  6. Well, one of the things I've been eating every morning is hot rice cereal. It tastes like what I remembered cream of wheat tasted like when I was growing up. I just nuke it for two minutes and it's done, add a bit of butter, almonds or walnuts, and raisins. Sometimes I cook a couple pieces of turkey bacon to go with it. That's good morning or night.   7. I'm baking a pizza. Bought the pizza sauce and brown rice pizza crusts, 2 frozen ones, at Whole Foods. I season the pizza sauce with Greek oregano and thyme from my garden and garlic. Can't wait. oh yeah, topped with turkey pepperoni and low fat mozzarella cheese.

  13. Bette Hagman's gluten-free Caraway Soda Bread does not have eggs. It does call for 1 cup of sour cream, though, if you can tolerate that. It is delicious and comes out perfectly everytime.

  16. I made these for lunch. Turned out very good. Maw Maw's Mayonnaise Rolls 2 c. rice mix flour 1 T. baking powder 1/2 t. salt 1. t. xanthan gum Whisk well to blend. Add: 2 T. mayonnaise (or more) 1 c. milk Mix all together. Spoon into greased muffin or cupcake tin. Bake 450 degrees for 10-12 minutes. Makes 12 rolls.
