One thing that helped me with brain fog and concentration issues that I discovered within the past few years, and this would likely be advised only for older males, is DHEA. I take 25mg a day and it helped a lot with my focus and concentration.

In my case it seem very sporadic, with the exception of the RLS which isn't fully resolved, but much better. After experimenting with various supplements over time it was ~3-6 months before most of the ataxia and muscle issues were gone. More about my supplementation is here:

That makes more sense! There was very limited awareness of this disease back in the 1960's, and not antibody tests for it. It's good you finally figured this out!

If it is related to your celiac disease then your diet may not be 100% gluten-free, but you should consider getting a referral to a dermatologist who can biopsy it for DH.
