Were you eating lots of gluten daily for 6-8 weeks leading up to your blood test? If not, this can cause lower antibody levels, and possibly false negative results. It's unfortunate that they didn't do a Total IgA count, because if you have naturally low IgA it could lead to false negative test results. The good news is that you could get that test done... -

I agree with @trents, it's not typical for gluten exposure to cause symptoms as delayed as a week or two after ingestion. In most cases, reactions to gluten occur within hours to a few days, depending on individual sensitivity and how much gluten was consumed.
