ARCHIVED Grinding Your Own
dilettantesteph replied to quietmorning01's topic in Gluten-Free Recipes & Cooking Tips
I use my $15 coffee grinder I got at WalMart. Cheaper and fresher than buying flour, but I only do 1/2 cup at a time. -
ARCHIVED Follow My Doctor's Advice?
dilettantesteph replied to zuros's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
It is best to continue eating gluten until you have the biopsy done. That is unless you are so sick that you can't stand it. If you quit gluten you can get a false negative. Stephanie -

ARCHIVED Is It Normal/okay To Have Stomach Pain After 1 Year?

Good for you having such a good diet. I'm almost there myself, but still eat a few processed things. Sorry you are having pain still. -
ARCHIVED Is It Normal/okay To Have Stomach Pain After 1 Year?
dilettantesteph replied to raisin's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Just because your blood test is clear doesn't mean that you aren't getting any gluten. There are lots of celiacs diagnosed with negative blood tests and positive biopsies (who are eating gluten). Just wanted to put that out there. After I got a negative blood test, I found gluten in my diet, eliminated it and felt better. Hope you feel better soon... -

It's been a year and a half and it still happens, whenever I get accidental gluten, which is still way too often. -

ARCHIVED "Super Sensitive" Celiacs.....
dilettantesteph replied to jerseyangel's topic in Super Sensitive People
Sailing girl, thanks for the fish sauce test results. I had sadly decided to eliminate all Thai Kitchen from my diet. Too bad. Your confirmation makes me feel a bit less extreme. I think that as the gluten free diet becomes more popular it will be hard for gluten free companies to obtain good gluten free starting materials. Supply won't be able to keep... -
Many celiacs have mixed kitchens. It depends on how sensitive you are to small amounts of gluten. My family didn't want to go gluten free either. That is why we tried the mixed kitchen for a year before giving up on it. At that point they were glad to do it. They didn't like seeing us sick as much as we didn't like being sick. Hopefully you will be...

ARCHIVED Wonder Why You May Be Reacting To Some Wines?
dilettantesteph replied to Mike M's topic in Gluten-Free Foods, Products, Shopping & Medications
Momma Goose: ****With all this mombo-jumbo, yeast should not be an issue for Celiacs.***** That seems disrespectful to me. -
I have felt just like you many times. One thing to remember is that sense of hopelessness is glutening symptom. It comes from neurological damage. It took me a long time to get my diet all the way gluten free. It has been a year and a half now, and I still glutened myself last week. Generally, I got it mainly figured out after a year. BioK is a probiotic...

ARCHIVED Very Discouraged
dilettantesteph replied to trents's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
It is possible that you are one of us super sensitive celiacs and react to very small amounts of gluten. According to my GI some celiacs will get a gluten reaction from as small an amount as 0.5 mg. of gluten. That means that a lot of gluten free foods are off limits. There are a lot of posts in here about that sort of thing. Some wines have problems... -
ARCHIVED Arrowhead Mills Flours
dilettantesteph replied to RiceGuy's topic in Gluten-Free Foods, Products, Shopping & Medications
I'm glad that you found the culprit. I found trace amounts of gluten in their corn meal. Much less than 20 ppm for non sensitive celiacs. A buckwheat only place is www.thebirkettmills.com. Lots of stores carry their products. Their pancake mix is good. Check it out. -
ARCHIVED Wheat? In My Flax Seeds!
dilettantesteph replied to SGWhiskers's topic in Gluten-Free Foods, Products, Shopping & Medications

ARCHIVED Frustrated With Constant Accidential Dosing With Allergen
dilettantesteph replied to Stefani's topic in Food Intolerance & Leaky Gut
Sometimes when nuts are seasoned, a gluten coating is applied first to get the seasoning to stick better. If your nuts came from a place where that is used, they could contain trace gluten. -
ARCHIVED Super Sensitive Celiacs

I have also tested their Spicy Thai Chili and it tested negative. I really like their products. I just hate feeling as sick as I was yesterday. -
ARCHIVED Super Sensitive Celiacs
dilettantesteph posted a topic in Gluten-Free Foods, Products, Shopping & Medications
There was a previous post in which we recommended our most trusted gluten free brands. One that I recommended was Thai Kitchen. I love their Chili Sauce. Recently I got some of their gluten free peanut satay sauce. I had it a couple of times and started showing symptoms. I tested it with those EZ gluten strips that certain of us hate to have mentioned... -
ARCHIVED Time To Play "name That Gluten"
dilettantesteph replied to raisin's topic in Gluten-Free Foods, Products, Shopping & Medications
You are welcome. I went without spices for months, then I got adventurous and got sick. That's when I started testing them. For those non sensitives, again they won't bother you, they were under 20 ppm. -

BioK. Some probiotics have now been scientifically shown to help. https://www.celiac.com/articles/21756/1/Liv...adin/Page1.html I have found them to help personally too. -
ARCHIVED Cream Cheese
dilettantesteph replied to Nicole H.'s topic in Gluten-Free Foods, Products, Shopping & Medications
Where I shop at Wegmans, their neuchatel cheese, which is basically low fat cream cheese, was labeled gluten free, and then they removed the gluten free label. They said that the manufacturer had changed something so that there was now a chance for cross contamination. So, it would seem that cross contamination could be an issue if you are very sensitive... -
ARCHIVED Time To Play "name That Gluten"
dilettantesteph replied to raisin's topic in Gluten-Free Foods, Products, Shopping & Medications
I and another have found small amounts of gluten in the spice brand you mentioned, less than 20 ppm for those non sensitive people. I found it in organic ground cumin. I bought whole cumin which was gluten free and ground it myself. My cinnamon was good, but that doesn't mean your is. Hope you figure it out soon. -
ARCHIVED Extreme Symptoms But Low Bloodwork Reaction?
dilettantesteph replied to raisin's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I read a comment here not that long ago, within a month maybe, that quoted a study that showed that there is no correlation between severity of symptoms and blood test levels. Hope you get better soon. It is hard to get rid of all CC. -
ARCHIVED What Does You Glutening Knee Pain Feel Like?
dilettantesteph replied to CBaker88's topic in Sports and Fitness
My knee pain seemed like arthritis. It didn't hurt lying down unless someone put weight on the kneecap. It went away after being gluten free some time, maybe 6 months, I can't remember any more. I was still able to exercise gently, but it was an annoying constant ache. I also had ankle pain bad enough to quit ballet lessons and swollen and painful finger...
