  2. I have seen this thread for awhile, but I didn't actually read it until now. My thinking on this is that if we are producing antibodies, we are reacting. What I think happened is that celiac disease was defined by GI docs by damage to the intestine observed by endoscopy.   10. I have had a similar experience. Though 20 ppm is considered safe for most celiacs, that doesn't mean all celiacs. I had to find that out the hard way. Just because another can eat something won't necessarily mean that you can. There are also different standards for what certified gluten free means. You can eat eggs, cheese, yogurt, potatoes, sweet potatoes, avocados, beans, nuts, buckwheat, oil and butter for more calories.   15. I would suggest that you protect yourself first. Do you have a part of the house that you can set up for your own personal mini kitchen? Set up a dorm fridge, microwave, and toaster oven.
