Here's another option. Maybe she could contract a small decorated cake for the cake table but make all the sheet cakes, the ones you serve to everyone anyway, gluten free. I ended up buying both and now I am using half and half in every recipe to use them up. I have had no disapointments using this method. My baking is much improved when adding this to the mix, that's for my converted recipes. -

My baking has really improved, measured by the crumbly factor, since I added Guar or Xantham to any mix. They always taste good but now I can eat them with my hands instead of a spoon! -

I'm one of those with no official dx. I don't feel the need and will not go back on Gluten , uh-uh. My children are grown and don't need my test results if they choose to be tested. Did they add coloring to their vanilla? I found I am sensitive to some food products with caramel coloring even though it shouldn't be a problem in the US. My reactions vary but always have D and gas but other symptoms can crop up. It is more severe than before the gluten-free diet. But that was true when I went off fresh dairy too. Hope you feel better...

You know it's so hard at first and you're right; other people don't get it and find it just as hard to accept as we do. Remember, they haven't felt all the nasty symptoms we have or read all the info about it. The majority of them aren't going to ever get it and the rest will do their best but can never understand it completely without walking in your shoes...

Those symptoms sound oh so familier, Jan. It certainly could be celiac disease or gluten intolerance. Sounds at least like your dr knows what to look for. So many doc's don't. See what the other test results are but the positive biopsy sounds like the dx you need. Blood tests often give false negatives. You could try the diet even if your bloods tests... -

The mood swings are incredible if I am glutened. I usually warn everyone around me and apologize in advance. It's well worth it to committ to the gluten-free diet. -

I just wanted to welcome you to the forum. You have received some great advice here and the only thing I can add echos their posts. Keep the food simple for now. Only add new foods one at a time and before you know it you'll have a whole selection of foods and meals to choose from. Include your child and other family members in food prep and shopping.... -
I agree with all the other posters with drinking lots of tea. The warmth seems to calm my stomach somewhat and you need all the liquids you can get if you have D like me. My favorite is Constant Comment decaf, it's just yummy and soothing. I sometimes also feel ravenous when glutened so I allow myself to eat anything that's safe as much as my body...

Did you take her off dairy? Most of us have to leave dairy alone for a few months during the initial healing. She might be able to go back to it later. Sounds like the gluten-free diet is helping her but her continued paleness and not continuous days pain free may suggest an underlying problem with dairy. I had two different rashes when I went gluten-free. One cleared up within a few days, the blistery one you saw in the pictures. I only had a few spots of that at the time. I don't know if I have the answer you want to hear. I dx'd myself through an elimination diet. I didn't do any testing at all. So how I would have tested, who knows? Cough As A Reaction?

My persistant cough was due to postnasal drip from congestion. After I went gluten-free, I found the congestion was due to the gluten and has since gone bye-bye. I was so grateful to not have to take antihistamine constantly and wake up coughing at night. Hope it clears up for you too. -

For fast food, I like the baked potatoes at Wendy's with a side of chili. Yum...Chips and salsa are one of my faves but I use the chopped tomatoes with green chilies from Walmart and mix a can of that with a block of cream cheese. It's really filling too.
