    My favorite is a sorghum blend and substitute cup for cup for regular flour. Since I mix it myself I have to add xanthan gum or guar gum to whatever I am making.

From my understanding, and someone correct me if I am wrong please, is that any grain has to be listed in a meat product if it is added, thus can not hide in the "natural flavors".   11. I'm finding now that I quit eating most prepackaged anything (including gluten free) that I am having trouble with more things when I do try them again. I really hope I'm not turning into a super sensitive celiac, but I do think I am on the right track though. Thanks everyone.
  12. I've made cookies, muffins, quick breads and cakes with substituting my gluten free blend for the amounts of regular flour. I've had to experiment with the amount of xanthan gum, but other than that the recipes I have made have been really good.

  16. My vitamin D level was 17. Most Rx vitamin D in in the form of D2(ergocalciferol). The consensus is that the D3(cholcaliferol) form is more bioavailable. So If you are going to resume it you can look for the D3 kind. There was a study that suggested that the D2 is just as effective, but has met with hot debate.   17. I would continue taking vitamin D. I was extremely deficient and I was prescribed 50,000 iu weekly. I am still taking that amount and I started taking it in Jan. 09.   21. Ditto on what she said. I am one that cannot even tolerate certified gluten free oats. I get horrible heartburn, bloating, severe abdomen pain and I even broke out in a very painful blistering rash on my back side! That was enough for me to realize they did not agree with me.
  22. Make sure you rinse the quinoa before you cook it. It has a bitter coating on it you need to rinse off. Also take it slow at first. A little quinoa goes a long way and has ALOT of fiber! If I eat to much it *clears throat* looks the same on the way out as it went in.
  23. Depending on your lab values you may benefit from a combination of levothyroxine (T4 medication) and cytomel (T3 medication). My current endocrinologist put me on the cytomel because of me still having hypo symptoms despite a normal TSH. She said my free T3 was too low and that was causing the symptoms.
