  1. I take it very seriously. It is a disease, not an "I have it sometimes" illness. The Cold or Flu can go away, celiac doesn't. So it's important to consider ramifcations when "ignoring" a disgnosed disease. Although I get fear tactics may not work on everyone, for me it was either I love being in pain and constantly sick or I don't. So, I don't and something...
  2. Its not uncommon to have a delay like that. Mine are 8 to 10 hours after eating something with gluten. I have seen others on the forum say it takes them a day or two. I think part of the reason, just my opinion, but is that it take time to digest and for then the body to make the antibodies (if you have those), then for them to attack healthy tissue and cause...
  3. I find dairy will do that but for me potatoes do to. And corn gives me pain and some minor bloating. I would try to elminate all grains and dairy to see what it might be. I have become a Paleo girl living in a paleo world....er not exactly....but yea....
  4. Dang girl you sound like me. I would recommend a food journal. And once your done testing, I would try an elimination diet. Have they tested your thyriod?
  5. There is a PF Changs downtown, a place (I think it's called something cinnamon?) in pike's that has amazing baked goodies (if they are still there, been awhile since I was there in 2011), try the gluten free registry website, found most places on that site.
  6. Shoot, I do that all the time (so many intolerances, so little time...and memory to remember all of them..lol)
  7. And to add to this dairy.....evil dairy....lol
  8. I can not tolerate coffee either, but....it's because coffee (caffeine more appropriately) is an inflammatory to the body. Maybe that's the issue? Maybe if you just love the taste of coffee and it's not the caffeine, try decaf coffee, see how you do.

Thanks Gemini, my apologies, I thought I mentioned the HR backing previously. Yeah, I think he is a grumpy pants. LOL. Honestly. I wish I could do all my appointments on Saturdays. Would be so handy. But yet, doctors m-f 8-5(mainly) and work hours m-f 8-5, who came up with that idea? LOL. I am sure it will work out. I just hate to have to resort to needing...

Great idea but the infusions are four hours, plus seeing the doc beforehand too so a six hour event and then the week prior is in office labs, which I tried to move to the local quest, but they won't allow that, so not sure on that, lol. I am trying to figure out how to do this the best, I had a few more appts last 2 months than normal because of my allergies...

I hear what you are saying. But if the time off came to an employee based on length of time working at a job, then the idea of people putting in their time before using their time off makes sense. But this place gives you time off right from the get go. So why do I need to wait to use it? Because I haven't been here long enough would be a ridiculous thought...

True. He told me he talked to her about this. So he gave me the impression this was acceptable to her. So I went to HR for advice and this is where I left off.
  13. While I am not a scientist, logical thought process in my mind reads that if the body’s immune system attacks gluten, creating antibodies and attacking health tissue (villi), it could seem probable that the immune system could also develop antibodies/attack healthy issue with other foods. Whether or not that has been discovered we don't know. But the likelihood o...
  14. If it were me and my child (hopefully one day I am blessed with one) I would take away milk asap. I might even consider putting her on an very bland diet (apple sauce, bananas, chicken, rice, almond milk-if she can eat nuts, etc) removing the top allergens/stomach causing food issues (soy, gluten, corn, milk, eggs, fish, etc) and then try that for awhile...
  15. Yes, Marie. There is a link. I prolly gonna say this wrong but people with "gut" issues loose alot of the serotonin producing stuff because the majority is in our gut. (ok, so that wasn't technical, but it's kinda on target) so I would (if it were me) take a supplement like 5HTP or find something that your comfortable taking it will help, I would try natural...
  16. Food sucks...LOL no really, having to constantly think about my next meal or how to create something I am craving is exhausting. :D

Adalaide, thank you! And I couldn't agree more. Not really sure what his "issue" is. But he is being awefully restrictive when I think he doesn't need to be. The funny part about this is this is a state job and most bosses are generally alot more relaxed. He on the other hand is a bit more black and white. No bending. So I will talk to him once more and if...

Thanks and I agree with you. My concern is that I haven't been here for a year yet, so I can't apply for FMLA yet. Wouldn't intermittent leave also be consider FMLA (meaning you have to be at your job for a year) or is that its own entity?

Not sure if this is the right spot.... Has anyone had any experience with applying for ADA? I hate to use this method, but my HR department has recommended this for a couple of reasons. 1. I have not been at my job long enough for FMLA, otherwise this would solve the whole issue I am having with my boss. 2. My boss will not let me take time off for...
  20. If it's your gall bladder you need testing done. I would recommend a gall bladder test with the CCK contrast (this contrast is the key), here why. The normal test will show gall stones (if you have any), but at the end of the test they issue the CCK contrast and that shows gall bladder function. With mine they couldn't find stones after a couple tests and...

Next time, try to make your own chicken. Use King Aurthers Gluten free flour mix seasoned with your own added choice of seasonings (I use onion powder, garlic powder, paprika, cayenne, salt and pepper) Soak the chicken in milk or egg or a combo (I use egg, but some folks say milk) and then coat with flour and fry in oil. It's not Churches but if you fry...
  22. I have read that too that gluten and dairy are both like opiod substances in the intestines and when you start to "get off" it folks have withdraw symptoms. Now, I definitely did for both dairy and gluten, my hubby did for dairy (poor guy) and I have heard of other people that do this that are not celiac or gluten intolerant, they go off for a juice cleanse...
  23. A favorite in my house that is gluten free and vegan for sauce is: garlic minced and sautéed in olive oil with salt and pepper and a bunch of chopped parsley. Don't burn the garlic. You can put it on gluten-free pasta or use for a "white" gluten-free pizza for sauce. Yum! It's not tomatoes but it's something different and yummie. It's easy on the tummy. ...
  24. I am an avid fan of goat and sheeps milk products. My natural doc explain it something like this, the protiens found in cows milk are larger than we would find in our mothers natural milk. Whereas the protiens found in sheeps and goats milk are more like our own mothers milk in size, so our human bodies have an easier time processing it. And since cow milk...
  25. Before I was diagnosed I used the pampered chef stoneware. And I remember it not being dishwasher safe because it absorbs. With that being said, it would also absorb gluten. I gave mine away to my mother in law who loves those things. I bought a new one for general use that is strictly gluten-free. So I would say they aren't safe to use at all (I know that...
